Vegetable Cheddar Cheese Soup image

This recipe for Cheddar Cheese Soup is creamy and comforting. Filled with bits of zucchini, broccoli, and carrots, it's healthy comfort food.

2 tbsp butter
2 clove garlic (minced)
1/2 zucchini (shredded)
1 carrots (peeled and shredded)
1/2 onion (grated)
1 head broccoli (chopped into mini florets)
3 cup chicken stock
2 tbsp butter
1/4 cup unbleached, all-purpose flour
2 cup milk
8 oz cheddar cheese (shredded) ((2 cups))
salt
black pepper

Steps:

  • In large saucepot, melt butter. Add garlic, zucchini, carrots, and onion. Saute until veggies are tender. Stir in broccoli and broth. Simmer until broccoli is tender.
  • Meanwhile, melt butter in large pot. Whisk in flour and cook for a minute or two. Whisk in milk until smooth. Simmer until thickened.
  • Whisk in cheddar cheese. Incorporate vegetable mixture into cheese sauce, whisking until smooth. Season to taste with salt and pepper.
  • Serve immediately.

This rich, hearty recipe satisfies all your winter soup cravings. It includes the traditional aromatic vegetables, spices and broccoli but swaps the milk, cheese and butter with soaked cashews, nutritional yeast and other seasonings for a rich and savory taste and texture.

2 tablespoons extra-virgin olive oil
1 medium carrot, medium dice
1 small stalk celery, medium dice
1 small yellow onion, medium dice
Kosher salt and freshly ground black pepper
1/2 teaspoon smoked paprika
3 cloves garlic, minced
1 small Yukon gold potato, peeled and diced medium
1/4 teaspoon turmeric, optional
4 cups vegetable broth
1 cup raw cashews, soaked and drained (see Cook's Note)
3 tablespoons nutritional yeast
1 teaspoon apple cider vinegar
1 teaspoon Dijon mustard
16 ounces frozen broccoli florets
1 tablespoon lemon juice, optional
Assorted toppings, such as chopped fresh parsley, sliced chives, shredded vegan cheese, vegan croutons, and/or smoked paprika

Steps:

  • Heat a large, heavy-bottomed pot or Dutch oven over medium heat. Add 2 tablespoons of the olive oil along with the carrot, celery, onion and 1/2 teaspoon kosher salt. Saute, stirring occasionally, until the vegetables are tender, 5 to 7 minutes. Add the smoked paprika, garlic, potato and turmeric if using. Saute, stirring, until fragrant, about 1 minute.
  • Add the vegetable broth and bring to a boil. Reduce to a simmer and cook until the potato is tender, about 15 minutes. Allow the soup to cool briefly and then transfer to a blender along with the cashews, nutritional yeast, vinegar, Dijon and 1 teaspoon kosher salt. Blend until smooth.
  • Meanwhile, cook the broccoli in the microwave according to package instructions. Add the steamed broccoli to the contents of the blender and pulse until incorporated but with bits of broccoli still visible.
  • Return the soup mixture to the pot and return to a simmer. If the consistency is too thick, add some water to adjust. Taste and add salt if desired. Finish with a sprinkle of pepper and the lemon juice if using. Serve with desired toppings.

Make sure that the consistency is smooth, at which time add the sherry, cheese, milk, paprika, parsley, and salt and pepper. Cook, stirring, for 3 minutes.

1 cup celery
1 cup broccoli
1 cup cauliflower
1 cup and green onion (include the tops but keep them separate)
1/2 cup butter
1 cup flour
4 cups milk
4 cups chicken stock
1 (15 ounce) jar Cheez Whiz
1/4 teaspoon cayenne pepper
1 tablespoon prepared mustard
salt and pepper

Steps:

  • Boil vegetables in water for five to ten minutes or until crisp tender and drain.
  • Saute onion whites in butter.
  • Add flour and blend well.
  • In separate pan, bring milk and broth to a boil.
  • Slowly incorporate broth mixture with flour, blending well with a wisk.
  • Add cheese, salt, pepper, and cayenne.
  • Stir in mustard and boiled vegetables.
  • Bring soup to a boil.
  • Serve immediately.

1 teaspoon freshly ground black pepper
1 pinch chopped fresh dill weed
3 cups milk

Steps:

  • Using a large stock pot, saute onions, celery and garlic powder in butter, over low heat until onions are tender.
  • Slowly stir in flour with 1 cup of chicken broth to make a rue. Stir until well mixed.
  • Add 3 cups chicken broth, carrots, potatoes, parsley, pepper and dill. Bring to a boil and then add milk and cheese. Stir until cheese is melted, reduce heat to low and simmer for one hour, stirring occasionally.
