SOY-GARLIC CHICKEN WITH FRIED RICE

Soy-Garlic Chicken with Fried Rice image

Provided by Food Network Kitchen

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 12

3 tablespoons plus 2 teaspoons low-sodium soy sauce
1 tablespoon toasted sesame oil
2 teaspoons sugar
2 teaspoons sambal oelek or other hot chili paste
7 cloves garlic (6 thinly sliced, 1 grated)
1 1/4 pounds thin-sliced chicken cutlets
3 tablespoons vegetable oil
1 tablespoon minced fresh ginger
4 cups roughly chopped green cabbage (about 1/2 small head)
Kosher salt
3 cups cooked long-grain white rice, cooled
4 scallions, thinly sliced

Steps:

  • Combine 3 tablespoons soy sauce, the sesame oil, sugar, sambal oelek and grated garlic in a shallow baking dish. Add the chicken and toss to coat; set aside while you fry the garlic and make the rice.
  • Meanwhile, heat 2 tablespoons vegetable oil in a large nonstick skillet over medium heat. Add the sliced garlic and cook, stirring, until golden and crisp, 2 to 3 minutes. Remove the garlic with a slotted spoon to a plate, leaving the oil in the skillet.
  • Add the ginger to the skillet and cook over medium heat, stirring, until sizzling, about 20 seconds. Add the cabbage and a big pinch of salt. Cook, tossing, until lightly browned, 3 to 5 minutes. Add the rice and 1/2 teaspoon salt and cook, tossing occasionally, until toasted, 3 to 5 minutes. Stir in the remaining 2 teaspoons soy sauce and all but 2 tablespoons scallions; season with salt.
  • Heat another large nonstick skillet over medium heat. Remove the chicken from the marinade, add 1 tablespoon water to the marinade and reserve. Season the chicken lightly with salt. Add the remaining 1 tablespoon vegetable oil and the chicken to the skillet. Cook until browned, about 3 minutes per side, adding the marinade to the skillet during the last 30 seconds of cooking and spooning it over the chicken.
  • Divide the rice and chicken among plates. Top with the fried garlic and reserved 2 tablespoons scallions.

SOY RICE AND CHICKEN

Soy Rice and Chicken image

Adapted from Roger Ebert's _The Pot and How to Use It_ (yes, THAT Roger Ebert), this uses a rice cooker to make a luscious rice dish with bits of chicken and shiitake. Don't use a supermarket-standard soy sauce, or it will be too salty - seek out a light soy, it will be worth the effort. Adapted from an article by Caroline Russock at Serious Eats. http://bit.ly/apOK39

Provided by DrGaellon

Categories     Chicken Thigh & Leg

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 13

1/2 cup sushi rice
1/2 cup dried shiitake mushroom (if large, cut into strips)
3/4 cup low-sodium soy sauce
4 tablespoons oil, divided
1 slice fresh ginger, cut into thin strips
3/4 cup diced raw chicken thigh
2 tablespoons low-sodium soy sauce
3 1/2 cups long-grain white rice
2 garlic cloves, squashed
1/2 white onion, sliced into half-rings
3 tablespoons low-sodium soy sauce
4 1/2 cups cool water
salt

Steps:

  • Rinse the sushi rice under running water until it runs clear. Cover with cold water and set aside to soak.
  • Cover shiitake pieces with 3/4 c soy sauce and set aside to soak until soft.
  • In a non-stick pan, heat 2 tbsp oil over medium heat until it shimmers. Add ginger and stir until fragrant, 1-2 minutes. Add chicken and 2 tbsp soy sauce; stir-fry until chicken is cooked through, 3-4 minutes. Set aside on a plate until thoroughly cool (this is important, or the rice cooker will shut off early).
  • Rinse regular rice under running water until it runs clear; drain well. Drain sushi rice well and set both aside.
  • Squeeze the shiitake mushrooms dry, but save the soy sauce.
  • In the same non-stick pan, heat the remaining oil over medium heat until shimmering. Add the onions and garlic and stir-fry until garlic is fragrant, 60-90 seconds. Add the mushrooms and stir-fry 2 minutes. Add all the rice and 3 tbsp soy sauce and very quickly stir-fry until rice is coated with oil and soy, about 1 minute.
  • Transfer rice and chicken to rice cooker. Add 4 1/2 cups water and the reserved soy sauce used to soak the mushrooms. Add a pinch of salt. Stir vigorously for 5-6 minutes to dissipate heat (or the cooker will not sense correctly). Cover and press the rice cooker button; cook until it finishes its cycle.

