1/2 lb pork sausage
2 garlic cloves, chopped
4 ounces green chilies
6 (8 inch) tortillas
16 ounces refried beans
1/2 cup banana pepper, sliced
1/2 cup red pepper, roasted
2 cups monterey jack cheese, shredded

Steps:

  • Preheat oven to 400 degrees. Grease a 9 inch pie plate.
  • In a large skillet cook pork sausage, garlic, and green chilies, breaking up sausage into small pieces.
  • In the bottom of the pie plate, layer two tortillas, 1/2 each of refried beans, sausage mixture, banana peppers, red peppers, and cheese. Repeat layers ending in tortillas and then cheese.
  • Cover with foil and bake for 40 minutes. Slice into pieces.

Got the idea for this from another recipe on this site but changed it around enough that thought I'd add this recipe to the site. If you like tacos, thinking you'll like this one. Add any of your favorite taco topping and serve with a dollop of sour cream and maybe guacamole. You'll need an 8minch springform pan

1/2 lb pork sausage
1/2 lb ground beef
3 tablespoons taco seasoning (to taste)
4 ounces green chilies
16 ounces refried beans
1/2 cup sweet red pepper, roasted and sliced thin
1/2 cup onion, sliced thin
1 teaspoon garlic powder (to taste)
1/2 cup green bell pepper, roasted and sliced thin
1 (8 inch) bag tortillas
3 cups Mexican blend cheese, shredded
1/4 cup sour cream, for garnish

Steps:

  • Prepare 8 inch springform pan by greasing well.
  • Preheat oven to 400 degrees.
  • In large skillet cook pork and beef mixture.
  • Remove meat and saute peppers, onions and garlic in same pan.
  • In bottom of springform pan, layer tortilla, refried beands, meat mixture, green chilies, and sweet pepper and onion mixture.
  • Top with cheese.
  • Repeat layers until pan is full, ending with tortilla and cheese.
  • Cover with foil and bake for 40 minutes.
  • Remove from oven and allow to sit for 10 minutes, loosen edges around pan and remove tart.
  • Slice and serve topped with a dollop of sourcream.

Here, bacon is the star: thick slices of bacon are brushed with a fiery spice paste and roasted until crisp. It's the foundation for this Mexican-style torta sandwich made with homemade salsa and Oaxaca cheese.

For the salsa:
1 1/2 pounds tomatoes, halved if large
1 small onion, quartered
4 cloves garlic, unpeeled
3 jalapeno peppers, halved lengthwise and seeded
3/4 cup fresh cilantro (leaves and tender stems), coarsely chopped
1 teaspoon apple cider vinegar
Kosher salt
For the bacon:
2 tablespoons ancho chile powder
1/2 teaspoon cayenne pepper
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
Pinch of ground cloves
3 cloves garlic, roughly chopped
2 tablespoons apple cider vinegar
1 pound thick-cut bacon
For the sandwiches:
4 Portuguese rolls or soft hero rolls
8 ounces Oaxaca cheese or salted mozzarella, shredded
3 tomatoes, sliced
1/2 small head iceberg lettuce, shredded

Steps:

  • Make the salsa: Preheat the broiler. Line a baking sheet with foil and add the tomatoes, onion, garlic and jalapenos (cut-side down). Broil, turning as needed, until the tomatoes and onion char and the garlic softens, 6 to 8 minutes. Let cool, then peel the garlic. Coarsely chop the tomatoes, onion, garlic and jalapenos; transfer to a bowl. Stir in the cilantro, vinegar and 1/2 teaspoon salt.
  • Make the bacon: Preheat the oven to 350 degrees F. Line a baking sheet with foil and set a wire rack on top. Combine the chile powder, cayenne, oregano, cumin and cloves in a small bowl; stir in the garlic, vinegar and 1 tablespoon water. Lay the bacon on the rack in a single layer; brush with the spice paste. Bake until the fat starts to render, about 15 minutes. Flip using tongs, then continue baking until browned, 10 to 20 more minutes, depending on the thickness of the bacon. Drain on paper towels and let cool until slightly crisp.
  • Assemble the sandwiches: Halve the rolls and pull out some of the bread from the insides. Lightly toast in the oven, 5 to 7 minutes. Spread some of the prepared salsa on the bottom half of each roll, then top with a layer of cheese, a few pieces of bacon, some tomato slices and lettuce. Top with more salsa, then cover with the roll tops, pressing them down. Cut in half with a serrated knife.

2 cups shredded Pepper Jack cheese, divided
1 (16 ounce) can refried beans, divided
1 (7 ounce) jar roasted red peppers, drained

Steps:

  • In a large skillet or frying pan, cook chorizo, onion and garlic over medium heat. Cook, stirring occasionally, until sausage is done. Drain off grease, stir in chilies and set aside.
  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 10 inch pie plate.
  • Place 2 tortillas in pie plate. Spread half of the sausage mixture over tortillas. Sprinkle with half of the cheese. Place 2 tortillas on top of cheese. Spread with beans. Place 2 tortillas on beans and place peppers on tortillas. Place 2 tortillas on top of peppers. Spread with remaining sausage mixture. Sprinkle with remaining cheese.
  • Cover and bake in preheated oven for 40 minutes. Uncover and bake 15 minutes more, or until cheese is melted and center is hot. Cool 10 minutes before cutting.
