3 tablespoons unsalted butter
3 cups mini marshmallows
3 cups fruit flavored rice cereal
1 pt ice cream
nonstick muffin tin, 6 cup

Steps:

  • Lightly grease a 6-cup nonstick muffin tin with nonstick spray.
  • In a large pot, melt the butter over medium heat. Add the marshmallows and stir until completely melted and combined with the butter. Stir in the cereal until well coated.
  • Divide the cereal mixture into 6 equal portions and roll into balls. Flatten each ball into a disc, then gently press each disc into a cup of the prepared muffin tin. Press the bottom of a small glass into each cup to pack the mixture slightly against the bottom and up the sides of the molds. Let cool to room temperature, about 20 minutes.
  • When ready to serve, remove the cereal cups from the muffin tin and scoop the ice cream into the cups.
  • Enjoy!

8 oz milk chocolate, chopped or in chips
2 brownies, prepared as desired
½ cup assorted berries, for serving
ice cream, for serving
8 oz dark chocolate, chopped
1 cup heavy cream
6-inch fillable ornament, 6-inch (15 cm) available at craft and baking stores or online

Steps:

  • Melt the milk chocolate in the microwave in 20-second intervals, stirring until smooth.
  • Open the fillable ornament and coat the inside with a lightly oiled paper towel. Pour the melted chocolate into one of the halves. Close the ornament, rotating the ball so that the chocolate evenly coats the entire surface. Continue slowly rotating for 5 minutes. You may have to shake it a bit to get the chocolate to fill any holes. Place the ball in the freezer, then flip it after 2 minutes. Continue to flip it every few minutes, 2-3 more times. The chocolate should be set by then. Freeze for 30 minutes.
  • Remove the ball from the freezer. Carefully open the ornament and remove the ball. Work quickly and avoid touching the ball for too long with your warm hands. If you want to be extra careful, immediately after unmolding, place the ball back in the freezer for a few minutes.
  • Dip or run a flat-bottomed bowl in boiling water, then dry the entire bowl. Invert the bowl onto a flat surface, then place one side of the frozen chocolate ball on the hot bowl.
  • Twist back and forth with a gentle motion, making sure that you're not applying too much pressure to the ball, as it is very fragile. Use a paper towel to help insulate the ball from your warm fingers. You may have to reheat and wipe off the bowl a few times as it will cool down a bit. Place the ball back in the freezer.
  • On a large plate, stack the brownies on top of each other, then surround them with berries. Place a scoop of ice cream on top of the brownies, then slowly place the chocolate ball on top. To cover up any holes or imperfections along the seam where the ball touches the plate, surround the base of the ball with more berries.
  • Microwave the dark chocolate with the heavy cream in 20-second intervals until smooth and glossy.
  • Pour the chocolate sauce over the ball in a circular motion.

¼ cup butter
2 tablespoons brown sugar
½ teaspoon salt
1 cup water
1 cup flour
1 teaspoon vanilla
4 eggs
cooking spray
oil, for frying
cinnamon sugar
ice cream
hot fudge, optional
caramel sauce, optional
1 piping bag, with a small star tip
1 muffin tin, 6 to 12 cups

Steps:

  • In a 1.5-quart saucepan over medium-high heat, add butter, brown sugar, salt, and water, and bring to a boil.
  • As soon as the butter has fully melted and the mixture begins to boil, reduce the heat to medium-low and add in flour. Using a wooden spoon, stir until the dough comes together to form a ball (about 1 minute).
  • Remove from heat and let cool for 5 minutes before proceeding to the next step (to prevent accidentally cooking the eggs).
  • Mix in the vanilla extract and add in the eggs, one at a time, being sure to fully incorporate each egg before adding the next.
  • Once all the eggs are incorporated, transfer it to a piping bag with a small star tip.
  • Invert a muffin tin and spray thoroughly with nonstick cooking spray. Pipe the dough around the inverted cups in spirals to form the bowls. Immediately transfer the tray to the freezer and freeze until solid (about 3 hours or overnight).
  • Heat oil in a deep pot to 350˚F (175˚C). Remove the muffin tin from the freezer and flex it to release the churro bowls (you may need to also use a butter knife under the bottom edge to initially release them). Return any extras to the freezer while you wait to fry.
  • Fry them in batches, until nicely browned, no more than 3 minutes at a time. Be sure to carefully turn them so they fry evenly.
  • Once desired color is reached, remove them from the oil to a paper towel-lined plate. Dab off any excess oil then roll them in cinnamon sugar.
  • Fill with your favorite ice cream and toppings.
  • Enjoy!

