2-2/3 cups sweetened shredded coconut, chopped
2/3 cup confectioners' sugar
1/2 cup sweetened condensed milk
1/4 cup finely chopped almonds, toasted
2 tablespoons butter, softened
1/2 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening
Colored jimmies or coarse sugar, optional

Steps:

  • In a small bowl, combine the coconut, confectioners' sugar, milk, almonds, butter and vanilla. Cover and refrigerate for at least 2 hours. , Roll into 1-in. balls; place on waxed paper-lined pans. Refrigerate for at least 1 hour. , In a microwave, melt chocolate chips and shortening; stir until smooth. Dip balls in chocolate; allow excess to drip off. Return to waxed paper-lined pans. Sprinkle with jimmies or coarse sugar if desired. Refrigerate until firm.

Sugar substitute equivalent to 1/3 cup sugar
1 tablespoon sugar
1/2 teaspoon vanilla extract
1 cup sweetened shredded coconut
1 ounce unsweetened chocolate, grated

Steps:

1 teaspoon butter
24 caramels
3/4 cup plus 2 tablespoons sweetened shredded coconut, divided
1/2 cup white baking chips
1/2 cup salted peanuts

Steps:

  • Line an 8x4-in. loaf pan with foil and grease the foil with butter; set aside. , In a microwave-safe bowl, combine the caramels, 3/4 cup coconut, baking chips and peanuts. Microwave on high, uncovered, for 1 minute; stir. Cook, uncovered, 30-60 seconds longer or until caramels are melted; stir to combine. Press into prepared pan. Sprinkle with remaining coconut. Cool. , Using foil, lift candy out of pan. Discard foil; cut candy into 1-in. squares.

1 tablespoon butter
3 cups sweetened shredded coconut, divided
1-1/2 cups coarsely chopped salted roasted almonds, divided
3 cups sugar
1 can (13.66 ounces) coconut milk
1-1/2 cups light corn syrup
3/4 cup butter, cubed
1/3 cup heavy whipping cream
3 teaspoons vanilla extract
1 teaspoon ground ginger
1/2 teaspoon salt

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 1 tablespoon butter. Layer with 1 cup coconut and 3/4 cup almonds; set aside., In a Dutch oven, combine sugar, coconut milk, corn syrup, cubed butter and cream. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage), about 40 minutes., Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook and stir until thermometer reads 244° (firm-ball stage), about 5 minutes longer., Remove from heat; stir in 1 cup coconut, vanilla, ginger, salt and remaining almonds. Immediately pour into prepared pan (do not scrape saucepan). Sprinkle with remaining coconut. Let stand until firm, about 5 hours or overnight., Using foil, lift candy out of pan; remove foil. Using a buttered knife, cut caramel into 1-in. squares. Wrap individually in waxed paper; twist ends.

This is a dessert I came to love while living in Argentina. These delicious no-bake cookies will have you hooked in no time!

1 c instant oats
4-5 Tbsp instant cocoa mix (such as nesquick)
4 Tbsp dulce de leche
1 Tbsp milk
1/4 c butter, melted
1 c cookie crumbs (i use animal crackers or vanilla wafers)
for rolling: grated coconut or chopped nuts

Steps:

  • 1. Mix the oats, butter, cocoa, dulce, milk, and crumbs in a medium bowl. Refrigerate for 5-10 mins. Form small balls and roll them in the coconut or chopped nuts. Refrigerate until ready to serve. Enjoy!
  • 2. *Prepare ahead: Easy Dulce de Leche: Boil an unopened can (or as many cans as you'd like) of sweetened condensed milk, wrapper removed, in a covered pot for two+ hours. Continue adding water periodically to keep the water level in the pot at just below the top of the can. Remove cans from water and allow them to cool. Label for storage and use when desired. Refrigerate the dulce after opening. (You can also purchase dulce de leche at a latin market, or use caramel ice cream topping.)

CARAMEL AND CHOCOLATE BON BON SANDWICHES

1 gallon good quality vanilla ice cream, or desired flavor
2 cups toasted and sweetened coconut flakes
1 cup caramel sauce, for drizzling
12 chocolate chip cookies

Steps:

  • Special equipment: 2-ounce ice cream scooper
  • Place a large plate or small platter in the freezer for at least 30 minutes.
  • Set up an assembly line for the rolling and coating of the ice cream balls in the following order: ice cream, bowl of coconut flakes and the caramel sauce. Remove the ice cream from the freezer and allow to soften, about 5 minutes. Remove the cold plate from the freezer and place at the end of the assembly line.
  • Using a 2-ounce ice cream scooper, roll 1 ball of ice cream and place into the coconut flakes. From there, place it onto the cold plate. Drizzle with the caramel sauce and repeat. You should be able to make about 6 large bonbons.
  • Place the bonbons into the freezer to set for at least 15 minutes. Then, remove the bonbons from the freezer and sandwich each one between 2 of the chocolate chip cookies.

