Steps:
- Preheat oven to 400 degrees. Lay the bacon slices out in a single layer on a foil-lined baking sheet. Bake for 14 minutes, or until the bacon is nice and crispy. Lay out on paper towels to drain and set aside, reserving 2 tablespoons of the bacon grease.
- Add the bacon grease to a large skillet and heat over medium, medium low heat, then add the onions and stir around to coat with the bacon grease. Allow to slowly cook for an hour, checking every ten minutes or so to stir and scrape up any black bits that form on the bottom of the pan.
- Once the onions are a dark golden brown color, deglaze the pan with the 2 tablespoons of balsamic vinegar, scraping the pan as the vinegar dissolves. Add the remaining balsamic vinegar, brown sugar, salt, and pepper and stir until a thick glaze forms, around 5 minutes.
- Add the onion mixture and bacon to a food processor and pulse until the desired consistency forms. Scoop the bacon jam into a jar and devour immediately, or refrigerate until future use. Use within one week.

BACON-BOURBON JAM
The taste of this jam is truly outrageous. Each bite contains layer upon layer of flavor, from the caramelized onions and garlic; to the sweet bourbon and maple syrup; to the smoky, salty, porky bacon. Try it on toast, in place of mayonnaise in a sandwich, or slathered on pancakes. It will keep for a month in the fridge. No need to use fancy bacon; regular supermarket bacon will work perfectly well. Transcribed from a recipe at Serious Eats. http://bit.ly/e1MPDp

- In a large non-stick or iron skillet, cook the bacon over medium heat until the bacon is crisp and the fat has been rendered. Remove the bacon to some paper towels to drain using a slotted spoon.
- Remove all but 2 tablespoons of the bacon fat. Keep the extra bacon fat in a heatproof container for other purposes, if desired. Sautéing green beans, for example!
- Add the sliced onions to the hot skillet and start to sauté. Once the onions have begun to soften, reduce the heat to medium-low and continue to cook, frequently stirring until the onions are deep golden brown and caramelized, about 40 minutes or so. Don't rush them. You want to slowly caramelize the onions, not just toast them.
- Once the onions have caramelized, add the minced garlic, stir and continue to cook for just a minute or so until the garlic has become fragrant.

- Heat a large skillet over medium heat. Add the bacon and cook until the bacon is crispy. Using a slotted spoon, transfer the cooked bacon to a paper towel-lined plate. Drain away the bacon grease, leaving about 2 tablespoons in the skillet.
- Add the butter and onions to the skillet. Stir together to coat the onions with the fat and cook over low heat with a circle of parchment paper placed over the onions to prevent them from drying out while cooking. Cook for about 10 minutes and stir occasionally when the onions start to brown. Keep cooking over low heat for about 10 to 15 minutes more until the onions have caramelized.
- Add the brown sugar, apple cider vinegar, balsamic vinegar, water, 1 teaspoon of the fresh thyme and black pepper. Return the cooked bacon to the pan. Bring the mixture to a boil and then lower the heat and simmer for about 20 minutes until the liquid reduces and the consistency is thick and syrupy. Stir in the remaining fresh thyme.
- Serve warm on burgers, steaks, waffles, sandwiches, crostini or as a condiment for a cheese board. To store, refrigerate in jars for up to four weeks.
