HEARTY SPLIT PEA SOUP

ROSEMARY SPLIT PEA SOUP

Rosemary Split Pea Soup image

This is an old soup rcipe that I added rosemary to. I love rosemary. The fragrance is so soothing and healing. I think almost anything is better with rosemary.

Provided by Kathie Carr

Categories     Bean Soups

Time 1h35m

Number Of Ingredients 10

1 slice cooked ham, about 1/2 pound, leftover ok
2 Tbsp olive oil
1 large onion, chopped
2 large carrots, chopped
2 clove garlic, minced
4 can(s) (10 1/2 ounces each) chicken broth
1 1/2 c green split peas
2 bay leaves
2 tsp chopped fresh rosemary
1 pinch red pepper flakes, optional

Steps:

  • 1. Cut ham into small bite sized pieces. I don't like cubes but prefer a more shredded ham. You can cut or chop ham any way you like.
  • 2. Heat olive oil in a Dutch oven or soup pot. Stir in onion, leek, carrot, and garlic. Cook until the vegetables are soft, about 8 minutes. Add chicken broth. Stir in ham, split peas, bay leaves, and rosemary. If using red pepper flakes add now. Bring just to a boil. Immediately reduce heat to low and cover the pot. Simmer until peas are cooked, about 1 hour, stirring occasionally.

SIMPLE BUT SCRUMPTIOUS SPLIT PEA SOUP

Simple but Scrumptious Split Pea Soup image

This is so easy..just wash the peas, dice the veggies, and toss in the pot with spices and ham hocks. (A meaty ham bone can be substituted for the ham hocks) Prepare early, simmer 4 hours, and enjoy. This gets better and better everyday after being in the fridge. This recipe came from an old church cookbook I found years ago. I recommend stirring the pot whenever you pass by the stove....it gets smoother and smoother with every stir.

CROCK POT SPLIT PEA AND LENTIL SOUP

Crock Pot Split Pea and Lentil Soup image

For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients. I cooked it on high for the entire 8 hours because it was so full, but if you halve it, cooking it on low for the same amount of time will work fine.

Provided by Ravedeb

Categories     Lentil

Time 8h10m

Yield 12 serving(s)

Number Of Ingredients 10

1 (16 ounce) package dried split peas
1 (16 ounce) package dried lentils
12 cups water
12 teaspoons chicken soup base
4 carrots, chopped
1 large onion, chopped
2 celery ribs, chopped
2 garlic cloves, chopped
fresh ground black pepper, to taste
2 tablespoons italian seasoning

Steps:

  • Dump it all in the crock pot.
  • Cook on high for 8 hours or until beans are soft.
  • If you like it creamy, puree some or all of it with an immersion (hand held stick) blender.
  • If you don't have Italian seasoning, any combination of oregano, basil, sage, rosemary, thyme and marjoram will work.
  • Serve with crispy French or Italian bread.
