4-1/2 cups heavy whipping cream
1-1/2 cups half-and-half cream
15 large egg yolks, room temperature
1-1/3 cups sugar, divided
3 teaspoons caramel extract
1/4 teaspoon salt
1/3 cup packed brown sugar

Steps:

  • Preheat oven to 325°. In a large saucepan, heat whipping cream and cream until bubbles form around sides of pan; remove from heat. In a bowl, whisk egg yolks, 1 cup sugar, extract and salt until blended but not foamy. Slowly stir in hot cream mixture., Place an ungreased broiler-safe 13x9-in. baking dish in a baking pan large enough to hold it without touching the sides. Pour egg mixture into dish. Place pan on oven rack; add very hot water to pan to within 1 in. of top of dish. Bake until center is just set and top appears dull, 40-50 minutes. Immediately remove dish from water bath to a wire rack; cool 1 hour. Refrigerate until cold., Mix brown sugar and remaining sugar. To caramelize topping with a kitchen torch, sprinkle custard evenly with sugar mixture. Hold torch flame about 2 in. above custard surface and rotate it slowly until sugar is evenly caramelized. Serve immediately or refrigerate up to 1 hour., To caramelize topping in a broiler, let custard stand at room temperature 30 minutes. Preheat broiler. Sprinkle custard evenly with sugar mixture. Broil 3-4 in. from heat until sugar is caramelized, 2-3 minutes. Serve immediately or refrigerate up to 1 hour.

A recipe from the Chef Michael Smith recipe files. Crunchy topping, velvety smooth pudding. Tends to be a bit rich, and sweet. The reason for using the baking torch is that you want the pudding to still be cold when you serve it. The torch only carmelizes, it doesn't heat up the whole pudding as putting it back under the broiler, will.

8 egg yolks
2 cups milk
1 cup whipping cream
1 tablespoon vanilla extract
1/8 teaspoon salt
1 cup sugar
6 tablespoons sugar
1/4 cup water

Steps:

  • Make the butterscotch, first.
  • Put 1 cup sugar in saucepan, pour 1/4 cup water around sugar, put on stove, do not stir. Leave on stove, but watch, you will see the water boil away, leaving a clear thick substance. Let the substance(sugar), boil hard for 5 minutes. Then stir the sugar, till it turns a golden brown, and remove from heat.
  • Stir in the cold milk, and whipping cream, vanilla extract and salt. The butterscotch will instantly harden.
  • Put back on heat and reheat until the butterscotch softens and whisk till it incorporates with the milk.
  • Let cool slightly.
  • Start up your mixer, with the whisk attachment on medium speed. Slowly, pour in the milk mixture into the eggs, so they don't curdle. Do this until all the milk is in the eggs. Then put on a higher speed for 2 minutes.
  • Strain, pudding through a strainer, into a clean bowl.
  • Pour into 5-4 ounce timbals, 3/4 of the way up the bowl.
  • Place the pudding cups in a tray, with sides, as you will be pouring water in around the bowls, about 1/2 way up the bowls.
  • Bake in oven, preheated to 325F, for 30 minutes.
  • Pudding should be set at sides, but jiggly in centre.
  • Remove from bath, cool slightly, then put in fridge, to set.
  • Just before serving, remove pudding from fridge.
  • Spread 1 tbsp per pudding, evenly on top of pudding.
  • Use baking torch, and caramelize topping.
  • Serve.

4 cups cream
8 ounces sugar
1 vanilla bean, split and scraped
8 egg yolks
4 cups goat milk
1 cup sugar
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
1 cinnamon stick
1 vanilla bean, split and seeds scraped, optional
1/2 teaspoon baking soda
12 crab apples

Steps:

