Steps:
- In a large bowl, combine the first 6 ingredients. In a small bowl, whisk the oil, garlic, salt and pepper; drizzle over chicken mixture and toss to coat. Refrigerate until serving., Cut baguettes into 1/2-in. slices. Place on ungreased baking sheets. Bake at 425° for 2-4 minutes or until lightly browned. Cut garlic in half lengthwise; rub over bread. Brush with oil and sprinkle with salt. Bake 2-3 minutes longer or until crisp. Serve crostini with salad.

CAPRESE-STYLE BULGUR WHEAT SALAD WITH CHICKEN
Bulgur wheat adds a good amount of protein and also tends to fill you up faster than pasta while adding a nice, nutty bite. I love this for its simplicity and how tasty it is. It also lasts for a couple of days in the refrigerator which makes it perfect for a quick lunch.

Steps:
- Put bulgur wheat in a medium size bowl and pour heated chicken broth over it. Mix well and allow to sit at room temperature for 30 - 45 minutes. This will soften the wheat but still leave it al dente, or with a bite.
- When bulgur wheat has reached desired tenderness, add the red wine vinegar, garlic, salt, dijon mustard, olive oil and pepper and mix thoroughly. Taste mixture for seasoning and adjust slightly if needed.
- Add the tomatoes, basil, chicken and mozzarella and combine thoroughly. Taste for seasoning once again and adjust as needed. I find that I might need a touch more acid and salt at this point, depending upon how acidic your tomatoes were and how your cooked chicken was seasoned.
- Allow to sit for 10 minutes at room temperature to let the flavors to combine. Serve on bed of chopped romaine lettuce dressed with a bit of extra virgin olive oil and vinegar, if desired.

HARISSA-SPICED CHICKEN WITH BULGUR WHEAT

- Rub 1 tbsp harissa paste over the chicken. Heat the oil in a deep non-stick pan, then fry the chicken for about 3 mins on each side, until just golden (it won't be cooked through at this stage). Remove and set aside.
- Add the onions, then gently fry for 5 mins until soft. Tip in the pine nuts and continue cooking for another few mins until toasted. Tip in the apricots, bulgur and stock, then season and cover. Cook for about 10 mins until the stock is almost absorbed.
- Return the chicken to the pan, re-cover and cook for 5 mins on a low heat until the liquid has been absorbed and the chicken is cooked through. Fluff up the bulgur with a fork and scatter with the coriander to serve.

I am always looking for ways to jazz up the boring burger and came up with this after having a delicious caprese salad. Be sure to use fresh basil and the marinated tomatoes are a must!

Steps:
- Whisk the balsamic vinegar, oil, salt, and pepper in a small bowl. Pour over tomato slices to marinate.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Mix ground beef, tomato paste, basil, Parmesan cheese, garlic, and 1/4 teaspoon pepper in a large bowl. Form beef mixture into 4 equal patties.
- Cook on the preheated grill until the burgers are cooked to your desired degree of doneness, about 5 minutes per side for well done. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C). Top each burger with mozzarella cheese; allow to melt. Serve on hamburger buns with marinated tomato slices.
