Delicious frosting for my "Fudge Cake" or any chocolate cake recipe! Very decadent! (Cook time is after mixture comes to rolling boil)

Yield 1 batch of frosting for layer cake or oblong cake

Number Of Ingredients 7

2 cups sugar
1/4 cup light corn syrup
1/2 cup milk
1/2 cup shortening
2 ounces unsweetened chocolate, cut up (or 6 TBSP.cocoa plus 4 tsp. shortening)
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients except vanilla in sauce pan.
  • Stir over low heat until chocolate and shortening melt.
  • Bring to a full rolling boil, stirring constantly.
  • Boil 1 minute.
  • Remove from heat and beat until lukewarm.
  • Add vanilla.
  • Beat until looks ready to spread.
  • Use to frost my Fudge Cake or your favorite chocolate cake recipe!

1 bag (12 oz) white vanilla baking chips (2 cups)
1 container Betty Crocker™ Rich & Creamy vanilla frosting
Betty Crocker™ green and red gel food colors

Steps:

  • Line 8-inch square pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large microwavable bowl, microwave white chips uncovered on High 1 minute. Spoon frosting over chips. Microwave on High 30 seconds; stir. If necessary, continue to microwave in 15-second increments until mixture can be stirred smooth.
  • Place 3/4 cup fudge mixture into each of 2 small bowls, leaving remaining untinted fudge mixture in bowl. Tint 1 bowl green and 1 bowl red by stirring in each food color to desired color.
  • Drop heaping tablespoons of green, red and white fudge mixture in bottom of pan to create random pattern. Pull table knife through layers for marbled design. Refrigerate uncovered until set, about 1 hour.
  • Remove from pan by lifting foil; peel foil away. Cut into 8 rows by 8 rows. Store covered in refrigerator.

This frosting uses flour to thicken it and keep it together, rather than the cooked protein structure of egg whites (Classic Butter Cream and 7 Minute Frosting), or the strong bond between butter and air (Classic Butter Cream and Quick Vanilla Butter Cream). After making all four frosting recipes, we've done most types except a Swiss Buttercream which is similar to a 7 minute, where you heat the egg whites with sugar, but for not as long and then you add creamed butter to it. There are also ganache frostings which start with melted chocolate and blend liquids into it like cream, corn syrup, vanilla, etc., and are never whipped, to make a shiny more dense chocolate frosting. There's also cream cheese frostings where you beat the cream cheese until very fluffy and add ingredients for sweetness and flavor.

Ladies I am here to tell ya this is the easiest and most delicious fudge you will ever eat. My sister, Sue, found this recipe and I was hooked when she gave me a sample of it not long ago. There are several options..so have fun with it and enjoy! Talk about simple!

THIS RECIPE IS FOR PEANUT CHOCOLATE FUDGE....BELOW IN THE DIRECTIONS THERE ARE MORE OPTIONS TO TRY
1 12 ounce pkg semisweet chocolate chips
1 can(s) milk chocolate cream supreme frosting
1 c peanut butter chips
1/2 c chopped nuts...pecans, walnuts..your choice

Steps:

  • 1. DO NOT use "whipped" frosting in a can, be sure to use regular frosting. Line 8 inch square pan with foil extending foil over edges lightly butter foil, melt chips in large saucepan over very low heat stirring until smooth; remove from heat and stir in frosting. Pour into 8 inch foiled lined pan and refrigerate for 1 hour. This step #1 is also the basic directions for each of the following fudge recipes below...
  • 2. ROCKY ROAD FUDGE: 1- 12 ounce semi sweet chocolate chips, 1 can pillsbury chocolate supreme frosting, 1-1/2 cups mini marshmallows, and 3/4 chopped nuts. Use same directions as described in step #1 Be sure to add marshmallows and nuts after chocolate has been removed from the heat for a little while, so as not to melt the marshmallows.
  • 3. FUNFETTI FUDGE: 1- 12 ounce bag white/vanilla chips, 1 can pillsbury pink vanilla cream supreme frosting, 1-1/2 cups mini marshmallows. Go to step #1 and follow directions. Do not add marshmallows while fudge mixture is still extremely hot. (I am not sure about the pink vanilla frosting..I believe you need to add food coloring to achieve the pink color for the vanilla frosting in the tub...)
  • 4. TOFFEE BUTTERSCOTCH FUDGE: 1- 12 ounce pkg. butterscotch chips, 1 can pillsbury caramel pecan creamy supreme frosting, 1/2 cup chopped peanuts, 1/2 cup almond brickle chips. Go to step #1 and follow directions.
  • 5. PEPPERMINT SWIRL FUDGE: 1- 12 ounce pkg. white/vanilla chips, 1 can pillsbury vanilla creamy supreme frosting, 1/2 tsp. peppermint extract, 4 drops red food coloring, 2 Tablespoons peppermint candy pieces, crushed. Prepare pan as above, melt chips then remove from stove top stir in frosting, peppermint extract and then spread into 8 inch pan..sprinkle crushed candy pieces on top and now take a knife and make swirls with the knife to make it a marble look...and refrigerate for 1 hour before serving.

A rich, fudgy icing that can be piped or used to frost a cake, this Chocolate Fudge Frosting is a great alternative to buttercream. It's also a simple, no fuss recipe!

3 oz. unsweetened chocolate
1/2 cup (1 stick) butter
4 cups (about 1 pound) powdered sugar
1 tsp. vanilla extract
1/2 cup milk

Steps:

  • Put about an inch of water in the bottom of a medium pan and place it over medium-low heat and let it heat to steaming, but not boiling. Place the butter and chocolate in a heat-proof bowl- I like to use the bowl from my KitchenAid Mixer. Put that on top of the pan of steaming water and allow it to melt, stirring occasionally with a rubber spatula.
  • Once the chocolate and butter have completely melted, remove them from the heat. Add in the powdered sugar. Use the whip attachment on your stand mixer, or use a hand mixer to beat in the powdered sugar. Start on low to avoid a powdered sugar explosion, then slowly turn up the speed as it is incorporated. The mixture will look lumpy and thick. Add in the milk and vanilla and beat until the frosting is smooth and fairly runny. Be sure to scrape the sides of the bowl and beat in any lumps or splashes until smooth.
  • Allow the frosting to cool for an hour or two. It should thicken to a nice consistency for piping and frosting cake layers.

1 tub (1 lb) Vanilla Frosting (I used Pillsbury frosting)
1 jar (16.3 oz) Creamy Peanut Butter (I used Jif, a jar is 1 3/4 cups peanut butter)

Steps:

  • Line a 9 x 9 inch dish with foil and set aside.
  • In a microwave safe bowl, add Vanilla Frosting and Peanut Butter, do not stir. Microwave 1 minute. Stir until until combined and smooth. Pour into pan and spread until even. Refrigerate until firm.
  • Remove fudge from the pan using foil and cut into squares.

Add both chocolates; whisk until smooth. Whisk in vanilla. Pour chocolate mixture into large bowl. Sift in powdered sugar and cinnamon; whisk to blend. Press plastic onto surface of frosting. Chill just until firm enough to spread, stirring occasionally, about 1 1/2 hours.
