Air Fryer Grilled Cheese with Mayo image

I grew up eating grilled cheese sandwiches made with Velveeta®, and I still think it's absolutely the best for this sandwich. It's flavorful, and melts beautifully. If you happen to have brioche bread on hand, use it because it makes this sandwich taste divine!

2 tablespoons mayonnaise
4 slices white bread
4 ounces processed cheese food (such as Velveeta ®), sliced

Steps:

  • Preheat the air fryer to 380 degrees F (180 degrees C).
  • Spread the mayonnaise on 4 slices of bread. Distribute cheese slices evenly between 2 bread slices, mayonnaise side down. Place the remaining 2 slices on the sandwiches, mayonnaise side up, and lightly press sandwiches to close.
  • Place the sandwiches in the air fryer basket in a single layer, leaving some space around them.
  • Air-fry for 3 to 4 minutes, flip sandwiches, and cook until sandwich is golden brown and cheese is melted, 2 to 3 more minutes. Depending on the size of your air fryer, you may have to cook in batches.
  • Slice sandwiches on the diagonal, and serve warm.

I found that it is easier to get an extra crispy and crunchy grilled cheese sandwich if I use my air fryer. It's also quicker than grilling it in my cast iron skillet.

2 slices bread
1 teaspoon butter, at room temperature
2 slices sharp Cheddar cheese

Steps:

  • Preheat air fryer to 380 degrees F (175 degrees C).
  • Spread 1/2 teaspoon butter on each slice of bread. Place 1 slice of bread, butter side down in the air fryer. Top with 2 slices cheese. Place 2nd slice of bread, butter side up, over cheese.
  • Air-fry until golden brown, 3 to 4 minutes. Flip sandwich over and air-fry an additional 1 to 2 minutes.

  • In a small bowl, stir together the spread ingredients: Greek yogurt, Dijon, and salt. Spread a thin layer over one side of each of the two pieces of bread.
  • Place the bread on a plate, and butter the opposite side of each slice, making sure the butter reaches all the way to the edges.
  • Assemble the sandwiches: Place the cheeses in an even layer on top of the Dijon side of the bread slice (it will look like a lot of cheese, but go with it). Place the second slice of the bread on top of the cheese, Dijon-side down. If you are using cheese slices (vs. shredded cheese) and any of the cheese pokes out around the outsides of the bread, trim the extra cheese away (to avoid waste, stack the trimmings in the center of the sandwich).