HONEY & SOY CHICKEN

Honey & soy chicken image

This crowd-pleasing honey and soy chicken is great for family meals, buffets and picnics. Serve with rice and salad or steamed greens

Provided by Roopa Gulati

Categories     Dinner

Time 45m

Number Of Ingredients 11

8 skin-on chicken thighs (about 1kg)
4 tbsp honey
4 tbsp dark soy sauce
4 tbsp lemon juice
4 tbsp tomato ketchup
30g ginger, peeled and finely grated
4 garlic cloves, crushed
½ tsp red chilli flakes
2 tsp fennel seeds, toasted and ground using a pestle and mortar or spice grinder
1 tbsp sunflower oil
spring onions, rice and salad or greens, to serve

Steps:

  • Using a sharp knife, score the chicken thighs twice through the skin, season and transfer to a bowl.
  • Whisk the honey with the soy, lemon juice, ketchup, ginger, garlic, chilli flakes and fennel seeds. Pour this over the chicken, making sure that each piece is coated, then cover and marinate in the fridge for at least 2-3 hrs, or overnight if you have time.
  • Heat the oven to 200C/180C fan/ gas 6. Line a large roasting tin with foil and put in the oven to heat up for 10 mins. Gently shake the excess marinade off the chicken thighs, reserving the bowl of leftover marinade, then carefully arrange in a single layer in the hot tin. Drizzle with the oil and roast for 10 mins.
  • Meanwhile, pour the reserved marinade into a small pan and bring to the boil over a medium-low heat, stirring often. Cook for 7-10 mins, or until thick and syrupy.
  • Remove the chicken from the oven and carefully pour any juices from the tin into the pan with the syrupy sauce and continue to cook for 5 mins until the sauce is the consistency of double cream.
  • Spoon the sauce over the chicken, then return the roasting tin to the oven for 10-15 mins more, or until the thighs are sticky and tender, and the juices run clear when pierced with a knife. Slice some spring onions along their length and scrape a knife along the shreds to curl them, if you like, then scatter over the chicken. Serve warm or at room temperature with rice and salad or steamed greens.

Honey & soy chicken with sesame broccoli image

Enjoy these sticky honey and soy chicken thighs as part of an easy midweek meal. This budget-friendly dinner is sure to be a family favourite

Provided by Sophie Godwin - Cookery writer

Categories     Dinner, Main course, Supper

Time 55m

Number Of Ingredients 8

3 tbsp soy sauce
3 tbsp honey
2 tbsp oil
1 tbsp garlic & ginger paste
8 skin-on chicken thighs
1 large head broccoli , cut into florets
1 tbsp sesame seeds
rice , to serve (optional)

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix the soy, honey, 1 tbsp of the oil and ½ tbsp garlic & ginger paste in a bowl. Pour over the chicken thighs and leave to marinate if you have time, but don't worry if not - they will be delicious either way. Tip the chicken with all the marinade into a roasting tin, skin-side up. Cook for 45 mins until sticky and the skin is crispy.
  • When the chicken has 15 mins left, start cooking the rice following pack instructions, if using, and heat the remaining oil in a frying pan. Add the remaining garlic & ginger paste, sizzle for 1 min, then tip in the broccoli along with a splash of water. Cover and cook for 10 mins until tender, then take the lid off, tip the sesame seeds into the pan and give everything a good toss around. Season. Serve with the chicken, and all the caramelised bits from the bottom of the tin.

SOY SAUCE CHICKEN

Soy sauce chicken image

Make a homemade version of soy sauce chicken (see yao gai), a classic Chinese dish. This recipe has a less labour-intensive method that you can do at home

Provided by Thy Lundkvist

Categories     Dinner

Time 1h5m

Number Of Ingredients 13

1kg skin-on and bone-in chicken thighs (6-7 thighs)
1 tbsp rapeseed oil
4 spring onions, 3 cut in half, 1 finely sliced on an angle, to serve
thumb-sized piece of ginger, grated
3 star anise
2 bay leaves
240ml light soy sauce
2 tbsp dark soy sauce
1 tbsp oyster sauce
2 tbsp Shaoxing rice wine, or Chinese rose wine (or use sherry)
3 tbsp dark brown sugar
1 tbsp cornflour mixed with 1 tbsp water
cooked jasmine rice and steamed greens (we used broccoli and pak choi), to serve

Steps:

  • Season the chicken with salt and set aside. Heat the oil in a wok or large frying pan over a medium heat, add the halved spring onions, ginger, star anise and bay leaves. Stir-fry for 5 mins until fragrant and the spring onions turn slightly golden.
  • Pour in the light soy sauce, dark soy sauce, oyster sauce, Shaoxing rice wine, 2 tbsp of the sugar and 480ml water. Turn the heat up to high and bring the liquid to the boil.
  • Slide in the chicken thighs, skin-side down, arranging them in a single layer. Add water if needed to just about cover the chicken.
  • Turn the heat down low, cover the wok or pan and simmer for 35 mins. Turn the thighs over and cook covered for another 10 mins.
  • Remove the chicken to a plate. When the thighs are cool enough to handle, remove the bones and slice into pieces about 1cm thick. Arrange on a serving dish.
  • While the chicken is cooling, strain 150ml of the braising liquid into a small pan and discard the solids. Put the pan over a medium heat and just before it starts to boil, add the cornflour mixture and remaining brown sugar. Once the sauce reaches your desired thickness, remove from the heat. (It should be thick enough to coat the back of a spoon.) Pour it over the sliced chicken or serve in a bowl on the side for dipping. Garnish with the sliced spring onion. Serve with jasmine rice and steamed greens, or vegetables of your choice.
