Caramelized Onions and Apples with Brie image

Number Of Ingredients 10

2 packages (14 ounces each) sliced green apples, Chiquita®
2 large sweet onions, sliced into thick rounds
1/2 cup golden raisins, Sun-Maid®
1/3 cup packed light brown sugar, Domino®/C&H®
1 packet (1.8 ounce) white sauce mix, Knorr®
1 tablespoon fines herbes, Spice Islands®
1 stick (1/2 cup) butter, cut into small pieces
No-stick cooking spray, Pam®
1/2 package (17.3 ounce) frozen puff pastry (1 sheet), thawed, Pepperidge Farm®
1 wheel (13.2 ounce) baby brie, Aloutte®

Steps:

  • 1. In a large bowl, combine apples, onions, raisins, brown sugar, white sauce mix, and fines herbes; toss well. Place mixture in a 5-quart slow cooker; dot with butter. Cover and cook on Low heat setting for 12 hours.
  • 2. Forty minutes before serving, preheat oven to 400 degrees F. Coat a baking sheet with no-stick cooking spray; set aside.
  • 3. Unroll pastry sheet. Place Brie wheel in the center of the puff pastry and wrap cheese by bringing ends of pastry together toward the center of the wheel. Carefully turn cheese over, folding pastry ends securely under wheel. Lay on prepared baking sheet, folded side down. Bake for 25 minutes or until light golden brown. Let cool 10 minutes.
  • 4. Serve pastry-wrapped Brie warm with caramelized onion and apple mixture.

Brie and Apple Grilled Cheese Melt is a wildly popular fall dish that's nothing short of amazing. Packed with fresh flavors and comforting textures, you won't be able to get enough! It's an excellent lunch, appetizer or anytime snack.

2 large slices Sourdough bread
1 large garlic clove, (peeled)
extra virgin olive oil for the pan
1 cup thinly sliced yellow onion
1 teaspoon fresh thyme leaves
1 cup thinly sliced firm apples, washed and dried ((Fuji, Honey Crisp, Pink Lady))
8 ounces firm brie cheese
1 tablespoon honey
salt and freshly ground black pepper

Steps:

  • Set the oven and prep the bread. Preheat the oven to 375°F, adjust a rack to the center, line a baking sheet with foil, and place the slices of bread on top.When the oven is preheated, toast the bread. This should just take a few minutes -- you want it to be golden.
  • Add garlic to the bread. With a good amount of pressure, rub each toasted slice of bread with the garlic clove - the toasted bread should "grate" it a bit, flavoring the surface. Set aside.
  • Caramelize the onion with thyme and apples. Coat the bottom of a medium-sized sauté pan with the oil, and place it over medium heat. Add the onion, and stirring often, cook until golden, about 7 minutes. Then add the thyme and apples. Again, stirring often, cook until the apples become soft and golden, about 4 minutes. Season to taste with salt and pepper. (Here's How to Season to Taste.)
  • Add brie and apple mixture to the bread. Cut the brie into slices thin enough to cover each piece of toasted bread on the baking sheet. Add them to the bread, and then top each one with an equal portion of the onion-apple mixture.
  • Bake and serve. Place in the preheated 375°F oven and bake just to melt the brie, about 4 minutes. Crack a little more pepper on top if desired, and then drizzle each one with a bit of the honey. Serve immediately.

I posted a Fresh Strawberry and Almond Baked Brie that I sometimes make a different way...with apples and walnuts. This gave me inspiration to come up with this Bruschetta recipe. It is great in the fall for dinner parties and other occasions.

