CANNED GREEN TOMATOES
This is my MIL recipe. It's very good, and a good way to use those left over green tomatoes at the end of summer. It's so nice to open a jar and make fried green tomatoes!

Steps:
- Slice green tomatoes into pint jars.
- Add 1/2 teaspoon salt to each jar.
- Cover with boiling water.
- Put lids on and put in water bath canner.
- Bring to boil and boil for 5 minutes.
- Remove from canner, tighten caps and cool on counter top.
- Can also use quart jars, adding 1 teaspoon salt.

PICKLED GREEN TOMATOES
Steps:
- Start by preparing jars and getting water in the canner heating.You want the canner hot, but not boiling, when the jars are ready to be processed. See full water bath canning instructions here.
- Wash tomatoes and cut into desired sizes.
- Combine vinegar, water, and salt in a large pot. Bring to a boil.
- Place garlic clove and dill into each jar,
- Pack tomato pieces into pint jars.
- Cover with vinegar solution, leaving 1/4" headspace.
- Remove air bubbles, wipe the rim clean, and place on seal and ring. Place jar in the warm canner. Proceed to fill all jars. Process according to the chart below.

- Prepare 4 pint jars, lids, and rings. Sterilize the jars and keep them in the hot water till it’s time for processing. Make sure to fill your water bath canner and get the water to a simmer. Peel and core the green tomatoes.
- In a large stainless steel or enameled dutch oven cook the green tomatoes(i didn't even cut them up) with 1 cup of water slowly for 45 minutes using medium heat, stirring occassionally.
- Make sure your rack is on the bottom of the canner and place the jars in the water bath making sure that the water covers each of the jars by 1 to 2 inches. Add hot water to the canner if it doesn't measure up.