  • For the creme brulee: In a medium saucepan, bring the cream, sugar and vanilla bean to a boil. Add the egg yolks and continue to cook, whisking until slightly thickened. Remove the pan from the heat, strain and set aside for later use.
  • For the caramel: Stir together the milk and sugar in a large, heavy-bottomed pot. (Make sure the liquid only goes three-quarters of the way up the sides, as it will froth when the baking soda is added.) Add the vanilla extract, salt, cinnamon stick and vanilla bean with seeds if using. Heat the mixture over medium-high heat, constantly stirring, and bring to a boil, about 15 minutes. Keep your eyes on the pot-- it boils over easily and quickly! Quickly remove from the heat and add the baking soda to the pot. The mixture will rise and become frothy, just keep stirring the mixture.
  • Return the pot to medium heat, and stir frequently, about every 10 minutes. Make sure the milk stays at a gentle simmer rather than a raging boil, and stir across the bottom of the pot to make sure the mixture is not scorching. Adjust the heat as needed. Cook until the milk starts to turn golden brown, about 1 hour 30 minutes.
  • Remove the cinnamon stick and the vanilla pod. At this point, it will start to thicken quickly, so it's important to keep stirring so the milk doesn't burn on the bottom of the pan. Keep stirring until the mixture is a rich brown and thick enough to coat the back of the spoon, 15 to 30 minutes.
  • Cool the sauce slightly and then pour into an airtight container. Store the mixture in the refrigerator for up to 1 week.
  • Preheat the oven to 300 degrees F.
  • Using a melon baller, hollow out the crab apples. Fill the centers with the creme brulee and bake until the creme brulee is set. Chill overnight.
  • Reheat the caramel until soft enough for dipping. Dip the stuffed apples using a stick or fork. Chill for 1 hour before serving.

1 cup vanilla sugar, divided

2 quarts hot water

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the cream, vanilla bean and its pulp into a medium saucepan set over medium-high heat and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes. Remove the vanilla bean and reserve for another use.
  • In a medium bowl, whisk together 1/2 cup sugar and the egg yolks until well blended and it just starts to lighten in color. Add the cream a little at a time, stirring continually. Pour the liquid into 6 (7 to 8-ounce) ramekins. Place the ramekins into a large cake pan or roasting pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake just until the creme brulee is set, but still trembling in the center, approximately 40 to 45 minutes.
  • Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

1 extra-large egg
4 extra-large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream
1 teaspoon pure vanilla extract
1 tablespoon orange liqueur (recommended: Grand Marnier)

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined. Meanwhile, scald the cream in a small saucepan until it's very hot to the touch but not boiled. With the mixer on low speed, slowly add the cream to the eggs. Add the vanilla and orange liqueur and pour into 6 to 8-ounce ramekins until almost full.
  • Place the ramekins in a baking pan and carefully pour boiling water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes, until the custards are set when gently shaken. Remove the custards from the water bath, cool to room temperature, and refrigerate until firm.
  • To serve, spread 1 tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar carmelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens.

2/3 cup sugar
1/3 cup water
1 cup milk
1 cup heavy cream
4 egg yolks
1/2 cup caster or fine sugar
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 325 degrees F.
  • Place the sugar and water in a heavy-bottomed saucepot over low heat. Let the sugar dissolve. Carefully brush the walls of the pot with a little water to prevent the sugar from crystallizing on the sides. Increase the heat to medium-high and boil until the syrup turns golden brown. Remove from the heat promptly and carefully divide the hot caramel among the 6 ramekins. Let cool for at least 2 minutes.
  • In a medium saucepan, bring the milk and cream to just below a boil over medium-high heat. Meanwhile, mix together the egg yolks, caster sugar, and vanilla in a large mixing bowl. Place the mixing bowl on top of a towel to keep it from wobbling while whisking in the hot liquid. Gently whisk 2 tablespoons of the hot milk mixture into the egg mixture. Slowly whisk in the remaining hot milk mixture 1/3 at a time, trying to prevent excess bubbles. Strain though a sieve.
  • Place 6 ramekins evenly spaced in a paper towel-lined baking dish to prevent the ramekins from sliding. Pour 6 ounces into each caramel-coated ramekin. Place on the extended middle rack of the oven. Carefully pour boiling water into the baking dish until 2/3 of the way up the sides of the ramekins. (Be careful not to get any water on the custard mixture.) Cover the baking dish with aluminum foil and very gently slide it towards the center of the rack. Bake for about 35 minutes, or until the custards are almost fully set. Remove from the oven. Use tongs to remove the ramekins from the hot water bath. Let stand at room temperature for 5 minutes, then refrigerate until well chilled.
  • To serve, dip the ramekin in very hot water for 15 to 20 seconds. Run a sharp knife around the sides of the ramekin. Invert the custards onto serving plates. The caramel will pool around the inverted custards. Serve immediately.

