1 cup Butter (Unsalted, Room temperature)
1/2 cup Caramel sauce (Preferably salted caramel sauce, Can also use Dulce de Leche instead)
3-4 cups Powdered sugar

Steps:

  • In a large mixing bowl, add butter, caramel sauce and mix until fluffy.
  • Gradually, add powdered sugar (1/2 cup at a time) and mix until frosting is smooth and creamy.
  • If frosting is too thick, mix in some milk or heavy cream. If frosting is too thin, mix in more powdered sugar.
  • Cover bowl and chill in the fridge for 30 minutes to firm it up a little more and make it easier to pipe. Enjoy!

½ cup packed brown sugar
1 cup confectioners' sugar
½ teaspoon vanilla extract

Steps:

  • In a saucepan over medium heat, melt the butter, and mix in 3 tablespoons milk and brown sugar. Boil vigorously for 1 minute.
  • Remove from heat, and beat in 1/2 cup confectioners' sugar. Cool slightly, and beat in the vanilla and remaining 1/2 cup confectioners' sugar. Add more milk if the mixture is too thick.

2 lb powdered sugar
2 stick butter softened to room temperature
1 lb cream cheese, room temperature
2 tsp caramel syrup
1 c caramel ice cream topping(thick good quality)

Steps:

  • 1. Combine all of the frosting ingredients into a large bowl. Then on low speed gradually blend ingredients together till creamy.
  • 2. If mixture is too thick you can thin it with a little milk, adding 1 tablespoon at a time till it reaches the consistency you prefer.
  • 3. Frost cake or muffins as desired. Refrigerate or freeze any left overs. If making a bundt cake, you may want to cut recipe in half.
  • 4. After frosting the Banana Bread Bundt cake, I stored the remainder of the frosting in the fridge, and about a week later I frosted this double layer cake with the left over frosting. It worked out great.

This fluffy caramel frosting is simply the best. Thick and fluffy with a delicious caramel flavor and a hint of salt - it packs a punch on cakes and cupcakes.

1 cup granulated sugar
6 tablespoons unsalted butter (cut into small pieces)
1/2 cup heavy cream
1/2 teaspoon salt
1 cup unsalted butter (softened)
1/2 cup salted caramel ((you will not need all the caramel you made))
1 teaspoon vanilla extract
1/4-1/2 teaspoon salt (to taste)
1 1/2 - 2 cups powdered sugar
1-2 tablespoons cream (or milk)

Steps:

  • Add the sugar to a medium-sized, heavy bottom saucepan over medium heat.
  • Gently stir the mixture. The sugar will first form clumps. Continue stirring.
  • As you stir the mixture the clumps will eventually melt and it will turn into a dark amber colored sauce.
  • Carefully add in the chopped batter while whisking with a metal whisk.
  • Once the butter is totally melted, whisk in the creamy. Make sure to constantly whisk the mixture.
  • Remove from the heat and whisk until smooth. Stir in the vanilla extract and salt.
  • Cool fully. The sauce will continue to thicken as it cools.
  • In a large bowl, beat the butter until softened.
  • Beat in 1/2 cup fully cooled caramel sauce (you will need to measure out 1/2 cup of the caramel sauce you made - you will not need all the caramel you made), vanilla extract and salt.
  • Beat in 1 1/2 cup powdered sugar, starting with the mixer on low speed.
  • If needed beat in the rest of the sugar, if needed, for thicker, sweeter frosting. If your frosting seems a little too thick, beat in the cream 1 tablespoon at a time.
  • Decorate cakes or cupcakes using a piping bag or a knife.
  • Optionally drizzle with additional salted caramel.

3 1/2 cups sifted cake flour
2 teaspoons baking powder
1/4 teaspoon salt
1 3/4 cups granulated sugar
1 3/4 cups light brown sugar, divided
1 1/4 cups butter, softened and divided
6 eggs
1 teaspoon vanilla extract
1 cup milk
1/2 cup evaporated milk
1/4 cup light brown sugar
10 tablespoons butter, divided
1/3 cup heavy whipping cream
8 ounces cream cheese, softened
1/2 teaspoon vanilla extract
1 dash salt
1 3/4 cups powdered sugar
1/2 cup sugar
1/4 cup water
1/2 cup pecans, chopped

Steps:

  • FOR THE CAKE:.
  • Preheat oven to 350°. Grease 2 (9-inch) round cake pans; line with lightly greased parchment or wax paper.
  • Combine flour, baking powder, and salt in a bowl; set aside. Place 1 3/4 cups granulated sugar, 1/4 cup light brown sugar, and 1 cup butter in a large bowl; beat with a mixer at medium speed 5 minutes or until well blended. Add eggs, 1 at a time, beating well after each addition. Stir in vanilla. Add flour mixture and 1 cup milk alternately to butter mixture, beginning and ending with flour mixture and beating at low speed after each addition. Pour into prepared pans; sharply tap pans once on counter to remove air bubbles. Bake at 350° for 35 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire rack 10 minutes; remove from pans, and cool completely on wire rack. Place 1 layer on a cake plate.