1 large white onion, thinly sliced
1 large baguette, cut into 1/2 inch slices
8 ounces brie cheese, rind removed
2 gala apples, cored and sliced into thin wedges
1/4 cup chopped walnuts, toasted
2 tablespoons rice wine vinegar
1 tablespoon dark brown sugar
2 tablespoons olive oil
salt

Steps:

  • Heat Olive Oil in a pan to medium high heat. Add Onions, seasoning with a pinch of salt. Cook until they begin to turn brown and caramelize. DO NOT BURN!
  • Add apples, vinegar, and brown sugar. Reduce heat to medium. Saute until apples are cooked through and vinegar/brown sugar are absorbed.
  • In the meantime, slice the brie into pieces that are similar in size to the baguette slices. Place one slice of cheese on each baguette slice. Broil for about 2-3 minutes, or until cheese melts and bread is crispy.
  • Top each baguette slice with a spoonful of the caramelized apple/onion mixture. Serve warm.
  • Idea! - This appetizer is great for a dinner party where pork is the main dish.

Apples and cheese make perfect partners in this puff pastry tart, ideal for using up the remnants of a cheeseboard or leftover cranberry sauce. Serve hot or cold for a Boxing Day buffet

320g pack ready-rolled all-butter puff pastry , defrosted at room temperature if frozen
1 tbsp olive or rapeseed oil , plus a drizzle
3 large onions , halved and sliced
2 tbsp white wine vinegar , plus a splash
1 tbsp Dijon mustard
small bunch of thyme , leaves picked, plus a few sprigs to serve
1 eating apple
100g cranberry sauce (or chutney)
175g brie , sliced (or other cheese)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Unroll the pastry sheet onto a large baking tray (leave it on the paper from the pack). If the edges are not straight, trim them with a sharp knife. Score a border, about 1cm in from the edge. Score a criss-cross pattern over the central piece of pastry (this will prevent it from rising too much) and around the border, if you like. Bake for 15 mins.
  • Meanwhile, heat the oil in a large pan. Add the onions and cook for 10-15 mins until softened and starting to caramelise. Stir in the vinegar, bubble for 1 min more, then add the Dijon mustard and thyme, season well and set aside. Slice the apple thinly through the core so a few slices have a nice star in the middle, and remove any seeds. Toss the slices in a splash of vinegar to prevent them from browning.
  • The pastry should be puffed and starting to colour. Push down the centre, then spread over the onions. Add blobs of cranberry sauce, then top with the apple slices and brie, overlapping them to cover the tart. Add a few more thyme sprigs, drizzle with a little oil, then put back in the oven for a further 25 mins until the cheese is bubbling and the apple slices are soft. Serve warm or cold.

6 tablespoons extra-virgin olive oil
4 Granny Smith apples, peeled, cored and cut into 6 wedges
2 stems fresh thyme
2 bay leaves
2 tablespoons butter
3 large white onions, peeled and sliced
Kosher salt and freshly ground black pepper to taste

Steps:

  • Heat half the olive oil in a large nonstick skillet over medium-high heat and add the apples and then one stem of thyme and one bay leaf. Cook, stirring occasionally, until the apples are golden brown but not mushy, 5 to 10 minutes. Remove from heat and throw away the thyme and bay leaf.
  • In another skillet over medium-high heat, add the remaining olive oil, the butter and the onions, then the remaining thyme and bay leaf. Season with salt and pepper. Reduce heat to medium low and cook, stirring frequently, until the onions are soft and golden brown, 20 to 30 minutes. Remove from heat and throw away the thyme and bay leaf.
  • To serve, warm the apples and onions over medium-high heat and spoon them around the pork chops on a warmed platter.

  • Melt butter in large sauté pan over medium high heat. Add onion slices with salt and pepper, toss to coat in melted butter, and then stir occasionally only to prevent burning.
  • Cook until the onions turn a deep golden brown and have caramelized. This can take 15-25 minutes. Once caramelized, add the sugar and balsamic vinegar.
  • Stir to combine and cook for several more minutes until all of the moisture has evaporated. Set aside and allow to cool.
  • Unfold puff pastry sheet and set out on large cutting board. Roll the puff pastry to a large enough square so that it can fully wrap around the brie, onions, and fresh thyme. Set the brie wheel on the center of the puff pastry and top with the caramelized onions.