SALTED CARAMEL CREME BRULEE

2 cups heavy cream
1/4 teaspoon salt
2 egg yolks
2 tablespoons sugar

Steps:

  • In a saucepan, melt the sugar but do not let it burn. It should turn a deep brown. You will need to stir constantly, and may need to remove the pan from the heat occasionally to keep it from burning.
  • Once the sugar is melted, add the cream and salt and continue heating on low until all the sugar is dissolved into the cream. Make sure the cream doesn't boil.
  • Put the egg yolks in a mixing bowl and SLOWLY pour in the cream, mixing with a fork. Try not to whip any air into the mixture. Also, be sure to pour slowly or you will end up cooking the egg in the hot cream.
  • Pour evenly into 3 ramekins and place in a water bath (use a lasagna pan filled partway with water). You want the water bath to come about halfway up the ramekins.
  • Bake at 350 for anywhere from 30 to 60 minutes. The time will depend on the shape of the ramekins (wide ramekins cook more quickly than narrow ones). Custard is done when it is set but still jiggly in the center. Check after 30 minutes, and then every 5-10 minutes until done.
  • Remove ramekins from water bath and allow to cool to room temperature, uncovered. Then cover with plastic wrap and chill in the fridge at least 4 hours, and up to 2 days.
  • When ready to serve, remove from the fridge and top with a couple teaspoons of sugar. Caramelize with a blowtorch or place under the broiler for a minute or two. If using the broiler method, keep a constant watch on them to avoid burning the sugar.

3 medium tart apples, peeled into thin chunks
1 teaspoon ground cinnamon
6 tablespoons caramel ice cream topping
3 tablespoons sugar
3 tablespoons brown sugar, packed
1/2 teaspoon ground cinnamon
2 cups heavy whipping cream
5 egg yolks, BEATEN
1 tablespoon vanilla extract
3 tablespoons white sugar

Steps:

  • Place apples in a microwave safe container; cover with water.
  • Pad 9x 13 pan with wet towel.
  • Cover apples with wax paper and microwave on HIGH for 1 and half minutes; drain well. Don't wash container yet.
  • In medium saucepan, combine 3 tablespoons sugar, 3 tablespoons brown sugar, and 1/2 teaspoon cinnamon; stir in cream.
  • Heat over medium heat until bubbles form around sides of pan; stirring constantly. Do NOT let boil.
  • Meanwhile bring 4 cups water to low boil. Center oven rack. PREHEAT oven to 325 degrees. Put drained apples back into reserved container and stir in the 1 teaspoon cinnamon. Arrange apples in the bottoms of six 4 ounce ramekins or custard cups. (They will be very full.) Divide the caramel topping between ramekins. I use 1 teaspoon and small rubber spatula and sure that when I put that teaspoon in it is closer to one tablespoon. Set ramekins aside.
  • Back to custard: Remove saucepan from the heat; mix vigorously a small amount of the hot mixture into already beaten egg yolks. Temper.
  • Slowly return all to the pan; mix vigorously.
  • Stir in vanilla. Skim off bubbles.
  • Pour over caramel sauced ramekins. Again pop any bubbles.
  • Place 5 ramekins in 9X13 inch metal pan, put on oven rack, ladle hot water to pan so it comes halfway up. Careful that none of water splashes on ramekin. Add last ramekin.
  • Bake, uncovered, at 325 degrees for 30 to 45 minutes or until centers are just set (mixture will slightly jiggle but center should be quivery like gelatin when cups are gently shaken). And some dark spots occur which gets camouflaged by caramel topping later. Remove from oven-- carefully. Time varies because diameter of ramekin determines thickness.
  • Remove ramekins from water bath using tongs after 20 minutes, set on rack to cool to room temperature or 1 hour to avoid condensation.
  • Cover and refrigerate overnight, or up to three days.
  • For broiling, place ramekins on a baking sheet; let stand at room temperature of 15 minutes or freezer for 5 minutes. Put oven rack as close to broiler as possible. Preheat broiler.Sprinkle remaining sugar not Splenda (or you will have a fire) onto each custard, shake off excess. Broil until sugar is caramelized. Let set for at least 5 minutes before serving. I prefer them chilled for about 30 minutes--love the contrast in texture.
  • Or use kitchen butane torch.

