  • chocolate-Melt 2 tablespoons butter in a skillet. Add 2 sliced bananas and 2 tablespoons brown sugar. Cook until golden and syrupy, about 5 minutes. Sprinkle the bananas with cinnamon and spoon over rum raisin ice cream.

This is very rich and delicious and is perfect for impressing your company. I love it, but usually scale it down quite a bit since it's just me. It's in my B&B arsenal.

4 bananas, sliced
1 cup brown sugar
1/2 cup Bourbon
2 tablespoons butter
6 eggs
1/4 teaspoon salt
2 tablespoons vanilla
1/2 cup cream (you may sub in half & half)
8 slices thick white bread (I use Texas Toast)

Steps:

  • To make sauce: In a small pan, melt butter and brown sugar over medium heat; carefully add bananas and simmer for 2 minutes. Remove from stove and add bourbon; return to flame and continue simmering an additional 2 minutes. Cover and keep warm until ready to use.
  • To make batter: In a large bowl, whisk eggs and salt. Add vanilla. Pour in cream, continuing to whisk until well blended.
  • Melt 1 to 2 tablespoons butter in a large frying pan over medium-high heat. Dip each bread slice in batter and cook each side until golden brown. Repeat with remaining bread slices.
  • Transfer 2 bread slices to individual plates and top with banana slices and sauce. Serve with maple syrup or powdered sugar.

EASY CARAMELIZED BANANAS



Easy Caramelized Bananas image

These are great for breakfast over pancakes, waffles, french toast, crepes, oatmeal, etc. Or serve with low fat ice cream and toasted macadamia nuts for dessert. You can use regular tub margarine or butter in place of the cooking spray. However, this will double the cooking time, and make for a crunchier stickier outside to your banana.

2 -3 bananas
4 -6 tablespoons granulated sugar (or more)
cooking spray (regular or butter flavor)

Steps:

  • Slice bananas into thick coins or lengthwise strips, depending on your preference.
  • Pour sugar onto a plate. Roll bananas in sugar, until completely coated.
  • Spray a medium size nonstick pan, and heat over medium high heat. Add bananas and sugar.
  • Cook bananas until light to golden brown underneath, about 4-5 minutes (you can lift with a spatula or fork to peek). Be careful not to overcook or burn them (if you smell them browning, or see color in the pan, flip them right away). Keep in mind these times will vary, depending on your stove.
  • Gently flip bananas over to brown other side, turning heat down to medium. The second side will brown in about one minute.
  • Transfer to a plate that has been coated with cooking spray (otherwise they may stick - they are ooey gooey and sticky!) and serve. Alternately, slide them right onto your ice cream or breakfast food.
  • Soak pan in hot water to facilitate cleaning.

3 -4 ripe bananas
2 cups packed brown sugar
1/2-3/4 loaf cinnamon-swirl bread
4 egg yolks, only
1/2 cup sugar
4 cups heavy cream
1/4-1/2 lb unsalted butter
1 vanilla bean
1/4-1/2 cup Bourbon
1 cup walnuts or 1 cup pecans
1 tablespoon cocoa powder

Steps:

  • Caramelize walnuts.
  • Take the walnuts and put them in a large skillet and toast on med heat till they brown a little. Then add 2 tablespoons of butter,stirring to coat nuts. Then add 1/2 cup brown sugar and cocoa powder stirring again to caramelize sugar and coat nuts. Then spread nuts over cookie sheet with wax paper and cool.
  • Bread pudding: Preheat oven to 200°F.
  • Cube bread into equal size cubes and spread onto cookie sheet and bake until dry and crisp(not brown) about 10-15 minutes then bump up temperature to 350°F Then peel and cut bananas in bite size pieces and sauté in large non-stick pan with 2 tablespoons butter and 1/2 cup brown sugar and 2 tablespoons bourbon till bananas are well caramelized and bourbon cooked off. Put 3 cups heavy cream in sauce pan with vanilla bean (split and scraped) and simmer over medium heat till bubbles form around rim of pan (do not boil) then remove from heat.
  • Whisk the eggs together with the 1/2 cup sugar until it is well incorporated. Then temper the egg with the warm cream adding small amounts at first until the egg and cream come together and egg warms up,then remaining cream can be added and vanilla bean removed finishing the custard. Now take dried cubes of bread add to custard and allow them to soak up most of custard.
  • Now take the custard soaked bread, caramelized nuts, and bananas and layer them into large casserole dish( bread then bananas then nuts, repeat) Then put into water bath. Put into preheated oven for about 30-45 minutes till custard looks set wiggles as one mass not sloshy. You can add a little brown sugar to top to crisp and caramelize it.
  • Bourbon Brown Sugar Carmel Sauce: Add remaining brown sugar, butter and bourbon to a large non-stick skillet and allow to cook for 10-15 minutes on medium heat. The ingredients should be combined and bourbon cooked off and it may look granular. Now remove from heat and stir in remaining cream slowly being careful not to splash. Once cream is incorporated return to med-low heat and allow to simmer another 5-10 minutes stirring occasionally. Once cooled store and add to top of pudding or ice cream.

• 1/4 Cup Butter, cut into small pieces
• 1/2 Cup Light brown sugar, firmly packed
• 1/4 Tsp. Ground Cinnamon
• Dash Ground Nutmeg
• Scant 1/4 Cup Bourbon
• 2-3 Firm, ripe Bananas, peeled and cut into slices
• 1/4 Cup Toasted Pecans, chopped

Steps:

  • Over low heat in 2 quart saucepan, melt butter with brown sugar, stirring constantly. When the mixture develops a syrupy consistency, after 3-5 minutes, add the sliced bananas and spices. Cook while continually spooning syrup over the bananas until heated through, about 3-4 minutes. Take from heat. Stir in bourbon. It will bubble up so be careful. Return to heat and bring to low boil. Boil 1 minute, stirring carefully. Turn to very low heat to keep sauce warn while you make the French Toast. Serve warm over french toast and sprinkle with chopped toasted pecans.
