How to Turn Out Tender Shrimp image

You might not know this, but 30 minutes of brining ensures tender, succulent shrimp every time, regardless of the cooking method. I discovered this technique on my own after successfully brining other types of meat - mostly pork, chicken and turkey. After experimenting with shrimp one day, I was blown away by how sweet and tender they were. Brining may take a little extra time, but it's absolutely worth it.

Steps:

  • STEP ONE: Make the brining solution. For each pound of shrimp, combine 2 quarts water, 1/4 cup salt and 1/4 cup sugar in a large mixing bowl. Whisk together until the salt and sugar dissolve.
  • STEP TWO: Soak the shrimp. Place the peeled and deveined shrimp in the brine solution, and allow them to sit untouched for 30 minutes at room temperature.
  • STEP THREE: Drain, dry and cook. Drain the shrimp in a colander and gently pat them dry with paper towels. Proceed with your favorite recipe: pan-fry, grill or saute. The shrimp always turn out moist and delicious.

ROCK SALT SHRIMP

1 to 2 pounds rock salt (enough to fill your casserole by 1 inch)
5 to 6 clove garlic, minced
Good olive oil, for drizzling
5 large shrimp, head and shells left on

Steps:

  • Preheat an oven to 400 degrees F.
  • Select a 2-inch deep casserole dish that is large enough to hold the shrimp in a single layer. Add the rock salt to form a 1-inch bed in the dish. Slide the casserole dish into the oven and heat for 30 minutes.
  • Add the minced garlic and olive oil to a mixing bowl to prepare the marinade.
  • Make an incision down the back of each of the shrimp. Devein or remove the intestine from each piece and add the shrimp to the marinade. Toss together to coat, and let the ingredients rest for at least 10 minutes.
  • Once heated, pull your casserole dish from the oven and arrange the shrimp on the bottom in 1 layer. Return the dish to the oven, and roast for 2 minutes. Turn each shrimp over, and set them aside to let the residual heat from the pan finish cooking their second sides. Serve warm.

1 cup soy sauce
3/4 cup white wine vinegar
3/4 cup sugar
2 tablespoons sesame oil
1/2 cup plum sauce
2 tablespoons vegetable oil
2 teaspoons minced garlic
2 teaspoons minced ginger
1/2 red bell pepper, diced
2 pounds 16/20 shrimp, shell on, deveined
2 ounces rice cooking wine (recommended: Michu)
4 tablespoons kosher salt
4 teaspoons freshly ground black pepper
2 teaspoons ground Szechwan peppercorns, toasted
2 teaspoons Chinese 5-spice powder
4 teaspoons sugar

Steps:

  • Combine all ingredients sesame plum dipping sauce and mix well.

  • Heat the oil in a wok over high heat. Add the garlic, ginger, and red bell pepper. Stir-fry briefly and add the shrimp. Deglaze the wok with the wine. When the wine is almost evaporated and the shrimp are nearly cooked through, add the salt, black pepper, Szechwan pepper, 5-spice powder, and sugar and stir-fry rapidly, taking care not to burn the spices. Remove from the heat immediately and serve with sesame plum dipping sauce.

4 pounds rock salt
1 pound jumbo shrimp (20 to 24 shrimp per pound), with heads on

Steps:

  • Divide salt evenly among 2 (9 by 13-inch) metal pans divide salt evenly. Heat your oven to 400 degrees F and put the pans of salt into the oven to heat. When the oven reaches 400 degrees F, allow the salt to continue heating for another 15 minutes. After 15 minutes have passed, put the shrimp on top of the salt in 1 of the pans. Then cover with all of the salt in the second pan. The shrimp should be evenly and completely covered. Roast for 8 minutes. Remove from oven and check 1 shrimp for doneness. The shrimp should be opaque and white and pink in color. If not done, return to oven for 1 to 2 minutes. Serve immediately.

2 lbs large shrimp, peeled and deveined
2 tablespoons kosher salt
2 tablespoons sugar
1/4 cup extra virgin olive oil
3 tablespoons lemon juice
1 garlic clove, minced
lemon wedge

Steps:

  • Rinse shrimp and drain. In a large bowl mix together salt and sugar. Add shrimp and stir to coat evenly. Cover bowl and chill at least 45 minutes or up to 2 hours.
  • If using wooden skewers, get them soaking in water for about 20 minutes. Prepare grill for direct-heat cooking.
  • Rinse salt and sugar from shrimp and pat dry. Thread shrimp in a C shape onto metal or wooden skewers. Lay the skewers in a rimmed pan. In a glass bowl, combine oil, lemon juice and garlic; Pour over shrimp and turn skewers to coat evenly. Let stand 5 to 10 minutes.
  • Lay skewers on grill over hot coals or high heat on a gas grill. Close lid on gas grill. Cook, turning once, until shrimp are bright pink on the outside and opaque but still moist-looking in center of thickest part, about 5 minutes.
  • Transfer skewers to a platter and serve with lemon wedges to squeeze juice over.

1 pound large shrimp (preferably fresh and not previously frozen), peeled and deveined

1 tablespoon minced garlic
1 tablespoon minced fresh ginger
1 teaspoon minced jalapeno chile, with seeds

Steps:

  • In a large bowl mix together 1 tablespoon salt and 4 cups cold water. Add shrimp and swish in the water using your hands for about 30 seconds. Drain. Repeat process with another tablespoon salt and 4 cups cold water; drain and rinse shrimp under cold running water. Pat dry with paper towels.
  • In a small bowl, mix together remaining 1/2 teaspoon salt, sugar, and ground Szechuan peppercorns; set aside.
  • Heat a 14-inch flat-bottomed wok or 12-inch skillet over high heat until very hot. Add 1 tablespoon oil, garlic, ginger, and chile; cook, stirring with a metal spatula, until fragrant, about 10 seconds. Push garlic mixture to one side of wok and carefully add shrimp, spreading them in an even layer. Let cook, without stirring, 1 minute.
  • Add remaining tablespoon oil and cook, stirring, until shrimp just begin to turn orange. Sprinkle shrimp with salt mixture and continue cooking, stirring, until opaque, 1 to 2 minutes more.