140g caster sugar
3 tbsp cold water
500ml milk
3 large eggs, plus 2 egg yolks
100g caster sugar
a few drops vanilla paste or extract
2 tbsp Cointreau or Grand Marnier, optional

Steps:

  • Put the sugar in a small frying pan, preferably non-stick, and add the water. Heat slowly, stirring gently with a metal tablespoon until the sugar has dissolved. The base of the pan will no longer feel gritty when you run the spoon over it. (Step 1)
  • Increase the heat under the pan and allow the syrup to bubble. As the water is driven off, the syrup will become thicker and the bubbles on the surface will get bigger. Do not stir the syrup during this time. (Step 2)
  • Watch the syrup carefully and when it starts to turn golden at the edges, swirl the pan to ensure even colouring. Do not stir it. When the syrup has turned a rich golden caramel colour, remove from heat. (Step 3)
  • Heat oven to 160C/140C fan/gas 3. Pour the caramel into ramekins. Bring the milk to simmering point.
  • Put the eggs and yolks in a bowl with the sugar and whisk lightly together.
  • Gradually whisk in the hot milk. Strain into a clean jug and add the vanilla, and liqueur, if using. Pour carefully into the prepared ramekins.
  • Pour boiling water from the kettle into a roasting tin to come halfway up the sides of the ramekins. Bake for 15-20 mins until the custards are just set. Leave to cool, then chill for at least 4 hrs, or even overnight. The caramels can be made up to 3 days in advance.
  • To turn out each caramel, run the point of a sharp knife around the top edge of each ramekin, place a dessert plate on top and invert. Give the ramekin and plate a sharp shake and carefully remove the ramekin.

1/4 cup dark-roast coffee beans (such as French roast; about 3/4 ounce), crushed with mallet in plastic bag
1 cup sugar, divided
1/2 cup water
2 cups half and half
8 large egg yolks
1/4 teaspoon salt
8 teaspoons raw sugar*

Steps:

  • Bring 1 cup cream and coffee beans to simmer in heavy small saucepan. Remove from heat; cover and let steep at least 20 minutes and up to 1 hour.
  • Preheat oven to 325°F. Stir 2/3 cup sugar and 1/2 cup water in heavy medium saucepan over low heat until sugar dissolves. Increase heat to medium-high and bring to boil, brushing down sides of pan with wet pastry brush. Boil without stirring until syrup is deep amber, swirling pan occasionally, about 11 minutes. Remove pan from heat. Add remaining 1 cup whipping cream (mixture will bubble up). Stir over low heat until caramel is smooth. Stir in half and half. Strain coffee-infused cream into caramel cream; discard coffee beans in strainer.
  • Whisk yolks, salt, and remaining 1/3 cup sugar in large bowl to blend. Gradually whisk in cream mixture. Strain custard into large measuring cup.
  • Arrange eight 2/3- to 3/4-cup ramekins or custard cups in roasting pan. Divide custard among ramekins. Add enough warm water to roasting pan to come halfway up sides of ramekins or custard cups.
  • Bake custards until just set in center, 65 to 70 minutes. Transfer custards from water bath directly to refrigerator. Chill uncovered until cold, at least 3 hours and up to 1 day.
  • Sprinkle top of each custard with 1 teaspoon raw sugar. Using kitchen torch, melt sugar on each custard until deep amber. (Alternatively, preheat broiler. Arrange custards on small rimmed baking sheet; broil until sugar topping melts and browns, about 2 minutes.) Refrigerate custards until sugar topping hardens, at least 30 minutes and up to 1 hour (do not chill longer than 1 hour or topping will start to soften). Serve custards cold.

10 egg yolks
1 pinch salt

Steps:

  • Use 6-oz. ramekins.
  • Heat the oven to 325°F.
  • Heat the cream or cream and milk in a medium saucepan over medium heat until scalded (you'll see small bubbles on the sides of the pan).
  • Split the vanilla bean in half, if using, and scrape the seeds into the cream.
  • Meanwhile, in a medium bowl, slowly whisk the sugar and salt into the egg yolks.
  • Slowly temper the hot cream into the sugar/yolk mixture.
  • Strain the mixture through a fine sieve into a pitcher or measuring cup.
  • Stir in vanilla extract if using.
  • Arrange the ramekins in a baking dish with deep sides, pour the mixture into the ramekins, Fill the baking dish with water to come halfway up the sides of the ramekins and cover the dish with foil.
  • Bake until just set, 25 to 50 min.
  • Remember to start checking early; baking time will depend on the thickness and depth of your ramekins and baking dish.
  • Carefully remove the baking dish from the oven and let the ramekins cool in the water bath.
  • Remove, cover with plastic wrap and refrigerate at least 2 hours or up to 2 days.
  • Topping: sprinkle a light layer of sugar over each cold creme brulee just before serving.
  • Caramelize either using a propane torch by passing over the sugar or putting under a broiler.