Making your own candy may seem daunting, but time and attention are all you need. This recipe calls for two sugars: granulated, which provides the base for your caramel, and an inverted sugar, corn syrup, which stabilizes and keeps the caramel from crystalizing. The line between soft-chewy and hard candy is a delicate one, so a candy thermometer is recommended for precision. Ginger and cardamom will add a nice zing, but lean into other warm spices, such as cinnamon, black pepper or chili powder, if that's what you have on hand. A final coat of toasted, finely shredded coconut lends an almost buttery crunch, and prevents the pieces from sticking. Wrap up individually if you have the time: These are made for sharing and can be frozen for up to a month.

Coconut oil or nonstick cooking spray, for greasing the pan
1 (13-ounce/390-gram) can coconut cream or full-fat coconut milk
2 cups/400 grams granulated sugar
1/4 cup/60 milliliters corn syrup
1/2 teaspoon fine sea salt
1 teaspoon ground ginger
1/4 teaspoon ground cardamom

Steps:

  • Heat oven to 350 degrees. Spread the coconut flakes in an even layer on a rimmed baking sheet, and toast until light golden brown, 5 to 8 minutes.
  • Brush an 8-inch baking dish generously with coconut oil or coat with cooking spray. Sprinkle about 3 to 4 tablespoons of toasted coconut in an even layer on the bottom of the pan, and set aside.
  • In a medium heavy saucepan, combine the coconut cream, sugar, corn syrup and sea salt. Bring to a boil over medium heat, stirring to dissolve the sugar. Boil, stirring frequently especially toward the end, until a candy thermometer reaches 250 degrees and caramel is a light golden brown and thickened, about 20 to 30 minutes. Remove from heat and stir in the ginger and cardamom.
  • Pour the caramel into the prepared pan. Once the caramel stops bubbling and the surface forms a thin skin, about 3 minutes, sprinkle another 4 tablespoons toasted coconut across the surface. Allow to cool at room temperature and set completely, about 2 hours.
  • Run a spatula around the sides of the baking dish, loosen and lift the caramel, and move onto a board or clean surface.
  • Slice the caramel into 8 (1-inch-wide) strips, then across into 1/2-inch pieces, so you have about 72 caramels. Roll the sides of each piece in more toasted coconut. Wrap as individual sweets using 4- to 5-inch squares of parchment, wax paper, or cellophane, or use store-bought candy wrappers, twisting the ends to seal. Store at room temperature in a cool dry place. Caramels will keep stored at room temp for up to 7 days or frozen after wrapping for up to 1 month.

I made these for Christmas and they were everyones FAVORITE! The taste like Mounds Bars...BUT BETTER! Even if you don't like coconut you HAVE to try these! It makes it easier to form them into balls if you refrigerate the dough for awhile first. Oh, and I like to store these in the refrigerator.

1/4 cup butter
1 lb confectioners' sugar
1 cup sweetened condensed milk
2 cups flaked coconut
9 (1 ounce) semi-sweet chocolate baking squares
2 tablespoons shortening

Steps:

  • In a medium bowl, mix together butter, confectioners' sugar, and sweetened condensed milk.
  • Mix in the coconut.
  • Roll dough into 1 inch balls, and refrigerate until set, about 1 hour.
  • Melt chocolate and shortening over a double boiler, stirring occasionally until smooth.
  • Remove from heat when melted, and stir to make sure the shortening is fully incorporated.
  • Use toothpicks to hold the balls while dipping in the chocolate.
  • Set on wax paper to dry.

  • In a medium non-stick saucepan, mix the condensed milk and butter together, and cook over medium-low heat (large burner) or medium heat (small burner), stirring constantly, until the mixture has reduced, thickened, and begins to show the bottom of the pan when scraped with a wood spoon (about 5 minutes). The mixture should be thick enough to reveal the bottom of the pan for a couple of seconds before the mixture levels out again.
  • Remove pan from heat and stir in both the vanilla and the coconut flakes until obtaining an homogeneous mixture. Place mixture onto a greased plate and let cool to room temperature before starting to roll them into balls with either ungreased or only very lightly greased hands (mixture is so thick that it barely stick to hands). Use a 1/2 Tablespoon as measurement.
  • Meanwhile, in a separate medium nonstick pan, stir in the sugar, water, and vinegar together until combined. Bring to a boil over medium heat, without stirring at all (this is to prevent caramel from forming crystals), until sugar has dissolved completely and takes on a light caramel/golden honey color (It is important not to let the caramel become dark, or else the glass bonbons can turn out bitter). Beginning 5-7 minutes from when mixture first starts to boil, watch pan constantly in order to avoid caramel quickly turning dark or even burning.
  • Reduce heat to low, tilt pan with one hand and then coat each of the coconut balls in caramel. You can either stick a long wood skewer or toothpick into each ball, rotating in order to drip off excess caramel, or you can use a fork to help you coat the balls. Please, be careful to not burn yourself with the hot caramel.
