ITALIAN TUNA SALAD



Italian Tuna Salad image

2 tablespoons lemon juice, from 1 large lemon
1 tablespoon capers, drained and chopped
1 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
Kosher salt
One 15-ounce can cannellini beans, drained and rinsed
One 6.35-ounce jar olive oil-packed tuna, drained
2 cups baby arugula
2 small treviso, cut into 2-inch pieces
1 Belgian endive, cut into 2-inch pieces
1 small bulb fennel, shaved on a mandoline or sliced thinly with a knife
1/2 cup fresh Italian parsley leaves

Steps:

  • Whisk together the lemon juice, capers and Dijon mustard in a large bowl. While continuing to whisk, drizzle in the olive oil in a steady stream. Whisk in 1/4 teaspoon salt. Add the beans to the dressing and mash gently with a spoon. Add the tuna, flaking it with a fork into bite-size pieces. Toss lightly to coat. Top the tuna mixture with the arugula, treviso, endive, shaved fennel, parsley leaves and 1/2 teaspoon salt. Using your hands, toss the salad together, bringing the dressing up from the bottom of the bowl until everything is coated evenly.

1 can (6 ounces) light water-packed tuna, drained and flaked
2 tablespoons finely chopped red onion
1 teaspoon minced fresh parsley
1-1/2 teaspoons dill weed
1/8 teaspoon garlic salt
1/8 teaspoon dried thyme
1/8 teaspoon pepper
Pinch cayenne pepper
2 tablespoons fat-free mayonnaise
1 tablespoon reduced-fat sour cream
3 cups Boston lettuce leaves
6 grape tomatoes, sliced
Optional: sliced cucumber and fresh dill

Steps:

  • In a small bowl, combine the first eight ingredients. Combine the mayonnaise and sour cream; stir into the tuna mixture. , Divide the salad greens between two plates. Top with tuna mixture and tomatoes and if desired, cucumbers and dill.

This recipe was saved from many years ago (35) when my then future MIL and I would enjoy a cool, refreshing "time-out" on her screened in porch. Never finding tuna in a can" or a tuna from "anywhere" to be especially great tasting, particularly to my immature palette (I was probably 19 yers.old) I would hem and haw about how I was already full, wasn't hungry, etc...etc...until one day, I thought I would take the plunge and just eat it. And it was as delightful as promised. Maybe it was the time spent with this woman that had such an impact on my life, maybe it was the summer breeze softly making the wind chimes "tinkle" in the distance, either way, I have loved this method of making this simple sandwich ever since. So with great fondness for a great woman, I present to you, the reader, Catherine-Anne's simply lovely tuna salad.

6 ounces canned tuna (in water, or oil, drained)
1 large celery rib, chopped largely
1/4 teaspoon prepared mustard
1/2 teaspoon onion, minced
2 1/2 tablespoons mayonnaise (I prefer less)
1/8 teaspoon ground pepper (I add more)
1/4 teaspoon salt (to taste)
2 drops Tabasco sauce (optional)
1 large lettuce leaf
4 slices bread
1/2 teaspoon butter
1 teaspoon fresh chives (chopped)

Steps:

  • Mix together celery, mustard, onion, mayonnaise, pepper, salt, and Tabasco Sauce in a mixing bowl.
  • Wash and dry lettuce leaves well so they are crispy and enjoyable to eat.
  • Add drained tuna to mayonnaise mixture, gently, trying not to break up tuna bits.
  • Toast bread, spread with butter and put one lettuce leaf in between bread.
  • Spoon tuna salad onto lettuce leaf, adding chives. Clamp slices of bread together. Cut in 1/2 diagonally.
  • Agh -- life IS good.

1 cup small shell macaroni
1 can (14 ounces) tuna, drained and flaked
1 cup diced celery
1/2 cup chopped green onions with tops
1 cup frozen peas, thawed
1 jar (2 ounces) diced pimientos, drained, or 1 tomato, seeded and diced, or 6 radishes, sliced
1 cup Miracle Whip
1 tablespoon sweet or dill pickle relish
1 tablespoon ketchup
1 teaspoon mustard
1/4 cup half-and-half cream or milk
Salt and pepper to taste
Fresh parsley

Steps:

  • Cook macaroni in boiling salted water until tender. Rinse in cold water and drain. Place in a large bowl. Add tuna, celery, onions, peas and pimientos; toss gently to mix. Combine Miracle Whip, pickle relish, ketchup, mustard and cream; fold into the salad. Add salt and pepper. Cover and refrigerate for several hours before serving. Garnish with parsley.

2 pounds elbow macaroni
1.5 cups light miracle whip
0.75 cups mayonnaise
0.25 cups mustard
1 teaspoons salt
0.5 teaspoons pepper
46 stalks celery
2 cans tuna
1 pounds peas
8 ounces pepper jack cheese
8 ounces monterey jack cheese
1 units onion

Steps:

  • Cook elbow macaroni per package directions; drain and rinse with cold water.
  • Put noodles into a large bowl. Add Miracle Whip, mayonnaise, and mustard to the mixture; mix well. Add salt & pepper; mix well. Coarsely chop celery and add to mixture. Flake in the tuna and add the frozen peas (don't thaw or cook them); mix all together.
  • Cube the blocks of cheese. Immediately before serving, add the cheese. Sprinkle some French fried onions over the top of the mixture if desired.

2 tablespoons olive oil
2 fresh tuna steaks (about 8 ounces each)
1/2 cup finely diced celery
1/2 cup finely diced unpeeled Granny Smith apple
2 scallions, thinly sliced
1/2 cup mayonnaise
3 tablespoons finely slivered fresh basil leaves
4 good inner radicchio leaves, for serving cups
Toasted peasant bread

Steps:

  • 1. Heat the oil in a large, nonstick skillet over medium-high heat. Sear the tuna on the first side for 5 minutes, until lightly browned. Turn with a spatula and sear for 3 minutes longer or until cooked to your preference. Let the tuna rest for 5 minutes.
  • 2. Flake the tuna into 1x1/2-inch pieces and remove to a large bowl. Toss gently with the celery, apple, and scallions. Season with salt.
  • 3. Fold mayonnaise and basil into the tuna. Serve in radicchio cups with toasted peasant bread.
