CAPELLINI WITH TOMATOES AND BASIL

Kosher salt
1/2 cup good olive oil, plus extra for the pot
2 tablespoons minced garlic (6 cloves)
4 pints small cherry tomatoes or grape tomoatoes
18 large basil leaves, julienned
2 tablespoons chopped fresh curly parsley
2 teaspoons chopped fresh thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
3/4 pound dried capellini or angel hair pasta
1 1/2 cups freshly grated Parmesan cheese
Extra chopped basil and grated Parmesan, for serving

Steps:

  • Bring a large pot of water to a boil and add 2 tablespoons of salt and a splash of oil to the pot.
  • Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don't break up.
  • While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.
  • Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.

This is a my favorite pasta which is quick and easy to make. I am posting the quick version which uses a regular pasta sauce(I "do not" suggest Ragu or Prego)

1 lb veal, sliced thin into small pieces
1 green pepper, sliced
1 onion, sliced
3 tablespoons of fresh minced garlic
3 tablespoons olive oil
1 teaspoon basil
1 teaspoon oregano
1 tablespoon fresh parsley, chopped
1 teaspoon salt
1 teaspoon black pepper
8 ounces angel hair pasta
1 (16 ounce) jar marinara sauce

Steps:

  • Boil water for pasta. Cook pasta for 5-8 minutes (until desired tenderness), drain and set aside.
  • Cut onion and pepper into 1-2 inch thin slices. Heat 1 1/2 tablespoons of olive oil in pan. Saute onions and peppers until browned. Add rest of olive oil and veal slices, saute until veal is cooked through. Drain.
  • Heat marinara sauce on medium heat in a medium sauce pan. Add veal, onions and peppers into sauce and continue to heat. Add basil, garlic, oregano, parsley, salt, and pepper to sauce and heat while stirring until hot.
  • Top angel hair pasta with veal sauce and enjoy.

Years ago, an Italian restaurant served a dish called capellini pomodoro which I ordered often, sometimes adding grilled chicken or shrimp to the pasta. This is my own quick version.

1 ½ pounds Roma tomatoes
1 pound capellini pasta
2 tablespoons unsalted butter
4 cloves garlic, minced
salt and freshly ground black pepper to taste
4 leaves basil, thinly sliced

Steps:

  • Bring a large pot of lightly salted water to a boil. Fill a large bowl with ice and cold water.
  • Score a shallow "x" in the bottom of the tomatoes. Add tomatoes to the boiling water and cook uncovered until skin starts to peel off, about 1 minute. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Peel tomatoes.
  • Transfer peeled tomatoes to a food mill, and process until smooth.
  • Meanwhile, bring a large pot of lightly salted water to a boil. Cook angel hair pasta in the boiling water, stirring occasionally, until tender yet firm to the bite, 4 to 5 minutes. Drain, saving 1/4 cup of the pasta water for the sauce.
  • While pasta cooks, melt butter in a large skillet over low heat. Add garlic and salt and cook until fragrant, 1 to 2 minutes. Add pureed tomatoes and as much pasta water as desired. Simmer until thickened, 3 to 5 minutes. Season with salt and pepper to taste.
  • Divide pasta amongst 4 serving bowls. Top with tomato sauce and sprinkle with fresh basil. Serve immediately.

Not far from Tampa, Florida, is a waterfront city rich with Greek influence called Tarpon Springs. This is a dish based on a dish I once tried at a local eatery. It really gives a Mediterranean taste.

1 pound capellini pasta
3 lemons, zested and juiced
¼ cup extra-virgin olive oil
½ cup grated Parmesan cheese
2 tablespoons minced fresh parsley
2 cloves garlic, minced
½ teaspoon salt
1 pinch crushed red pepper flakes, or to taste
1 (5 ounce) can tuna packed in oil
½ (15.5 ounce) can cannellini beans, drained and rinsed

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in capellini, bring back to a boil, and cook over medium heat until tender yet firm to the bite, 4 to 5 minutes.
  • Squeeze lemon juice into a large bowl, removing all the seeds. Pour in olive oil and mix to combine. Mix in Parmesan cheese, parsley, lemon zest, garlic, salt, and crushed red pepper until well combined. Add in tuna, flaking and separating larger pieces. Carefully fold in cannellini beans.
  • Drain capellini pasta and add to the tuna mixture. Toss to combine and serve immediately.

