CAMP CHILI
A favorite at hunting camp. This is a quick, one pot meal using ground beef, beans and rice. Serve with crushed red pepper flakes and hot pepper sauce on the side for individual tastes.

Steps:
- In a large pot over medium high heat, saute the ground beef for 5 minutes. Add the onions and garlic and saute for 5 to 10 more minutes.
- Add the pork and beans, kidney beans, tomatoes, chili powder, beer and season with salt and pepper to taste. Stir thoroughly and reduce heat to medium low.
- Cover and simmer for 1 to 1 1/2 hours, stirring occasionally.
- Cook the rice according to package directions. Serve the chili over the rice.

SKYLIKE CHILI - SKYLINE CHILI COPYCAT
A copycat of Skyline Chili, true Cincinnati chili, except it's less greasy! I combine all the dry spices times ten and keep the "Skyline Spice Mix" in a jar cannister. One batch of chili will use 3/8 cup of spice mix. The spice mix is also tasty as a meat rub for steak, pork and chicken.

Steps:
- Brown ground beef and onion.
- Drain.
- Add beef stock to beef mixture and simmer 10 minutes.
- Add remaining 13 ingredients, simmer uncovered 1 hour.
- Remove bay leaf, skim off extra fat.
- Serve over hot spaghetti, or hot dogs in buns for chili dogs.
- Top with plenty of cheese and other optional toppings.

- • Simmer the garlic and onions in oil, then add our special secret spices and then the ground beef. • The Spices are so top secret, we actually keep them in a secret spice room and no one can go in it ever! But if you were making it at home, you want to make sure you have at least hot chili powder, paprika and dry mustard. • After you add the spices, add plenty of salt and mix everything until the meat loses its redness. • Add tomato paste and water and bring it to a simmer/gentle boil. In a few hours, you've got chili. • Just pour it over spaghetti, top with cheese and serve!

- Begin by prepping the chipotles. Most of the heat in the peppers are housed in the seeds and ribs, so we strongly recommend scraping out all of the seeds before adding the peppers to the chili, especially if using the entire can. Using a fork, remove the desired number of peppers from the can. Reserve the adobo sauce. Slice them open, and then using the back of your knife, scrape out and discard the seeds & ribs. Roughly chop the peppers and set them aside.
- In a large dutch oven, heat the olive oil over medium heat until shimmering. Add the onions and saute until they begin to soften and turn translucent. Add the drained kidney and black beans, tomatoes and their juices, chopped chipotles and the adobo sauce, beer, salt and spices. Stir to combine.
- Cook the chili until thickened to your liking, about 20 minutes was perfect for us. Serve immediately with your choice of toppings (cheese, avocado, green onions, etc) and cornbread on the side!
