This is a dangerous cake to have around, it's *so* delicious! for the members that live in Canada and cannot get heath bars use Hershey's Skor toffee pieces, sold in a 200 gram package. This cake has a sweet crunchy topping and is really easy to make. This cake is like no other, just make it and see! This cake can also be made in an 11 x 7-inch baking pan or a springform pan also.

2 cups flour
1 cup dark brown sugar (well packed)
1/2 cup white sugar
1/2 cup butter, room temperature (no substitutes!)
1/2 teaspoon salt
5 (1 1/2 ounce) Heath candy bars, chopped (or use 1-1/2 cups Skor toffee bits)
3/4 cup mini chocolate chip
1 1/2 cups chopped pecans
1 teaspoon baking soda
1 cup buttermilk
1 large egg
2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees.
  • Butter a 13 x 9-inch baking pan.
  • In a medium bowl using an electric mixer on low speed, beat together flour, brown sugar, white sugar, butter and salt until the mixture resembles coarse meal.
  • Transfer 1/2 cup butter mixture to a bowl and mix in chopped Heath bars (or toffee bits (if using) mini chocolate chips and pecans; set aside.
  • Stir in the baking soda into the remaining butter/sugar mixture (not the one that you set aside).
  • Add in buttermilk, egg and vanilla; beat until JUST combined.
  • Transfer to prepared baking dish.
  • Sprinkle with reserved toffee topping evenly over batter.
  • Bake for about 35 minutes, or until golden brown and the cake tests done.
  • Cool completely in baking dish and cut into squares.

1/3 cup oil (or as your cake mix requires)
1 1/3 cups water (or as your cake mix requires)
1 cup caramel ice cream topping (i.e., Smuckers)
1 (14-ounce) can of sweetened condensed milk
1 (12-ounce) container frozen whipped topping, thawed
3-4 Heath candy bars, chopped

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Grease the bottom and sides of a 9x13-inch baking dish with non-stick spray or butter. Or, line it with parchment paper.
  • In a large bowl, beat together cake mix, eggs, oil, and water for 1-2 minutes, or until well-combined.
  • Pour the cake batter into the greased/lined pan. Bake for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool slightly for 10-15 minutes. Then, poke holes into the warm cake with a large fork or skewer.
  • Pour caramel and sweetened condensed milk over the cake. Allow the cake to cool completely.
  • Spread whipped topping evenly over the cake and top with chopped Heath bars. Refrigerate for at least 4 hours. Serve chilled, and enjoy!

This ice-cream cake is part of my husband's birthday celebration every year. He loves heath bars and coffee ice cream and once trying it, said it was the best cake he's ever had. His older brother tried it when he came to visit us and had two servings! This recipe is very easy to customize to your liking. You can use any type of candy or flavor ice cream to get the desired effect. I.e. use peanut butter cups instead of heath bars, use chocolate ice cream instead of coffee ice cream, and use chocolate sauce instead of caramel sauce. I prepared this ahead of time and did the final step the next morning.

16 ounces poundcake
1/2 gallon coffee ice cream
8 ounces caramel sauce
6 ounces Heath candy bars
graham cracker (I used 1/3 of the box)
1/4 cup butter
Cool Whip (I used the low-fat one and kept it in the fridge)

Steps:

  • For crust, heat butter in pan mix in crushed graham crackers.
  • Pour mixture in 9" pan and press down firmly.
  • Slice pound cake into chunks and start the cake with one thin layer of pound cake chunks on top of crust.
  • For ice cream layer, mix crushed heath bars into ice cream (reserve some for garnish) and then stir in caramel sauce.
  • Spoon 1/3rd of ice cream mixture on top of pound cake layer.
  • Repeat layering of ice cream mixture and pound cake until ingredients are gone.
  • Put pan in freezer for several hours or overnight.
  • Once frozen, take cake out of pan and frost with a coat of cool whip. Sprinkle the remaining heath bars on top.

2 cups whole milk
2 cups heavy cream
6 egg yolks, room temperature
3/4 cup sugar
1/4 cup coffee syrup
2 tablespoons instant coffee granules
heath bar snack-sized candy bar, lightly crushed (1 bag, about 30 pieces)

Steps:

  • Prepare an ice water bath to cool the ice cream custard.
  • In a heavy bottomed pot, combine whole milk, cream, ½ cup sugar and coffee syrup and coffee granules. Heat over medium heat until just simmering.
  • Meanwhile, whisk egg yolks with remaining 1/4 cup sugar until light in color; about 1 minute.
  • Carefully, pour a light stream of the milk mixture into the egg yolks while continuously whisking. If you pour all of the hot milk in at once, you'll get scrambled eggs. Once they are combined, pour the whole mixture back into the pot. Stir the mixture constantly over medium heat with a wooden spoon. When the custard is finished, it will coat the back of the wooden spoon and when you run your finger down the back of the utensil, the custard will not run. If you have a thermometer, the mixture will be around 175 to 180 degrees. This process could take about 10 minutes to complete.
  • Pour the custard through a fine sieve or strainer into a large bowl. Place the bowl in the already prepared ice bath and stir to cool. Once the ice cream is cool, place a piece of plastic wrap directly on top of the custard and refrigerate overnight. Prepare the ice cream in an ice cream maker according to the manufacturers instructions, adding the crushed Heath Bar during the last 5 minutes.

