This recipe for Mrs. Milman's Chocolate Frosting is one of our all-time favorites. Make it with our recipe for Moist Devil's Food Cake.

Yield Makes 6 cups

24 ounces Nestle semisweet chocolate morsels
4 cups whipping cream
1 teaspoon light corn syrup

Steps:

  • Place chocolate morsels and cream in a heavy saucepan. Cook over low heat, stirring constantly with a rubber spatula, until combined and thickened, between 20 and 25 minutes. Increase the heat to medium low; cook, stirring, 3 minutes more. Remove pan from heat.
  • Stir in corn syrup. Transfer frosting to a large metal bowl. Chill until cool enough to spread, about 2 hours, checking and stirring every 15 to 20 minutes. Use immediately.

1/3 cup butter
1 cup semisweet chocolate, mini-morsels (Nestles)
1/4 teaspoon salt
1 teaspoon vanilla
3 cups confectioners' sugar, sifted
5 tablespoons milk

Steps:

  • In small saucepan, melt butter. Stir in mini-morsels until melted.
  • Add salt and vanilla.
  • Gradually beat in confectioner's sugar and milk until creammy and fluffy. I beat this for a good 10 minutes. The longer you beat it, the creamier it gets.
  • Makes enough to fill and frost 2 layers (about 2 1/4 cups of frosting).

1 1/2 sticks (6 ounces, 170.1 g) unsalted butter, softened
1 1/2 cups (150 g) unsweetened cocoa powder, sifted
1/3 cup (110 g) corn syrup
1/2 cup (118 g) water
2 teaspoons (8.67 g) vanilla extract
1/2 teaspoon (2.85 g) salt
3 cups (360 g) powdered sugar, sifted

Steps:

  • Blend the butter with the cocoa powder in the bowl of a stand mixer fitted with the paddle attachment. Add the corn syrup and mix until very thick and smooth. Scrape down the bowl.
  • Bring the water to a boil in a small pot, or heat in the microwave until boiling in a heatproof bowl. With the mixer running on low, gradually add the hot water into the butter mixture. Add the vanilla and salt, and scrape down the bowl.
  • Add the powdered sugar a little at a time to the bowl and beat for 2 minutes on high speed, until the icing is completely smooth, glossy, and thick.
  • Decorate as you wish!

1 (397 g) can condensed milk
400 g sugar or 500 ml sugar
25 ml golden syrup
75 ml water
60 g butter
5 ml vanilla

Steps:

  • Put sugar and water into a large heavy saucepan.
  • Stir over a low heat until the sugar has dissolved.
  • Add the butter and syrup and stil until the butter has melted.
  • Add the condensed milk and stir until it comes to the boil.
  • Boil very slowly, stirring all the time, until soft ball stage.
  • Remove from the stove, add the vanilla and beat until it thickens.
  • Pour into a greased pan and leave to cool.
  • Cut into squares when cold.

2 cups sugar
1/4 cup light corn syrup
1/2 cup milk
1/2 cup shortening
2 ounces unsweetened chocolate, cut up (or 6 TBSP.cocoa plus 4 tsp. shortening)
1/4 teaspoon salt
1 teaspoon vanilla extract

Steps:

  • Mix all ingredients except vanilla in sauce pan.
  • Stir over low heat until chocolate and shortening melt.
  • Bring to a full rolling boil, stirring constantly.
  • Boil 1 minute.
  • Remove from heat and beat until lukewarm.
  • Add vanilla.
  • Beat until looks ready to spread.

  • Line an 8 inch baking pan with foil.

  • Remove from heat.

I make this every Christmas. I haven't tried the substitutions yet although I've been tempted to try the semisweet morsels. Simple to make with delicious results. Time does not include chill time.

2 tablespoons butter
2/3 cup undiluted evaporated milk
1 1/2 cups granulated sugar
1/4 teaspoon salt
2 cups miniature marshmallows
2 cups milk chocolate chips
1/2 cup chopped pecans or 1/2 cup walnuts
1 teaspoon vanilla extract

Steps:

  • Combine butter, evaporated milk, sugar and salt in medium, heavy saucepan. Bring to a boil over medium heat, stirring constantly. Boil for 4 to 5 minutes, stirring constantly. Remove from heat.
  • Stir in marshmallows, morsels, nuts and vanilla. Stir vigorously for 1 minute or until marshmallows are melted. Pour into foil-lined 8-inch square baking pan; chill until firm. Cut into 1 1/2 inch squares.
  • BUTTERSCOTHCH FUDGE: Substitute 2 cups (12oz package) butterscotch flavored morsels for Milk Chocolate Morsels.
  • MINT FUDGE: Substitute 1 1/2 cups (10 0z package) mint flavored chocolate morsels for Milk Chocolate Morsels.
