COFFEE CHOCOLATE CHUNK COOKIES

Coffee Chocolate Chunk Cookies image

Efficiency expert Rachael Ray saves time without skimping on flavor. The box-mix batter gets mixed in a single bowl and dressed up with extra chocolate and nuts. Ground coffee beans make the cookies pleasantly crunchy too.

Provided by Rachael Ray : Food Network

Categories     dessert

Time 21m

Yield about 34 medium cookies

Number Of Ingredients 8

One package dry chocolate chip cookie mix (1 pound 1 1/2 ounces), found in the baking aisle
1 cup bittersweet chocolate chunks
4 ounces walnut pieces (about 1 1/4 cups)
7 tablespoons softened unsalted butter
4 tablespoons coffee liqueur, such as Kahlua
3 tablespoons instant espresso or instant coffee crystals
1 tablespoon ground coffee beans
1 large egg, beaten

Steps:

  • Preheat the oven to 375 degrees F. Place the racks in the center of the oven.
  • In a mixing bowl, make a well in the center of the chocolate chip cookie mix. Add the chocolate chunks, walnuts, softened butter, Kahlua, instant espresso, ground coffee and egg. Mix well to combine all the ingredients into the cookie dough. Scoop with a small scoop or by heaping tablespoons and drop the dough 2 inches apart on ungreased, nonstick cookie sheets or sheets lined with parchment paper. Chill for 5 to 10 minutes.
  • Bake the cookies in batches, until set and lightly browned but not crisp, 9 to 11 minutes. Remove from the oven and leave on the cookie sheets for about 5 minutes before transferring to a wire rack to cool before serving.

2 cups all-purpose flour
½ cup Dutch process cocoa powder
2 teaspoons baking powder
1 teaspoon salt
10 tablespoons unsalted butter
1 ½ cups packed brown sugar
½ cup white sugar

Using a wooden spoon, stir in the dry ingredients just until everything comes together. Cover, and let stand for 35 minutes so the chocolate can set up.
  • Preheat the oven to 350 degrees F (175 degrees C). Line two cookie sheets with parchment paper. Roll dough into walnut sized balls, or drop by rounded tablespoonfuls onto the prepared cookie sheets, leaving 2 inches between cookies.
  • Bake for 8 to 10 minutes in the preheated oven. Cookies will be set, but the centers will still be very soft because of the chocolate. Allow cookies to cool on the baking sheets for 10 minutes before transferring to wire racks to cool completely.

CAPPUCCINO COOKIES

Cappuccino Cookies image

These yummy cooffee treats come from a German cookbook, called "Baked Goods" and really are something special for your cookie tray. You can choose to make other shapes (I tried crescents), but since the cookies spread a lot, I find the balls work best. Please note: Prep time does not include 1 hour chilling time

Provided by Lalaloula

Categories     Dessert

Time 30m

Yield 30 cookies

Number Of Ingredients 7

10 g instant cappuccino mix (or ordinary coffee powder)
25 ml hot water
150 g flour
50 g ground almonds
50 g sugar (1/4 cup)
100 g butter, in medium pieces
25 g chocolate (milk, dark or white)

Steps:

  • Dissolve cappuccino powder in hot water. Let cool slightly.
  • In a big bowl mix flour, almonds and sugar. Add butter and cappuccino.
  • Knead into a dough (maybe using a kitchen aid as not to warm the dough too much).
  • Chill for 1 hour.
  • Form dough into small balls (size of a walnut) and place on a paper-lined baking sheet. Do not flatten balls.
  • Bake in the preheated oven at 180°C/350°F for 15 minutes or until slightly coloured.
  • Melt the chocolate using your favourite method (hot water bath or microwave) and drizzle it over the baked cookie balls using a teaspoon.
  • Let dry and enjoy! :).

  • Using a mixer fitted with paddle attachment, cream butter and sugars together until very light, about 5 minutes. Add eggs, one at a time, mixing well after each addition. Stir in the vanilla and coffee grounds. With speed on low, add the dry ingredients and mix until just combined, 5 to 10 seconds. Mix in the chocolate chips and Cappuccino Crunch. Cover the dough with something airtight and refrigerate at least overnight (I bake a tray or so a day, until the dough is gone, thereby ensuring fresh cooking each time).
  • When ready to bake, preheat the oven to 350 F. Line a baking sheet with parchment paper or a silicone mat.
  • Using a cookie dough scoop or an ice cream scoop of medium size, scoop the cookies onto the prepared tray, 6 per sheet. I was aiming for 2 tablespoons of dough per cookie. Sprinkle the cookies with vanilla-espresso sugar-salt and bake until golden brown but still a little soft, about 11-13 minutes. Transfer the baking sheet to a wire rack for 10 minutes, then remove the cookies individually to a cooling rack.
