SUPER STUFFED SHELLS

Steps:
- Preheat the oven to 350 degrees F. Lightly grease a 2-quart casserole dish with 1 teaspoon of olive oil.
- Bring a medium pot of water to a boil. Add 1 teaspoon of the salt and the pasta shells, and cook until al dente, 10 to 12 minutes, stirring occasionally with a long-handled spoon to prevent the shells from sticking together. Drain and rinse under cold running water. Drain.
- In a medium skillet, heat the remaining tablespoon of olive oil over medium heat. Add the onions and garlic and cook, stirring, until very soft, 6 to 7 minutes. Add the ground veal and cook, stirring, until cooked and browned. Add the squeezed spinach and cook, stirring, for 3 minutes. Remove from the heat and season with salt and pepper.
- In a large bowl, combine the ricotta cheese, eggs, Parmesan cheese, and 1 cup of the mozzarella cheese. Add the spinach mixture, the extra-virgin olive oil, Essence, remaining teaspoon of salt, the basil, oregano, and pepper, and stir to combine thoroughly. Spoon about 2 tablespoons of the spinach-ricotta filling into each cooked pasta shell. Place the filled shells in the prepared dish.
- Pour the Basic Red Sauce over the filled shells and top with the remaining 1 cup of mozzarella cheese. Bake, uncovered, until bubbly, about 20 minutes. Remove from the oven and let rest for 5 minutes before serving.
- Combine all ingredients thoroughly and store in an airtight jar or container.

- In a medium pot, heat the oil over medium heat. Add the onions, garlic, salt, basil, oregano, and pepper, and cook, stirring, until soft, about 5 minutes. Add the tomatoes, tomato sauce, tomato paste, water, and sugar and stir well. Bring to a simmer over medium-high heat. Lower the heat to medium-low and simmer, uncovered, until thickened and fragrant, 25 to 30 minutes, stirring occasionally.
- Remove from the heat and keep warm until ready to use.
HAM AND VEGETABLES OVER MEDIUM SHELLS
Steps:
- Bring a large pot of salted water to a boil, add pasta and cook until tender but still firm to the bite, 8 to 10 minutes or according to package directions.
- Heat oil in a large skillet. Add sliced onion and saute for 5 minutes or until tender. Add garlic and zucchini and saute a minute. Add white wine, cover and simmer 2 to 3 minutes or until tender. Remove lid, add tomatoes, pimentos, ham and simmer a couples of minutes just to heat through. Season to taste with salt and pepper. Remove from heat and spoon over pasta. Garnish with sliced olives and parsley.
BROCCOLI STUFFED VIDALIA ONIONS

Steps:
- Peel and halve the onions. Pot boil in salted water for 12 minutes. Remove centers, leaving about 3/4" edge.
- s. Place onion cups in a 13x9x2" pan.
- Chop the center portions which were removed from the onions to equal about 1 cup.
- Cook broccoli to package directions; drain.
- Combine chopped onion, broccoli, Parmesan cheese, mayonnaise and lemon juice; spoon into the onion cups.
- Note: at this point the onions can be refrigerated until ready to bake.
- Melt butter; blend in the flour, salt, pepper and garlic powder(if using). Add milk and cook until thick, stirring constantly.
- Remove from heat and blend in softened cream cheese. Spoon sauce over the onions; bake, uncovered, at 375*F. for 20 minutes.
- Serve and enjoy!

- Preheat oven to 375°F.
- In a large saucepan, parboil onions in salted water for 10-12 minutes. Drain.
- Cook broccoli according to directions. Drain.
- Cut tops off onions. Remove centers of onions (reserve), leaving 3/4-inch edges. Place hollowed onions in baking dish.
- Chop onion centers; combine with broccoli, Parmesan cheese, mayonnaise and lemon juice. Spoon into onion shells.
- In a medium saucepan over medium heat, melt butter, blend in flour and brown. Add salt and milk. Cook until thickened, stirring constantly. Remove from heat and blend in cream cheese. Spoon over stuffed onions.
- Bake at 375 for 20 minutes.

- Heat olive oil in a large skillet over medium heat.
- Add broccoli, onion, Italian seasoning and cilantro. Stir occasionally until broccoli and onion are tender, about 10 minutes,.
- Add garlic and quartered mushrooms. Stir occasionally until mushrooms are tender,about 5 minutes.

- In a large skillet, saute onions in butter until softened. Add garlic powder and salt. CARAMELIZED BROCCOLI
This is a fried broccoli side dish that is so good.. This is more of a technique than a recipe. Very easy, and my kids love it.

Steps:
- Heat a large skillet over medium high heat and add the oil.
- Add the broccoli and stir well to coat with the oil. Season to taste with s/p.
- Fry until the broccoli turns brown from the sugars caramelizing. Just leave it alone until it starts to brown on the bottom before turning it.
- The result is crispy, sweet, almost candy-like.
- No, it's not burnt - it's CARAMELIZED. LOL.
CARAMELIZED ONION-STUFFED BAKED POTATO
Recipe comes courtesy of Cooking Light magazine (March 2005 edition). This is definately a different way to stuff a potato and it is very delicious! Only adjustment I made to the recipe was the cooking process of the end potato. Recipe says to microwave the fully stuffed potato to melt the cheese, but I placed them in the oven for about 5 minutes with the other dish I was preparing and it worked just fine. If you like potatoes, definately give this one a try.

- Pierce potatoes with a fork; arroange on paper towels in microwave.
- Microwave on High for 10 minutes or until done.
- Cut each potato in half lengthwise; scoop out pulp, leaving a 1/4 inch thick shell.
- Combine potato pulp, 1/4 cup cheese, sour cream, salt& pepper.
- Spoon potato mixture evenly into shells.
- Melt butter in a nonstick skillet over medium heat.
- Add onion and sugar; saute 8 minutes or until browned.
- Stir in sherry, worcestershire sauce, thyme,& garlic.
- Cook 1 minute or until liquid evaporates scraping pan to loosen browned bits.
- Top each potato half with about 2 tablespoons onion mixture and 1 tablespoon of cheese.
- Microwave on high 1 minute or until thoroughly heated.
- (Note: can also warm potatoes in oven for a few minutes if you're already using your oven.).