¼ cup peanut butter
3 ½ teaspoons whole milk, divided
½ teaspoon vanilla extract, divided
¼ cup powdered sugar, plus 2 tablespoons, divided
1 pinch kosher salt
1 ¼ cups whipped cream, divided
14 chocolate sandwich cookies, divided
2.5 oz pudding mix, chocolate, 1 package
1 ½ cups whole milk, cold
2 cups milk chocolate, melted
2 cups white chocolate, melted
2 cups dark chocolate, melted
¼ cup chopped nuts
4 mini peanut butter cups
12 raspberries
fresh mint leaf
12 popsicle sticks

Steps:

  • Please be aware, you have to place the ice cube right in the chocolate as soon as you're able to remove it from its slot otherwise it will start to melt and the chocolate will not adhere.
  • Fill a 12-cup muffin tin with water.
  • Place a popsicle stick into each muffin cup.
  • Freeze until solid.
  • In a medium bowl, whisk together the cream cheese, peanut butter, 1½ teaspoons milk, ¼ teaspoon vanilla, ¼ cup powdered sugar, and salt until smooth.
  • Fold in ¼ cup (60 ML) of whipped cream with spatula. Set aside.
  • Separate the cream from 12 chocolate sandwich cookies into a separate medium bowl.
  • Add the remaining 2 tablespoons powdered sugar, remaining 2 teaspoons milk, and remaining ¼ teaspoon vanilla to the bowl with the cream filling. Whisk until well-combined.
  • Fold in the remaining cup of whipped cream with a spatula. Set aside.
  • Transfer the cookies to a zip-top bag and break into crumbs with a rolling pin. Set aside.
  • In a small bowl, combine the chocolate pudding mix and cold milk. Whisk for 2 minutes, then let sit for 3 minutes, until the pudding thickens.
  • Remove the muffin tin from the freezer. Give the ice a minute to melt down just enough to remove each ice mold from the muffin cups.
  • Dip 4 of the ice discs into the melted milk chocolate, making sure not to fully submerge the ice disc. Set the chocolate-dipped ice discs onto a parchment-lined baking sheet or plate. Dip 4 of the ice discs in the melted white chocolate, and the remaining 4 discs in the melted dark chocolate.
  • Once the chocolate has set, give the ice discs a minute to melt down slightly. Wiggle the ice disc out of the chocolate to reveal hollow chocolate cups.
  • Pipe the peanut butter mousse into the milk chocolate cups. Top with chopped nuts and a mini peanut butter cup.
  • Sprinkle chocolate sandwich cookie crumbs on the bottom of the white chocolate cups. Pipe the cookie cream filling on top of the crumbs. Garnish with more cookie crumbs and half of a chocolate sandwich cookie.
  • Pipe the chocolate pudding mixture into the dark chocolate cups. Top each one with 3 raspberries and fresh mint leaves.

