CANDIED BACON GOAT CHEESE TOASTS W/ HONEY LAVENDER DRIZZLE

Candied Bacon Goat Cheese Toasts w/ Honey Lavender Drizzle image

Time 35m

Yield 6 - 8 toasts

Number Of Ingredients 6

10 oz applewood smoked bacon
1/3 cup good quality maple syrup
1/4 - 1/3 cup honey
1 drop lavender oil
6 - 8 slices sourdough bread
5 oz goat cheese

Steps:

  • Pre-heat oven to 350F. Fit a wire rack inside a baking sheet, then line with strips of bacon. Using a pastry brush, coat the bacon strips on both sides with approximately 3 tablespoons of the maple syrup, then bake on oven middle rack for 25 minutes until crisp but not overdone. Once cooked, immediately coat the bacon on both sides with the remaining maple syrup, then allow to cool. Meanwhile, in a small mixing bowl combine the honey and lavender oil. Start with 1/4 cup honey, then add more if the lavender taste is a bit strong for your liking. Toast the sourdough bread to your desired level of crispiness. When ready, compose the toasts with a thick schmear of goat cheese, candied bacon, and drizzles of lavender honey. Eat immediately!

CREAMY GOAT CHEESE, BACON AND DATE DIP

Creamy Goat Cheese, Bacon and Date Dip image

This appetizer is like a bacon-wrapped date in dip form - and every bit as luxe, sweet and simultaneously smoky as that sounds. Here, as you swipe crusty bread through the smooth cheese, you'll gather chunks of bacon and a bit of date, toffee-like from a quick fry in the meaty fat. You could embellish further, with nuts, chile or honey, or you could sip Champagne and dig in just as merrily - with friends hovering nearby for their turn.

Categories     dips and spreads, appetizer

Time 30m

Yield 6 to 8 servings

Number Of Ingredients 8

10 ounces goat cheese, at room temperature
4 ounces cream cheese, at room temperature
2 tablespoons freshly squeezed lemon juice
Salt and pepper
5 ounces thick-cut bacon, cut in 1/2-inch thick
10 Medjool dates, pitted and cut into quarters lengthwise, or roughly chopped
Honey, red-pepper flakes, black pepper, flaky salt, toasted sliced almonds or chopped pistachios, for garnish (optional)
Crusty bread, grainy crackers, endive or fennel, for serving

Steps:

  • Heat oven to 400 degrees. In a medium bowl, stir together the goat cheese, cream cheese, lemon juice and a pinch each of salt and pepper. Transfer to a 1-quart baking dish or ovenproof skillet, and spread into an even layer. Bake until warmed through and bubbling, about 20 to 25 minutes.
  • Meanwhile, cook the bacon in a medium skillet over medium-low heat, stirring occasionally, until golden and crisp, about 10 minutes. Using a slotted spoon, transfer the bacon to a paper towel-lined plate, then add the dates to the bacon fat in the skillet, and cook, stirring occasionally, until the insides are warm and the outsides blister, about 1 minute.
  • Top the baked cheese with the dates and bacon, and garnish as you wish. Serve at once.

HOW TO MAKE CANDIED BACON

How to Make Candied Bacon image

Making candied bacon is one of those a-ha moments-why didn't I ever do this before? The magic happens in the oven and only takes half an hour. Eat it as is, crumble it over salad, or use it to garnish a Bloody Mary. We don't need to tell you what to do with bacon, right?

Time 30m

Yield 6

Number Of Ingredients 3

12 strips bacon (not thick-cut, about one pound)
1/4 cup light brown sugar
1/2 teaspoon freshly ground black pepper (optional)

Steps:

  • Store the bacon: Candied bacon can be kept in the fridge for a few days and reheats well in a skillet over low heat. I don't think candied bacon is worth freezing, although if you made a huge batch you absolutely could. You could just want to make sure to freeze the strips individually so they didn't stick together.

CANDIED BACON WITH GOAT CHEESE

Candied Bacon With Goat Cheese image

This appetizer comes from the forthcoming "Cooking the Cowboy Way: Recipes Inspired by Campfires, Chuck Wagons and Ranch Kitchens" by Grady Spears with June Naylor.

Categories     Pork

Time 25m

Yield 20 serving(s)

Number Of Ingredients 5

1/2 cup dark brown sugar
1/2 cup light brown sugar
1 tablespoon fresh coarse ground black pepper
20 slices good-quality thick-cut thick slab bacon
1/2 cup goat cheese, at room temperature

Steps:

  • In a medium bowl, combine the sugars with the pepper, mixing until well blended. Line two cookie sheets with parchment paper or quick-release foil (regular foil works just as well) and spread the sugar mixture over the sheets. Press one strip of bacon at a time into the sugar mixture, then flip it over to coat the other side. Place the bacon strips side by side on the sugar as you finish, to form a single layer in the pan.
  • Repeat with the remaining bacon on the other cookie sheet. Preheat the oven to 400 degrees. Place the cookie sheets in the oven and bake for 15 to 20 minutes, or until the bacon is darkened and cooked through. Remove sheets from oven and let cool for 5 to 7 minutes.
  • Once the bacon has cooled and hardened, cut the strips in half and top each with a dollop of goat cheese.
