Stuffed Zucchini Boats image

Fresh zucchini stuffed with seasoned beef, onion, mushroom, red pepper and cheese.

4 medium zucchini (about 8 inches long)
1/2 pound ground beef
1/2 small red onion (chopped)
6 button mushrooms (chopped)
1/4 cup red bell pepper (chopped)
1 cup shredded cheddar cheese (divided)
1/4 teaspoon garlic powder
Salt and pepper to taste

Steps:

  • Preheat the oven to 375°.
  • Trim the ends off zucchini. Cut zucchini in half lengthwise. Scoop out the center, leaving 1/2-in around the edges. Reserve the insides for another dish, or chop it into small pieces to add to the filling.
  • Place the zucchini boats in a greased 9" x 13" baking dish. Bake them in the oven for 5 minutes.
  • Meanwhile, in a skillet, cook the beef, zucchini pulp, onion, mushrooms and peppers over medium heat until the meat is browned. Remove from the heat. Add 1/2 cup cheese, garlic powder, salt and pepper. Stir to combine.
  • Remove the zucchini from the oven. Spoon the filling into the zucchini shells, pressing it down to compact. Sprinkle with the remaining cheese. Bake, uncovered, on 375°F for 10-15 minutes.

2 tablespoons butter
1 tomatoes, chopped
3 green onions, finely sliced
pepper
1/4 cup parmesan cheese, grated
salt

Steps:

  • Cut zucchini lengthwise in halves. Scoop out pulp, leaving 1/4 inch wall; chop pulp and reserve. Place zucchini shells cut sides down in dish. Cover loosely and microwave on high (100%) until crisp-tender (about 5-6 minutes.) Cover and microwave reserved pulp, the onions, and butter in a 1 1/2 quart casserole or bowl on high until tender (6-7 minutes.) Stir in cheese, tomato, salt and pepper.
  • Turn zucchini shell cut sides up; spoon mixture into shells. Cover loosely and microwave on high until hot (2-3 minutes.)
  • Makes 8 Servings. 3 net grams of carbohydrate per serving.

1 lb cooked lean ground beef, 17% fat
1/2 cup onion
1/2 cup canned tomato sauce
1 medium tomatoes
1 teaspoon garlic salt
1 ounce kraft pizza shredded low-moisture mozzarella cheddar blend cheese

Steps:

  • Cut zukes in half lengthwise and bake at 400 for 20 minutes.
  • Scoop out center of baked zucchini chop and reserve.
  • Saute onion, beef, garlic, tomato, tomato sauce.
  • Add the scooped-out zucchini to beef mixture and saute until all ingredients are tender.
  • Spoon beef mixture into hollowed out zucchini boats.
  • Top with cheese.
  • Bake at 400 for 30 minutes.

  • Heat 2 tablespoons olive oil in large skillet over medium heat for 1 minute. Add onions and sauté 3-5 minutes. Add garlic and continue cooking 1 minute.
