PICKLED JALAPEñOS
Homemade Pickled Jalapeños are easy to make! This simple recipe, which uses the waterbath canning method, makes tasty and crisp homemade pickled jalapeños slices.

- Slice Peppers: Wash peppers and cut off steams. Slice peppers into 1/4-inch thick rings. Wear gloves for this step to avoid burning your hands. And do NOT touch your eyes or any other sensitive body parts.
- Heat Jars: Place a rack into the bottom of a large pot. Fill pot with enough water to cover jars. Submerge jars in water. Bring water to a simmer, 180 degrees. Simmer jars for 10 minutes. (Since the peppers process for 10 minutes, you don't need to boil the jars.)
- Prepare the Brine: While the jars heat, combine vinegar, water, and salt medium saucepan. Boil for five minutes.
- Pack Jars. Remove jars from the water. Pack the peppers into hot jars, leaving 1/2 inch headspace. Add 1/4 teaspoon Pickle Crisp to each jar, if desired.
- Add Brine. Ladle brine into jars, leaving 1/2 inch headspace. Using a wooden chopstick, bubble tool, or soft rubber spatula, remove air bubbles. Measure headspace. Add more brine if needed.
- Clean Rim and Apply Lids. Wipe rim with clean, damp cloth. Place lid on jar. Screw on band to "fingertip tight." You should feel some resistance but you don't want to crank the band on too tight.
- Process Jars. Lower jars into pot. Water should cover jars by 1 to 2-inches after all jars are in the pot. Cover the pot. Return water to a boil. Process for 10 minutes. (Start the timer once the water returns to a boil.) Be sure to maintain a rolling boil during the entire 10 minute processing time.When processing time completes, turn off the burner and remove lid. Wait 5 minutes before removing jars from the pot. Lift the jars out of the water straight. Avoid tipping the jars. Place hot jars on a towel-lined counter or wood cutting board. Allow jars to cool for 24 hours.
- Check Seals. Press the center of the lid. It should not move. Remove outer ring. Gently try to lift the lid off the jar. It should not move. Wipe jars. Label. If any jar didn't seal, place into the refrigerator and enjoy within a week or so.
- Store: Place jars in a cool place out of direct sunlight. For best flavor, wait six weeks before enjoying the peppers.

- Wearing gloves, remove the stems from all of the jalapeno peppers. The easiest way to do this is to slice a small disc off of the stem-end along with the stem. Discard the stems.
- Slice the peppers into uniform 1/8-1/4 inch rounds. Set aside.
- In a large pot, bring cider vinegar, white sugar, turmeric, celery seed, granulated garlic and cayenne pepper to a boil. Reduce heat and simmer for 5 minutes.
- Add the pepper slices and simmer for exactly 4 minutes.
- Use a slotted spoon to transfer the peppers, loading into clean, sterile canning jars to within 1/4 inch of the upper rim of the jar.
- Turn heat up under the pot with the syrup and bring to a full rolling boil. Boil hard for 6 minutes.
- Use a ladle to pour the boiling syrup into the jars over the jalapeno slices. Insert a cooking chopstick to the bottom of the jar two or three times to release any trapped pockets of air. Adjust the level of the syrup if necessary. Wipe the rims of the jars with a clean, damp paper towel and fix on new, two-piece lids to finger-tip tightness.
- *If you have leftover syrup, and it is likely that you will, you may can it in half-pint or pint jars, too. It's wonderful brushed on meat on the grill or added to potato salad or, or, or... In short, don't toss it out!
- Place jars in a canner, cover with water by 2-inches. Bring the water to a full rolling boil. When it reaches a full rolling boil, set the timer for 10 minutes for half-pints or 15 minutes for pints.
- When timer goes off, use canning tongs to transfer the jars to a cooling rack. Leave them to cool, undisturbed, for 24 hours. When fully cooled, wipe them with a clean, damp washcloth then label.
- Allow to mellow for at least two weeks, but preferably a month before eating. Or don't.
QUICK PICKLED JALAPENO RINGS

RECIPE FOR CANDIED JALAPENOS (AKA COWBOY CANDY)
This is a must try recipe for Candied Jalapenos (aka Cowboy Candy)! They are sweet and spicy! It is a canning recipe with a fridge option.