1 ½ tablespoons coconut oil
1 pt ice cream
6 silicone muffin molds

Steps:

  • In a heatproof medium bowl, combine the white chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted.
  • Working one at a time, pour ¼ cup (60 ml) of the melted white chocolate into a silicone muffin mold. Carefully tilt the mold in a circular motion so the chocolate comes all the way up to the edge, without overflowing. If any chocolate spills over the mold, simply wipe it clean with a damp paper towel. Let any excess chocolate drip back into the bowl of melted chocolate. Set the filled cup on a baking sheet and repeat with the remaining molds and melted chocolate. Freeze the cups for at least 30 minutes, until solid.
  • Gently peel the silicone molds away from the top of the chocolate cups and push up from the bottom to release the cups. If the chocolate starts to soften, immediately return to the freezer for 5-10 minutes to reharden. Set the chocolate cups on a tray and return to the freezer until ready to use.
  • When ready to serve, scoop the ice cream into the white chocolate cups.

1 pt ice cream
glossy silicone muffin tin, 6 cup

Steps:

  • In a heatproof liquid measuring cup with a pour spout, melt 7 candies of the same color for 30 seconds. Continue microwaving in 15-second intervals, if needed, until completely melted and bubbling.
  • Wearing latex gloves to protect your hands, carefully pour the molten candy into a cup of the silicone muffin mold. Gently tilt the mold in a circular motion so the melted candy comes all the way up to the edge of the mold, without flowing over. If any candy, spills over the edge of the mold, carefully wipe it clean with a damp paper towel. Repeat with the remaining candy to make 5 more cups. Chill the cups in the refrigerator for at least 30 minutes, until set.
  • Gently peel the silicone molds away from the top of the candy cups and push up from the bottom to release the cups. Carefully repeat with the 5 remaining cups. Place the candy cups on a tray and refrigerate until ready to use.
  • To serve, scoop the ice cream into the candy cups.

2 cups heavy cream
1 cup whole milk
2 tsp salt
1 tbsp dried candy cap mushrooms, ground to a coarse powder in a spice grinder (Chopping the dried mushrooms in a coffee grinder also works well and your next pot of coffee will be very special.)
3 egg yolks
1 cup sugar

Steps:

  • In a large, heavy-bottomed, nonreactive saucepan over medium heat, combine the cream, milk, and salt and cook, stirring occasionally, until hot but not boiling. Add the ground candy caps. Remove from the heat and let steep for at least 1 hour or up to 2 hours.
  • When you feel like your mushrooms are in a good place, return the pan to medium heat and bring the mixture back to hot.
  • Fill a large bowl or pan with ice and water. Place a large, clean bowl in the ice bath and fit the bowl with a fine-mesh strainer.
  • Meanwhile, in a medium bowl, whisk together the egg yolks and sugar until well blended.
  • Remove the cream mixture from the heat. Slowly pour about half of the hot cream mixture into the yolk mixture, whisking constantly. Transfer the yolk mixture back to the saucepan with the remaining cream mixture and return it to medium heat. Cook, stirring constantly with a rubber spatula and being sure to scrape the bottom of the saucepan so it doesn't scorch, until the liquid begins to steam and you can feel the spatula scrape against the bottom of the pan, 2 to 3 minutes.
  • Remove the custard from the heat and immediately pour it through the strainer into the clean bowl you set up in the ice bath. Let cool, stirring occasionally.
  • When the custard has totally cooled, cover the bowl tightly and chill in the refrigerator for at least 1 hour or preferably overnight. When you are ready to freeze the custard, transfer it to an ice cream maker and spin according to the manufacturer's instructions. Eat immediately, or transfer to an airtight container, cover, and freeze for up to 1 week.

candy cane (depends on how strong you like it)
2 cups whipping cream
1 cup milk
2 eggs
3/4 cup sugar
2 teaspoons vanilla extract

Steps:

  • Crack both eggs into a bowl and whisk until light and fluffy.
  • Slowly add sugar and whisk till blended.
  • Add whipping cream and milk and whisk together.
  • Add the vanilla extract and mix.
  • Crush candy canes and add to mixture (they should make the ice cream light pink when you add them).
  • Put mixture into ice cream maker and wait till done.
  • If you want you can save extra candy canes and add them when the ice cream is ready so you have candy cane chunks or you can not add the candy canes in the mixture and just put it in before it's put in the freezer.
