DIJON-BAKED CHICKEN WITH RICE AND BROCCOLI
If you forget to marinate this overnight, don't worry; it's still great if you cook the chicken in the sauce as soon as you make it. It's just better when it marinates.

- The night before: Unravel thighs to flatten and scrunch together in a large shallow oven-safe pan. Combine the following in a small mixing bowl in this order: spices, honey, Dijon mustard, soy sauce, and hot chili sauce. Stir. Pour evenly over chicken. Flip the chicken around with a fork until each piece is well coated. End by making sure the rough side of the thigh is down. Cover with plastic wrap and refrigerate overnight.
- The next day: Preheat oven to 350 degrees F.
- Combine rice and water in a larger oven-safe pot. Stir. Cover and place in preheated oven.
- Turn chicken over with a fork. Place in preheated oven, beside rice. Set timer for 50 minutes. About halfway through the cooking time for chicken, I like to flip the chicken over again. When the timer rings for chicken, turn off heat but leave it in the oven.
- Rinse broccoli in colander. Place in a microwave-safe pot or casserole dish with lid. Cover, then microwave at high for 5 minutes. When timer rings, add seasoning mix to broccoli.
CHICKEN DIJON
This one-skillet Chicken Dijon includes a zesty, creamy sauce with sweet sliced onions, fresh herbs, and a touch of honey.

- Pat chicken dry and season on all sides with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Stir in butter.
- When the butter is foamy, add the chicken cutlets to the pan. Cook until the chicken is browned on both sides and the meat reaches an internal temperature of 165° F, about 3-4 minutes per side. Do not overcrowd the pan, so brown the chicken in batches if necessary.
- Remove the chicken to a plate and set aside while you make the sauce.
- Add the sliced onion to the skillet and cook over medium-high heat until translucent, about 5 minutes. Add the garlic, parsley, thyme and rosemary and cook, stirring constantly, for 30 seconds.
- Add the chicken broth to the skillet; use a wooden spoon to scrape up any browned bits from the bottom of the pan. Simmer for 3-4 minutes, so that the liquid reduces by about half.
- Reduce heat to low, whisk in the cream, Dijon and honey. Cook for a few more minutes to let the sauce thicken. Taste and season with salt and pepper.
- Return chicken to the skillet; garnish with additional fresh herbs. Serve immediately.

CHICKEN BREASTS DIJON (RICE COOKER)
So I got a rice cooker. So of course I went in search of recipes for it...This was one that I found that looked really good. I've changed it slightly to a full meal in one. My cooked takes 90 mins for brown rice... if yours takes a different time adjust accordingly.

Steps:
- Place rice and water in bottom of cooker. Press start. Let cook for about 50 mins before next step.
- Place chicken on pc of foil big enough to make a packet and sprayed with cooking spray. Mix mustard and yogurt, seasoning, salt and chives. Make packet.
- Cut broccoli in pcs and place in a seperate packet.
- When rice has cooked for 1 hour. Carefully open the lid and place steamer tray inside. Put chicken packet in steamer tray. Close lid for 10 minutes.
- Then open lid again and place broccoli inside. Close lid and allow to cook till cooker switches to keep warm.
- Open chicken packet to check doneness. Enjoy -- .

This recipe is from Quick and Easy Meals from the Riceland Kitchen. I did clip this from a box of Riceland Rice but I do not remember how long ago. The recipe is very simple and made in one pot. No fuss cooking!

DIJON CHICKEN BREASTS
Steps:
- Pound chicken to 1-inch thick and season with salt and pepper.
- Heat olive oil over medium-high heat in a large skillet and cook chicken for 5-6 minutes per side, or until browned and the chicken reaches 165°F. Remove chicken from the pan and set aside lightly covering with foil.
- Add butter and garlic to the pan. Cook just until fragrant, about 30 seconds.

- Season chicken breasts with salt and pepper.