- Rinse jalapenos well then slice them into about 1/8-1/4 inch slices. Place in a bowl and set aside.
- In a medium saucepan combine vinegar, sugar, celery seed, cayenne pepper, mustard seed, and turmeric. Bring this mixture to a full rolling boil. Then immediately reduce the heat and allow it to simmer for 6 to 7 minutes. Be sure to stir it frequently.
- Now add the sliced jalapenos to the saucepan. Turn the heat back to high and bring it to a rolling boil. Now reduce the heat to low/medium again and allow it to simmer for about another 6 to 7 minutes.
- While that is simmering, put your pint canning jars and lids in the water bath canner. This is to sterilize them. After a minute or two, remove the jars and lids and place on a dish towel. You always want to be sure to work with sterile canning jars.
- Now use a large slotted spoon to transfer the jalapenos to the canning jars. Be sure to make them as equal as you can. While regular jars will work, wide mouth jars make it easier to pack the jars.
- After you remove the peppers from the pot, turn the heat back to high to thicken the brine into a syrup. This should take about 5 minutes.
- Now distribute the hot brine syrup between the jars. You want to make sure to cover the peppers completely but allow 1/2 inch headspace.
- After you have the jars full, remove any air bubbles, wipe rims with a damp paper towel or cloth. Then place lids on and then rings. You want the rings to be finger tight. Place jars in a hot water bath or large pot of boiling water and can for 12 minutes. You want to make sure you have enough water in your canner. The water should cover the jars by about two inches.
- After 12 minutes, remove the jars carefully and allow them to cool on a towel for about 8 to 12 hours.
- After cool check out seals and if everything is sealed (that is when the top center can't be pushed in) you can store in a cool place for up to one year.

- Slice peppers or leave them whole.
- (To prevent bursting, cut two small slits in whole peppers.).
- Pack peppers tightly into clean, hot jars.
- Combine vinegar and water; heat to a simmer.

CANNED JALAPENOS RECIPE

- Wash canning jars and lids in hot soapy water or in the dishwasher before using. Wearing rubber gloves, clean the jalapenos by trimming off the stem end and cleaning out the seeds from the inside using a small paring knife. Insert the paring knife into the jalapeno and cut around the ribs so that the insides can be pulled out. Then tap the open end of the jalapeno on your work surface to remove the remaining seeds. You can leave some of the seeds in if you want hotter jalapenos but be careful because a few can make a big difference. Most of the heat is in the seeds. Once the seeds are removed, slice the jalapenos into rings and place in the jars; fill to about 1/2 inch of the top edge. Mix the brine solution in a saucepan and bring to a full boil. While the brine is cooking, place the lids into a small pan and cover completely with water. Heat until boiling and then turn down so they are just lightly boiling. Once the brine is boiling, pour over the jalapenos in the jars until they are completely covered. Do not fill more than 1/4 inch from the top edge of the jar. Immediately place the hot cover on the jar and seal firmly but not too tight. Allow jars to cool completely at room temperature and then store in a cool, dry and dark area. Make sure jars have sealed before storing. Store for up to a year. Note: You can use jars with screw on lids that have the rubber seal inside the lid or you can use actual canning lids and rings, both need to be boiled before using. Also, if you don't have 6 full pint jars of jalapenos to preserve at one time, you can adjust the brine amounts accordingly. I have made up quarter and half batches at times.
PICKLED JALAPENOS