1 quart whipping cream
1/2 cup Heath candy bar, crumbles
2 tablespoons cocoa powder
1/3 cup confectioners' sugar

Steps:

  • Bake angel food cake as directed on box. Let cool upside down.
  • To make frosting, in electric mixer, mix whipping cream until soft peaks form.Slowly add confectioners' sugar and cocoa powder. Once medium peaks form, remove from stand mixer and fold in Heath Bar crumbles.
  • Note: I suggest taste testing the frosting after sugar and cocoa are added. Sweetness can be altered based on your preferences, but note that Heath bar crumbles will add some additional sweetness to frosting.

1 1/4 cups chocolate wafer crumbs (Oreos has crumbs ready-made in a box, usually where graham cracker crumbs are located)
1/4 cup melted butter
12 Heath candy bars, refrigerated to harden (or more to taste!)
1/2 gallon of your favorite vanilla ice cream
1/2 cup butter
1 (12 ounce) package chocolate chips
2 cups powdered sugar
1 (13 ounce) can evaporated milk
2 teaspoons vanilla

Steps:

  • Mix together the chocolate crumbs and the butter and pat onto the bottom of a 13X9X2 inch pan.
  • Place in freezer to firm up while preparing filling.
  • Remove Heath Bars from refrigerator and crush into smallish pieces.
  • Soften ice cream and mix with the crushed candy bars.
  • Carefully spread the ice cream over the crumb crust, cover with foil and freeze overnight.
  • Sauce: In a double boiler, melt chocolate chips and butter, stirring often.
  • Add sugar and evaporated milk and cook until thickened,stirring, about 8 minutes.
  • Remove from heat and add vanilla.
  • Serve warm over squares of ice cream pie.
  • Sauce can be made ahead.
  • Refrigerate until needed and slowly warm again to serve.
  • Note: This sauce keeps well, refrigerated, and is nice to have on hand for instant desserts.

She has a new. very busy life now so I have been missing the ice cream cake for too many years. Found the recipe on the internet today and am so excited to have it! Even if I have to make it for myself. Cooking time is freezing time.

2 1/4 cups macaroons, crumbled
4 tablespoons chocolate syrup
3 cups chocolate ice cream, slightly softened
3 tablespoons Kahlua
3 cups vanilla ice cream, slightly softened
5 Heath candy bars, coarsely chopped

Steps:

  • Layer the bottom of a 8 inch round springform pan with 1 1/4 cups of the macaroons.
  • Spread chocolate ice cream evenly over the crumbs.
  • Sprinkle 4 of the crushed Heath bars over the ice cream.
  • Dribble 3 tablespoons of the chocolate syrup and 2 tablespoons of the Kahlua over chocolate ice cream.
  • Cover with remaining macaroons.
  • Top evenly with vanilla ice cream.
  • Sprinkle remaining crushed Heath bars over ice cream, then the chocolate syrup and Kahlua.
  • Cover and freeze for at least 8 hours or overnight.
  • When ready to serve, run the blade of a kitchen knife around the edges of the pan, remove the sides and place the ice cream cake on a serving platter.

  • Note: Place Heath bars in freezer until frozen.
  • They are then easily broken with a mallet.

  • Assemble a 9-inch springform pan. Line the bottom with the chocolate wafers, using about half the box. Fill in as many spaces as you can in a single layer, breaking the cookies as you need. Then keep going to use up half of the box. You will end up with almost a full double layer of cookies.
  • Add a layer of coffee ice cream about 1 inch thick. I used an ice cream spade to press it into place.
  • Drizzle a thick zig-zag layer of the caramel sauce over the ice cream using about ⅓ of the jar. Next comes a layer of the ice cream bars. Place as many whole bars as you can in pan, then cut the remaining bars and place to fill in the spaces. Use your fingers to press gently, which will crack the outer chocolate coating of a few of them to help the bars spread and fill in the spaces. Scatter about half of the bag of toffee bits over everything. Now comes the only tricky part. Warm the hot fudge sauce just slightly in the microwave so that it is spreadable, but not hot. Using about ¾ of the jar, pour a layer over the toffee bits and use an offset spatula to create an even layer. If some of the toffee comes off and mixes into the fudge layer, don’t worry. Add final layer of ice cream, filling up the space to the top of the pan. Cover tightly with plastic wrap and freeze overnight.
