1 cup chopped onions
3 tablespoons distilled white vinegar
1 (15 ounce) can cut green beans, drained

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
  • Saute onions in bacon grease; add vinegar, and saute until onions are tender. Add green beans and cook until heated through. Crumble the bacon on top.

  • Place beans in a large saucepan and cover with water; bring to a boil. Cook, uncovered, for 8-10 minutes or until crisp-tender. Drain well., Remove from the heat. Add the butter, parsley, lemon juice, salt and pepper; toss to coat.

This is a recipe handed down to me by my mom. My husband and kids get excited when they see I have bought green beans, because they know they are in for a treat. As a lower fat option I omit the bacon, and cook the onions in a dash of canola oil. I save the bacon for when I serve it to company.

2 tablespoons tarragon vinegar
4 -6 slices bacon (optional)
4 cups cooked green beans

Steps:

  • Cook the green beans until tender.
  • Fry the bacon (if using) until crisp.
  • Drain and crumble.
  • Cook the onions in about 2 Tablespoons of the bacon fat, just until they are tender.
  • Toss the hot green beans, onion and bacon together.
  • Drizzle with the tarragon vinegar.

2 tablespoons bacon grease (can substitute 2 tablespoons butter)
2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. You can add more chicken broth during the cooking process, but don't be afraid to let it all cook away so the onions and peppers can start to caramelize.