- Prepare the jars and lids: Wash all jars and lids thoroughly with soap and water and rinse well. Fill your canner with enough water to cover the jars by at least 1 inch and bring to a simmer. Using a pair of canning tongs, lower the jars in gently, tilting them to fill with the hot water. In a small saucepan, keep some water warm but not boiling; place the lids in the water. Have an additional kettle of water on to boil. Prepare the brine: Add vinegar, water, salt and garlic and peppercorns or honey (if using) to a medium saucepan and place over medium heat. Bring to a boil, and reduce heat to keep at a simmer. Prepare the jalapenos: Wearing latex or plastic gloves, slice the jalapenos into 1/4-inch rings. Add the rings to the brine and bring back to the boil. Fill and close the jars: Using canning tongs, remove the jars from the canner, carefully pouring the water back into the canner. Set next to the jalapenos in the saucepan. Turn the heat under the canner to high. Use a ladle to pour the jalapenos into the jars through a canning funnel, leaving 1/2-inch headspace at the top. Run a clean chopstick around the inside of the jar to dislodge any trapped air. Wipe the rims of the jars with a damp paper towel. Place the lids on, and screw on the rings until just finger-tight. Seal the jars: Using canning tongs, gently transfer the jars to the canner, taking care to keep them vertical. When all the jars are in the canner, there should be at least 1 inch water covering them; if you need more, add water from the kettle until the jars are sufficiently covered. Bring the water to a full rolling boil, and process for 5 minutes. Remove and cool: Using canning tongs, gently remove the jars from the canner and transfer them to a kitchen towel or cooling rack, again keeping them vertical. Do not set hot jars directly on to cool counter surfaces. Leave to cool, undisturbed, for at least 12 hours. If any of the jars do not seal when cool, reprocess using the method above, or refrigerate and use immediately. Label and store: Add a label to the lid or side of your jar, noting the date it was canned. Remove the rings and store jars in a cool, dark place for up to one year. Refrigerate after opening.

- Sterilize three, 16oz jars and lids. The National Center for Home Food Preservation shows us how.
- Throughly wash the peppers and chop into rings. To protect hands from those burning pepper oils, wear disposable gloves and wash your hands throughly after handling the peppers.
- In a medium sauce pot, bring the vinegar, water, salt and sugar to a boil. Add the peppers and garlic to the vinegar water, stir then remove from heat. Allow the peppers to set in the brine solution for 15 minutes. You'll notice the color of the peppers turn from bright green to a duller shade. Meanwhile, decide if canning or quick/refrigerator pickling the peppers and prepare by reading A or B below.
- Once the peppers have changed color, pack the jars with the peppers, while also scooping the brine into jars. Use a spoon to gently pack the rings if needed, to make room for more (they can be packed in pretty tight). Top with brine and more peppers as needed. Leave about a 1/2″ (1.3cm) head space at the top of each jar. At this point, you have two options. Can the peppers or quick/refrigerator pickle them.
- A. If Canning: Bring a large canner or your largest stock pot of water to a boil (at least a 10 quart (9.5L)) pot. You want the pot large enough to cover the jars with about one inch of water and hold as many jars as can fit for processing. Place the jar lids in a shallow pan and pour boiling water over the lids. This softens the rubber seals and readies them for canning. Allow the lids to set until you're ready to lid the jars. Lid the peppers and gently twist the lid rings on the jars. Once the stock pot water is boiling, gently place the jars in the water and set a timer for 10 minutes and process the jars. After 10 minutes, remove the jars from the water, dry off with a towel and set aside to cool. B. For Quick/Refrigerator Pickled Jalapeños:Simply place the lidded jars in the refrigerator. They'll last for several months and be ready for snacking in about 24 hours, or in an hour for the quickest pickle! They taste better with a little time on them.
- If your jalapeños are canned, listen for the lid to pop - this means your jars are sealed and ready for long term storage at room temperature. If the lid doesnt pop or seal, place them in the refrigerator and treat them as quick pickled Jalapeños.If you're going for a refrigerator quick pickle, the lid doesn't need to pop, rather your peppers are ready to be refrigerated right after lidding the jar.
- Quick pickled jalapeños can last several months in the fridge or if properly canned, up to one year at room temperature. Once a jar is opened, store in the refrigerator. An open jar of canned or quick pickled jalapeños will last months in the refrigerator. (update 3/22: this year my quick pickled jalapeños lasted eight months in the fridge)

PICKLED JALAPENOS CANNING RECIPE
Did you end up with an over abundance of jalapeño chili peppers this year? Preserve that harvest into shelf-stable jars of sliced pickled jalapenos. They taste hot and spicy with a tangy vinegary kick.