Cook (without stirring) until a candy thermometer registers 238°. Transfer to a heat-resistant bowl, and beat 3 minutes or until thickened and easy to spread. Quickly spread filling over cake layer on plate. Cover loosely with plastic wrap; chill 15 minutes or until set.
  • Spread a thin layer of Caramel Cream Cheese Frosting over filling. Top with second layer. Frost cake. Chill 20 minutes or until frosting sets, then cover and chill 4 hours or overnight. Let stand 10 minutes at room temperature before serving. Garnish, if desired.

This moist and flavorful Toffee Pecan Caramel Cake has such a wonderful combination of flavors!

Number Of Ingredients 20

1 1/2 sticks (170g) unsalted butter, softened
3 large eggs, room temperature (to warm quickly - put into a bowl with very warm water for 10 minutes.)
1 cup (200g) white sugar
1 cup (217g) light brown sugar (packed into measuring cup)
3 cups (342g) cake flour, (if you do not have a scale, spoon into a measuring cup and level off with back of a knife) See NOTE below for cake flour substitute
1 Tablespoon (12g) baking powder
1/2 teaspoon (3g) salt
1 cup (242g) sour cream
2 teaspoons (8g) vanilla extract
1/2 cup (121g) whole milk ( we used whole milk)
1/4 cup (54g) vegetable oil (canola oil)
1/2 cup (72g) toffee bits ( we used Heath Bits O' Brickle toffee bits)
1/2 cup (49g) chopped pecans
2 sticks (226g) unsalted butter, softened
1 (8oz) (226g) package full fat cream cheese (Light or reduced fat cream cheese will be too soft for the recipe)
1/2 teaspoon (3g) salt
2 teaspoons (8g) vanilla extract
6 cups (690g) powdered sugar (1/2 cup more if needed)
3 Tablespoons (42g) caramel sauce ( we used Smucker's Caramel Topping)
Optional: Additional crushed pecans and toffee bits for border, and whole pecans for accents on top.

Steps:

  • For the Cake Layers Preheat oven to 350 degrees, if using dark colored pans reduce heat to 325 degrees. Grease and flour three 8x2 inch round pans. In a separate bowl combine the cake flour, baking powder and salt. Whisk at least 30 seconds to blend. Set aside. In another bowl combine the sour cream, vanilla, oil and milk. Stir and set aside. In the bowl of your mixer, add the butter and beat on low to medium speed until smooth. Slowly add the white and brown sugar beating on MEDIUM speed until the mixture is lighter in color and fluffy, approximately 3 to 5 minutes ( a bit longer if using a hand mixer). Add the eggs one at a time, mixing after each egg until the yellow of the yolk is blended in. Add the dry ingredients alternately with the wet ingredients, beginning and ending with the dry ingredients. Scraping the bowl at least twice. Once the batter is mixed, using a spatula fold in the toffee bits and the chopped pecans. The cake batter is thick, this will help to keep the nuts and toffee bits from sinking to the bottom of the pan. Pour batter into 3 prepared cake pans and bake for 22 to 25 minutes. The cakes are done when a toothpick inserted into the center pulls out clean or with just a few crumbs attached. Let the cakes cool 5 to 10 minutes then turn out. Makes 8 cups of batter Works well for cupcakes - bake cupcakes at 350 degrees for 18 to 20 minutes For the Caramel Cream Cheese FrostingIn the bowl of your mixer, add the softened butter and cream cheese, mix until smooth. Do not mix above medium speed. Slowly add the powdered sugar along with the caramel topping, salt and vanilla. Mix until the mixture is creamy and smooth. Don't over mix or it may become too soft. If it does become too soft, refrigerate for 10 minutes or so to firm it up to a consistency you like. If you plan to do any piping, you may need to chill the piping bag occasionally, as warm hands soften the frosting. NOTE: Substitution for cake flour: For each cup of flour in the recipe, measure out 1 cup all purpose flour (plain in the UK) remove 2 Tablespoons of the all purpose flour and replace with 2 Tablespoons cornstarch (cornflour in the UK). This recipe has 3 cups of flour so measure 3 cups of all purpose flour, remove 6 Tablespoons and replace with 6 Tablespoons cornstarch. Whisk to blend. TO ASSEMBLE THE CAKE Place the first cake layer onto your cake base or pedestal. Spread a thin layer of caramel. Follow with the Caramel Cream Cheese Frosting. Add the other layer and repeat. Top with the last layer and frost the cake as desired . *We used additional crushed pecans mixed with toffee bits to press around the base of the cake. We also piped a spiral of caramel on top using a disposable piping bag with the tip snipped away. We used a french piping tip for the decorative stars around the top, and used pecan halves for additional decoration.

Begin adding the confectioner's sugar 1 cup at a time, scraping down sides of mixing bowl often to get everything incorporated. Make sure to sift confectioner's sugar before adding to avoid any clumps. After adding all sugar, whisk on high speed for 2 to 3 minutes to get frosting very fluffy.
