This recipe for homemade breakfast sausage is low in calories, made with a combo of pork and turkey, they're the only kind of breakfast sausage you'll need!

1 lb ground pork
1 lb ground turkey
1/4 cup maple syrup (use the darkest REAL maple syrup you can find)
3 cloves garlic, minced
1 Tbsp fresh sage (chopped)
3/4 tsp dried thyme ((or 1 Tbsp fresh thyme - chopped))
1 1/2 tsp kosher salt
3/4 tsp black pepper
1/4 tsp paprika

Steps:

  • Line a rimmed baking sheet with wax paper sprayed lightly with cooking spray, set aside.
  • Add all ingredients to a large mixing bowl and use hands to mix until just combined.
  • Spread mixture in an even layer in the prepared baking sheet, about 1/2" - 3/4" thick (this can be adjusted if you prefer a thicker patty). Spray the rim of a 3 1/2" biscuit cutter (or large-mouthed drinking glass) and cut out patties.
  • If patties are having a hard time staying together, place on wax paper in the freezer for 5-10 minutes before cooking.
  • Heat vegetable oil (about 1-2 Tbsp) in a large skillet over MED to MED-HIGH heat. Add patties to pan, making sure they aren't touching (you may have to cook in batches), and cook 2-3 minutes per side, until golden brown and cooked through to a temperature of 165 degrees F.
  • Repeat with remaining patties.

3 teaspoons baking powder
1 tablespoon sugar
1 teaspoon salt
1/4 teaspoon pepper, optional

1 tablespoon shortening
3/4 cup 2% milk
SAUSAGE GRAVY:
1 pound bulk maple pork sausage
1/4 cup all-purpose flour
3 cups 2% milk
2 tablespoons maple syrup
1/2 teaspoon salt
1/4 teaspoon ground sage
1/4 teaspoon coarsely ground pepper

Steps:

  • Preheat oven to 400°. In a large bowl, whisk flour, baking powder, sugar, salt and, if desired, pepper. Cut in butter and shortening until mixture resembles coarse crumbs. Add milk; stir just until moistened. Turn onto a lightly floured surface; knead gently 8-10 times., Pat or roll dough to 1-in. thickness; cut with a floured 2-in. biscuit cutter. Place 1 in. apart on an ungreased baking sheet. Bake until golden brown, 15-17 minutes., Meanwhile, in a large skillet, cook sausage over medium heat until no longer pink, 6-8 minutes, breaking into crumbles. Stir in flour until blended; gradually stir in milk. Bring to a boil, stirring constantly; cook and stir until sauce is thickened, 4-6 minutes. Stir in remaining ingredients. Serve with warm biscuits.

This classic recipe will come together in the time it takes to make a frittata or a stack of pancakes for brunch. You could also try frying the patties in a cast-iron pan alongside eggs in a hole. As the maple-and-sage-tinged fat renders out of the sausage, the bread will thirstily absorb it. You might even want to drizzle a tiny bit more syrup over the whole thing as you sit down to eat, so that each bite of sausage, bread and runny yolk has the perfect blend of savory and sweet. Be sure to use ground pork with enough fat or you'll end up with dry, flavorless hockey pucks. Twenty percent by weight is a good ratio, though 25 doesn't hurt. If the ground pork available to you is too lean, ask the butcher to replace two ounces or so of the lean meat with ground pork belly or bacon. For variations on the sausage, check out these recipes for Italian fennel sausage and Nem Nuong, Vietnamese sausage.

1 teaspoon dried sage
2 teaspoons Diamond Crystal kosher salt or 1 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 large pinch ground nutmeg
1 large pinch ground coriander
1/4 teaspoon cayenne pepper
1 pound ground pork (20 to 25 percent fat by weight)
1 tablespoon plus 1/2 teaspoon maple syrup
Extra-virgin olive oil

Steps:

  • Line a baking sheet with parchment paper; set aside.
  • Finely crumble the sage into a large bowl. Add salt, black pepper, nutmeg, coriander and cayenne to the sage, and stir to combine. Add pork and syrup to the spice mixture.
  • Using your hands, mix thoroughly for 1 full minute, until the pork begins to appear tacky and sticks to the palm of your hand.
  • Heat a cast-iron pan over medium heat. Use a heaping tablespoon of pork mixture to make a small, thin sausage patty. Add a teaspoon or so of olive oil to the pan. and cook the patty for 2 to 3 minutes on each side, or until cooked through. Taste, and if needed, add salt or any other seasonings to the uncooked sausage mixture, and mix to combine.
  • Divide and form the remaining sausage into 8 2 1/2-inch patties, placing them on the prepared baking sheet as you go. Cover, and refrigerate for 30 minutes to allow the flavors to come together. (Patties can be made ahead and covered and refrigerated or frozen at this point until ready to use.)
  • To cook, wipe out cast-iron pan, and return it to medium heat. Add 1 tablespoon olive oil. When it shimmers, add patties in a single layer, leaving space between them. Cook 3 to 4 minutes per side, or until browned on the surface and just cooked through.
  • Drain sausages on paper towels. Serve hot.

4 lbs lean pork (I buy whole loins)
1 lb pork fat (trimmings)
5 1/2 teaspoons salt
2 tablespoons parsley, dried
4 teaspoons granulated garlic
2 teaspoons sage, ground
2 teaspoons black pepper, ground
2 teaspoons rosemary, ground
1 teaspoon marjoram, ground
1 tablespoon paprika (I use smoked)
1/2 teaspoon ginger, ground
1/2 teaspoon celery seed, whole
1/3 cup white wine or 1/3 cup apple juice
3 tablespoons pure maple syrup
3 tablespoons applesauce
2 tablespoons lemon juice

Steps:

  • Cut pork into 2 inch pieces and the fat into 1 inch cubes.
  • Grind through a 1/4 inch grinding plate.
  • You can use a food processor-pulse in SMALL batches.
  • In a small mixing bowl combine the wine, maple syrup, lemon juice and salt/spices.
  • Whisk well.
  • In a large mixing bowl combine the meat and wine/spice mixture.
  • Mix well to combine.
  • Cover bowl and place in refrigerator for 2 hours, up to 24 hours.
  • The longer the better.
  • Package in 1 pound amounts and freeze.