- Wash your jars, lids, screw bands, and canning tools in hot soapy water. Rinse well to remove all suds. Set aside to air dry on a clean kitchen towel.
- Place the jar rack into water bath canner, place jars in the canner, and add water to cover. Bring the canner to a simmer (180˚F) for 10 minutes, and keep the jars hot until you are ready to fill them.
- Rinse the chiles well under clean running water and air dry on a kitchen towel.
- Slip on a pair of gloves to prevent burns, remove the stems, and cut the peppers into 1-inch slices or rings. Set aside.
- Combine vinegar, water, and garlic in a large saucepot. Bring to a boil over high heat, and then reduce heat to low and simmer (180˚F) for 5 minutes. Remove and discard the garlic. Keep warm.
- Spread a kitchen towel on the counter. Remove a warm jar from canner using the jar lifter. Drain the water back into the canner and place on the towel. Keep the remaining jars in the canner so they stay hot.
- Use the canning funnel and fill the jar with the sliced jalapeños.
- Ladle hot pickling liquid over the peppers and maintain a 1/4-inch headspace.
- Run the bubble popper through the jars to release air bubbles. Wipe the rim clean with a damp paper towel.
- Center a lid on the jar, and screw on the band until it is fingertip tight. Use the jar lifter to place the jar back into the canner, and repeat with the remaining jars.
- Once jars are all in canner, adjust the water level so it is two inches above the jar tops.
- Cover the canning pot and bring it to a rolling boil over medium-high heat. Once the pot boils, process half-pints for 10 minutes at altitudes of less than 1,000 ft. Adjust processing time for your altitude if necessary. (See notes)
- When processing time is complete, turn off heat, remove the cover by tilting lid away from you so that steam does not burn your face, and allow the canner to cool down and settle for 5 minutes.
- Spread a dry kitchen towel on the counter. Use a jar lifter to remove the jars one at a time from the canner. Keep the jars upright, and place them on the towel. Do not tighten ring bands or test the seals yet. Let the jars sit undisturbed for 12 to 24-hours to cool.
- After the jars have cooled for at least 12 hours, check to be sure lids have sealed by pushing on the center of the lid. The lid should not pop up. If the lid flexes up and down, it did not seal. Place the jar in the refrigerator, and use within a month.
- Remove the ring bands, wash, label, date the jars, and store in a cool, dark place between 50 to 70 degrees F for 12 to 18 months. Allow 4-5 weeks for the pickles to develop flavor. Once the jar is open, refrigerate and use up within a month. Makes about 5 half-pint jars of picked jalapeños.

PERFECT PICKLED JALAPEñO PEPPERS

- Always start off by cleaning all kitchen surfaces, and any equipment you will be using. Heat your jars in the oven first to sterilise. 200 degrees Celsius for about 20 minutes is best. Remember to boil snap lids for 5 mins before use. Pack Jalapeño into your jar(s) until they are level with the bottom of the neck of the jar. In a medium sauce pan, combine the garlic, vinegar, water, sugar and salt. Heat to a boil, stirring to dissolve the sugar and salt. Once dissolved, pour into jars* leaving 1/2 inch head space. Wipe rims with a clean dry cloth the seal firmly but not too tightly with your sterilised 2 piece metal canning lids. Partly fill canner with water and bring almost to a boil. Place jars on rack in the canner and pour in more boiling water to cover jars by 1-2 inches. Cover and bring to a rolling boil. Process for 10 minutes. Be sure to maintain a rolling boil during the entire 10 minute processing time. Lift the jars out of the water straight, avoiding tipping the jars. Place jars on towel to cool before storing somewhere dark and cool for 24 hours. After 24 hours check the seals by pressing the center of the lid. The lids should not move if properly sealed and are safe to label and store. If any jars failed to seal, refrigerate and enjoy. Canned peppers should be stored in a dark cool place. For best flavour, wait at least 1 month before opening. Once opened keep refrigerated.

CANNING PICKLED JALAPENO PEPPERS, JAR BY JAR
A pickled jalapeno pepper recipe with just the right amount of spice and a touch sweetness.

