STUFFED ZUCCHINI BOATS
Fresh zucchini stuffed with seasoned beef, onion, mushroom, red pepper and cheese.

- Preheat the oven to 375°.
- Trim the ends off zucchini. Cut zucchini in half lengthwise. Scoop out the center, leaving 1/2-in around the edges. Reserve the insides for another dish, or chop it into small pieces to add to the filling.
- Place the zucchini boats in a greased 9" x 13" baking dish. Bake them in the oven for 5 minutes.
- Meanwhile, in a skillet, cook the beef, zucchini pulp, onion, mushrooms and peppers over medium heat until the meat is browned. Remove from the heat. Add 1/2 cup cheese, garlic powder, salt and pepper. Stir to combine.
- Remove the zucchini from the oven. Spoon the filling into the zucchini shells, pressing it down to compact. Sprinkle with the remaining cheese. Bake, uncovered, on 375°F for 10-15 minutes.

Steps:
- Cut zucchini lengthwise in halves. Scoop out pulp, leaving 1/4 inch wall; chop pulp and reserve. Place zucchini shells cut sides down in dish. Cover loosely and microwave on high (100%) until crisp-tender (about 5-6 minutes.) Cover and microwave reserved pulp, the onions, and butter in a 1 1/2 quart casserole or bowl on high until tender (6-7 minutes.) Stir in cheese, tomato, salt and pepper.
- Turn zucchini shell cut sides up; spoon mixture into shells. Cover loosely and microwave on high until hot (2-3 minutes.)
- Makes 8 Servings. 3 net grams of carbohydrate per serving.

Steps:
- Cut zukes in half lengthwise and bake at 400 for 20 minutes.
- Scoop out center of baked zucchini chop and reserve.
- Saute onion, beef, garlic, tomato, tomato sauce.
- Add the scooped-out zucchini to beef mixture and saute until all ingredients are tender.
- Spoon beef mixture into hollowed out zucchini boats.
- Top with cheese.
- Bake at 400 for 30 minutes.

- Preheat the oven to 425 degrees F. Line a large baking sheet with parchment paper. Place baking rack on top.
- Wash the zucchini and trim off ends. Cut the zucchini in half lengthwise. Using a spoon, scrap out the seeds and flesh to form a pocket for the filling, leaving 1/4 to 1/2 inch flesh remaining. Dry the skin side of each zucchini with paper towels and brush with small amount of olive oil.
- Heat 2 tablespoons olive oil in large skillet over medium heat for 1 minute. Add onions and sauté 3-5 minutes. Add garlic and continue cooking 1 minute.
- Increase heat to medium-high. Add ground beef and cook until browned (8-10 minutes). Drain off excess fat. Reduce heat to medium; stir in marinara sauce and seasonings. Simmer until heated throughout, about 3-5 minutes.
