WHITE CHOCOLATE CARAMEL



White Chocolate Caramel image

Roasting high-quality white chocolate magically turns it into an addictive caramel. Stir it into hot chocolate, sandwich it between two cookies or drizzle it over ice cream. It'll be your new favorite spread, and it makes a great gift in a glass mason jar tied with a pretty ribbon.

1 pound good quality white chocolate (at least 30 percent cocoa butter), chopped if a bar

Steps:

  • Preheat the oven to 250 degrees F. Scatter the chocolate into a 9- by 13-inch glass baking dish. Roast the chocolate, stirring and smoothing it out with a rubber spatula every 5 to 10 minutes, until it is the color of peanut butter, 30 to 35 minutes. Don't panic if it looks clumpy and crumbly at first; working the chocolate back and forth with a rubber spatula will help it become smooth and creamy. Store at room temperature in a resealable mason jar for up to 2 months.
  • To reheat, warm the jar in a pot of simmering water.

1 pkg. (3.3 oz.) JELL-O White Chocolate Flavor Instant Pudding
18 KRAFT Caramels
3/4 cup COOL WHIP Rich & Creamy Refrigerated Whipped Topping

Steps:

  • Beat 1-1/2-qt. milk and pudding mix in large saucepan with whisk 2 min. Bring just to a simmer on medium heat, stirring constantly. Remove from heat.
  • Microwave caramels and remaining milk in microwaveable bowl on HIGH 30 sec. to 1 min. or until caramels are completely melted and sauce is well blended, stirring after 30 sec.
  • Reserve 2 Tbsp. caramel sauce for later use. Whisk remaining caramel sauce into pudding; pour into 6 mugs.
  • Top with COOL WHIP. Drizzle with reserved caramel sauce.

1 teaspoon coarse sea salt
1/2 cup NESTLÉ® TOLL HOUSE® Semi-Sweet or Dark Chocolate Morsels

Steps:

  • PLACE all ingredients except morsels in food processor bowl. Cover; process until mixed. Add morsels; process until morsels are coarsely chopped. Makes about 2 cups mix.

  • Bring 5 cups water and chocolate to simmer in medium saucepan, stirring to dissolve chocolate. Mix in 1/4 cup cream. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to simmer, stirring frequently, before continuing.).
  • Whip 1 cup cream and powdered sugar in medium bowl until peaks form. Drizzle caramel over and swirl together, forming streaks (do not over-mix).