- Wearing rubber gloves, slice your jalapenos into 1/8" thick rounds. Discard the stem end. If you will be canning these pickled jalapenos, then prepare your water bath canner, mason jars, and lids. Wash your jars and lids. Sterilize your jars in a large pot filled with water. Bring the water to almost a simmer over medium heat. Keep the jars in the simmering water until you are ready to fill them. Use a jar lifter to remove them from the water when you are ready to fill them, dumping the hot water back into the pot when you remove each jar from the water. Right before you are ready to can, put your lids in a small pot or bowl with hot, but not boiling water. Put some additional white vinegar in a small bowl, alongside a clean washcloth or paper towel. Keep the water in your canning pot at a simmer while you fill your jars. See The All New Ball Book of Canning and Preserving for additional guidance Combine the vinegar, water, & sugar in a medium saucepan and heat until just before it starts to boil. Add the salt, pepper, cumin, mustard seed, bay leaf, & garlic to each jar. Divide the jalapeño slices between each jar, packing them in compactly until jars are filled. Pour the hot vinegar mixture into each jar, leaving 1/2" headspace; a canning funnel is helpful for this. Insert bubble remover tool (or clean chopstick) down the side of each jar and press in toward the center to release any bubbles. Clean jar rims with a wet paper towel, dampened with white vinegar. FOR REFRIGERATOR PICKLED PEPPERS: Allow jars to cool to room temperature and then store in the refrigerator for at least 3 days before eating. The pepper slices will keep for several months. FOR CANNED PICKLED PEPPERS: Process using standard USDA water process canning procedures. Bring your large pot of water to a boil. The pot needs to be deep enough to hold enough water to cover the jars by 2". After filling the hot jars as directed above, wipe your rims with white vinegar, apply the lids and rims, tightening the rims until just 'fingertip tight'. Fingertip Tight means that you can tighten with your fingers only, that you won't use the palm of your hand or all of your fingers to tighten. Place your jars in the canner, making sure the jars are completely covered with water by 2". Add additional boiling water as needed to raise the water level. Cover canner and bring water to a gentle boil. Once water is boiling, process for 12 minutes, adjusting time as necessary for elevation. (see notes) At the end of processing time, turn off the heat, remove the pot lid, and let the jars sit in the canner for 5 minutes. Remove jars, keeping them upright as you transfer them to a rack. Allow the jars to cool completely, undisturbed, for 24 hours. Refrigerate any jars that do not seal. May be eaten within a few days, but best if allowed to marinate for several weeks. Good for at least 1 year.

COWBOY CANDY | CANNING CANDIED JALAPENO PEPPERS
Steps:
- Wearing gloves, slice jalapeno peppers into 1/4-inch rounds, set aside. For even cuts use a mandolin.
- In a large non-reactive stockpot bring to boil apple cider vinegar, sugar, turmeric powder, celery seed, and garlic.
- Reduce heat and simmer for 5 minutes. Add jalapeno peppers and allow to simmer for an additional 5 minutes.
- Using a slotted spoon, scoop jalapeno peppers into half-pint jars.
- Bring the remaining brine to a hard boil for another 5 minutes. Using a ladle, add hot brine to the jars, leaving a 1/4-inch headspace.
- Remove air bubbles, wipe jar rim, add warmed lids and rings.
- Process in a hot water bath or steam canner for 15 minutes. Adjust the processing time for altitudes above 1,001 feet in elevation.

Steps:
- Wash peppers.
- Cut into quarters, removing stems and seeds.
- Put in a large pot of boiling water and when the water returns to the boil, let boil for 3 minutes.
- Remove from pot with slotted spoon.
- Pack into 1/4 litre (1/2 US pint) or 1/2 litre (1 US pint) jars.
- Leave 3 cm (1 inch) headspace.
- Add 1 1/2 teaspoons vinegar to each 1/4 litre (1/2 US pint) jar; 1 tablespoon vinegar to each 1/2 litre (1 US pint) jar.
- Top up each jar with clean boiling water (such as from a kettle, for instance), maintaining headspace of 3 cm (1 inch.)
- Debubble; adjust headspace.
- Wipe jar rims.
- Put lids on.
- Processing pressure: 10 lbs (69 kPa) weighted gauge, 11 lbs (76 kpa) dial gauge (adjust pressure for your altitude when over 300 metres / 1000 feet)
- Processing time: either size jar 35 minutes.
