HOMEMADE PIZZA SAUCE FOR CANNING
The best homemade pizza sauce for canning recipe ever! Made with all fresh ingredients, this made from scratch pizza sauce is a wonderful addition to the home pantry.

Steps:
- Peel and puree fresh tomatoes, set aside.
- Mince onions and garlic; place both into a large metal stock pot with 6 Tbsp Olive Oil. Saute' in oil on medium until translucent and tender.
- Add tomato puree, mix well.
- Add remaining dry ingredients, stir to mix well.
- Bring pot to a boil, reduce heat to simmer on medium-low for about 2+ hours. (Simmer to reduce by at least 1/2 to create a "thicker" sauce; stirring occasionally).
- Once to desired thickness, add Lemon Juice to hot sterile jars, ladle to 1/2 inch headspace.
- Wipe rim with clean damp cloth, place on lid and tighten to finger tight.
- Place in water bath canner bring to a boil. Process for 25 minutes.
- Remove canner, place on towel on counter, allow to cool 12-24 hours.
- Check seal, label and store.

BASIC PIZZA SAUCE

- Empty the contents of the tomato can in a mixing bowl and coarsely crush the tomatoes with a fork or your hands, leaving them just a little chunky. In a heavy bottom 2-quart saucepot, add the olive oil, over a medium high flame and heat a little. Add the onions and saute until slightly translucent. Add the garlic and saute about a minute until golden. Quickly add the crushed tomatoes to the mix. Stir well and bring to a simmer. Season with salt and pepper, to taste, and add the fresh basil and oregano. You can add a touch of sugar if desired or if tomatoes are tart. Simmer on a low flame, stirring often for at least 15 minutes. If not using right away, cool down and store in airtight container in the refrigerator, up to 1 week.
CANNED PIZZA SAUCE FOR A YEAR
This makes about 36 pints. For any Italian dish, chicken, or pasta. If you like to can, then can enough to last awhile. I have never tried using a sugar substitute but it might be added after boiled, then mixed in. You might be able to use a liquid sweetner.

- In large stockpot add the first 10 ingredients. Stir and cook on low heat.
- Chop onions and celery, add to 3 cups of water in a separate pot. Cook until tender.
- Put the onions and celery in the blender. Pulse until pureed. Add to sauce ingredients.Add parmesan cheese,white pepper and sugar. Stir. Heat to a boil and stir so that it will not scorch.
- Pour into hot sterile pint jars, leaving 1/2 inch head room in each jar. Wipe the edge and top of each jar with a hot sterile cloth, seal and band.
- Hot water bath for 10 minutes.
- Take out with tongs on towel covered counter. You will hear a pop when each jar is sealed. The seal will be indented inches.
- When you open jar to use, add 2 tblsp. olive oil. Stir in to heat or to spread on
- dough, chicken or pasta.

PIZZA SAUCE
Our rich tomato pizza sauce is achieved by cooking it over a low heat until thickened and glossy. It's easy to make and is perfect for pizza night.

- Heat the oil in a saucepan over a low heat, then add the onion along with a generous pinch of salt. Fry gently for 12-15 mins or until the onion has softened and is turning translucent. Add the garlic and fry for a further min. Tip in the tomatoes and purée along with the bay, oregano and sugar. Bring to the boil and lower the heat. Simmer, uncovered, for 30-35 mins or until thickened and reduced. Season. For a really smooth sauce, blitz with a stick blender, otherwise leave as is.
- Stir the basil into the sauce. The sauce will cover 4-6 large pizza bases. Keeps well in the fridge for 1 week or stored in a container in the freezer.

- Combine tomato paste, garlic, parsley flakes, onion, oregano, basil and water in 2 quart saucepan.
- Cook over medium high heat until mixture boils.

- Heat olive oil over medium-low heat in a saucepan; stir anchovy fillets into olive oil and cook, stirring often, until the fillets begin to sizzle, about 1 minute. Mix garlic into oil and cook just until fragrant, 1 minute more. Add fresh oregano and reduce heat to low; cook until oregano is wilted, 2 or 3 more minutes.
