8 large eggs
1/2 cup finely grated Parmesan
3 large fresh basil leaves, torn into pieces
3 large fresh sage leaves, minced
1 teaspoon minced fresh rosemary
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
3 tablespoon extra-virgin olive oil
1 cup thinly sliced onion
1/3 cup whole-milk ricotta

Steps:

  • Preheat oven to 400°F. Whisk first 7 ingredients in a medium bowl; set aside. Heat oil in a medium ovenproof nonstick skillet over medium-high heat. Add onion; saute until soft, about 6 minutes. Reduce heat to low. Stir in egg mixture. Spoon dollops of ricotta evenly over.
  • Cook until frittata begins to set, about 2 minutes. Place in oven; bake until just set, 7-9 minutes. Slide the frittata onto a platter. Cut into wedges; serve hot or at room temperature.

1 cup diced baking potato
3 tablespoons water
1 lb onion, sliced
1/3 cup water
1 tablespoon chopped fresh sage
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup grated parmesan cheese, divided
2 tablespoons skim milk
6 egg whites, lightly beaten
4 eggs, lightly beaten

Steps:

  • Place potato and 3 tbs water in a small bowl. Cover with plastic wrap, vent and microwave 4 minutes or until tender, stirring once. Set aside.
  • Heat a 10" skillet over med-high heat. Coat pan with cooking spray and add onion.
  • Cover and cook 10 minutes or until lightly browned, stirring occasionally.
  • Uncover and cook 10 minutes or until golden brown, stirring frequently. While onions cook, add 1/3 cup water, 1 Tbs at a time to prevent sticking.
  • Stir in potato, sage, salt and pepper. Spoon into bowl and cool.
  • Combine 1/4 cup cheese, milk, egg whites and eggs in a bowl.
  • Add egg mixture to potato mixture and stir well.
  • Preheat broiler.
  • Pour mixture into skillet coated with cooking spray.
  • Cook over medium heat for 7 minutes or until bottom of frittata is browned and top is almost set.
  • Sprinkle remaining cheese on top and broil for 5 minutes or until cheese melts and top is set.

Steps:

  • Place butter and oil in a 23 cm (9 inch) non stick frypan over low heat and cook until butter has melted; add onions to pan.
  • Cook onions, stirring occasionally, for 10-15 minutes or until onions are golden brown, soft and caramelized.
  • Place eggs, cream and pepper in a bowl and whisk to combine; pour egg mixture over onions in frypan and sprinkle with cheese and thyme and cook frittata for 5-6 minutes or until it is almost set.

1 medium red onion, chopped

1 shallot, chopped
1 garlic clove, minced

3 tablespoons heavy whipping cream
1/4 teaspoon salt

Steps:

  • In a 10-in. ovenproof skillet, saute mushrooms and onion in butter and oil until softened. Reduce heat to medium-low; cook for 30 minutes or until deep golden brown, stirring occasionally. 1 yellow onion
1 red onion
3 tablespoons olive oil
1/2 cup fresh parsley, finely chopped
1/3 cup chives, snipped
2 teaspoons fresh basil leaves, torn
6 eggs
salt and pepper, to taste

Steps:

  • Peel and coarsely chop onions. Heath the olive oil in a skillet and saute the onions until slightly golden. Add the parsley, chives and basil, saute a few minutes more, stirring often.
  • Beat the eggs lightly with salt and pepper.
  • Stir the onions and herbs one more time, then distribute evenly in the skillet. Lower the heat as much as possible and cook until the eggs are barely firm on top, 10-15 minutes on very low heat.
  • Turn a large plate upside down over the skillet like a lid and overturn the skillet quickly, dropping the frittata onto the plate. Slide the frittata back into the skillet and brown the other side for a few minutes.
  • Turn the frittata onto a serving plate and cut into wedges just before serving. It may be eaten hot, cool or at room temperature.

1 large onion, sliced
4 tablespoons extra virgin olive oil
1 teaspoon caster sugar
4 eggs
3 tablespoons freshly grated parmesan cheese
1 teaspoon fresh thyme leave
1 tablespoon finely chopped fresh parsley
salt & freshly ground black pepper

Steps:

  • Fry the onions very gently in half the olive oiluntil very soft and golden brown. This will take about 30 minutes. Sprinkle over the sugar and cook for a further 3-5 minutes, until caramalized. Leave to cool.
  • Beat the eggs with the parmesan, thyme, parsley, salt & pepper. Stir in the onion.
  • Heat the remaining oil in a heavy based frying pan. Pour in half the mixture, making sure it gets its proper complement of onion. Reduce the heat to moderate and cook until almost set through. Lift out of the pan and invert the fittata back into the pan, uncooked side down. Cook for a couple more minutes until the underneath is slighly brown.
  • Serve or keep warm while you cook the remaining frittata in the same way.