olive oil flavored cooking spray
8 cloves garlic, thinly sliced
3 cups seeded and diced fresh tomatoes
1 cup fresh basil leaf, roughly chopped
1/2 teaspoon kosher salt (optional)
fresh ground pepper
8 ounces capellini
1 tablespoon olive oil
3 tablespoons shaved parmesan cheese

Steps:

  • Lightly coat a heavy nonstick skillet with cooking spray.
  • Place over medium heat and add the garlic slices.
  • Cook slowly until garlic is lightly and evenly browned.
  • Reduce heat to low and add tomatoes, basil, salt (if using), and pepper.
  • Cook just until the tomatoes are heated through, about 3 minutes.
  • Meanwhile, cook capellini according to package directions to al dente; drain and place on a pasta plate or in a large bowl.
  • Drizzle pasta with olive oil and toss to evenly coat.
  • Arrange the hot tomato mixture on top and sprinkle with Parmesan cheese shavings.
  • Serve at once, tossing the mixture as you serve.

It was a family owned place, and the owner often had his mother make special dishes for us. This recipe reminds me of one of those, although credit must go to Carol Monahan, the original poster of this recipe.

1 (16 ounce) package capellini
2 slices bacon, cut into 1-inch pieces
1 large onion, thinly sliced
1/2 lb veal cutlet, cut into 1-inch strips
2 tablespoons flour
1/2 cup chablis (any dry white wine)
2 garlic cloves, minced
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
5 medium tomatoes, cut into wedges
10 ripe olives, pitted and cut in half
2 ounces prosciutto, cut into 1-inch strips
2 tablespoons fresh parsley, chopped

Steps:

  • Cook pasta according to package directions; drain. Set aside and keep warm.
  • Cook the bacon in a large skillet over medium heat until it is transparent. Add the onion, and cook, stirring constantly, until the bacon is crisp and the onion is tender. Sprinkle the veal with the flour; add the veal to the skillet and cook, stirring constantly, until the veal is lightly browned.
  • Stir in the wine and the next 5 ingredients. Bring to a boil; cover, reduce heat, and simmer for 10 minutes, or until veal is almost tender.
  • Add the tomatoes and olives; cover and simmer 5 to 7 minutes or until thoroughly heated. Add the prosciutto; cover and let stand for 2 minutes.
  • Serve the veal mixture over the reserved pasta; sprinkle with parsley.

1 lb veal scallops, pounded thin
1/3 cup flour
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup milk
2 tablespoons olive oil
2 tablespoons butter
2 tomatoes, chopped
4 green onions, chopped
2 garlic cloves, minced
2 tablespoons white wine
1/2 cup whipping cream
1/8 cup parmesan cheese (garnish) (optional)

Steps:

  • Dredge the veal in the flour, salt and pepper mixture.
  • Dip in milk, then again in flour, set aside meat.
  • Heat 1 tbsp of oil and 1 tbsp butter in large pan.
  • Add the veal and cook until light brown on both sides.
  • Remove veal and keep warm.
  • Add the remaining oil and butter, the tomatoes, onion, garlic and wine to pan.
  • Cook over moderate heat 5 minutes.
  • Add the cream and cook over high until bubbly.
  • Add veal to reheat.
  • Serve with hot fettuccine and garnish with parmesan cheese.

  • Bring 5 litres water to boil, add salt and pasta cook until al dente.

1 cup chicken stock or canned low-salt chicken broth
1 pound veal scaloppine
All purpose flour
3 tablespoons (about) olive oil
1 cup whipping cream
3/4 cup chopped seeded plum tomatoes
6 tablespoons chopped fresh basil
1 tablespoon tomato paste
2/3 cup crumbled Gorgonzola cheese

Steps:

  • Boil both stocks in medium saucepan until reduced to 1 cup, about 10 minutes. Remove from heat.
  • Sprinkle veal with salt and pepper. Dredge veal in flour to coat; shake off excess. Heat 1 tablespoon oil in heavy large skillet over high heat. Working in batches, add veal and sauté until cooked through, about 2 minutes per side. Transfer veal to platter; tent with foil to keep warm. Repeat with remaining veal, adding more oil to skillet as necessary.
  • Add reduced stock mixture, cream, 1/2 cup chopped tomatoes, 4 tablespoons basil and tomato paste to skillet. Simmer until reduced to sauce consistency, whisking frequently, about 5 minutes. Add 1/3 cup Gorgonzola; stir until melted.
  • Pour sauce over veal. Sprinkle with remaining 1/4 cup chopped tomatoes, 2 tablespoons basil and 1/3 cup Gorgonzola.
