FRESH PAPAYA JAM

Fresh Papaya Jam image

I have a tree in my backyard and needed to get the large papayas used up. So here is a delicious jam recipe.

Provided by Angel

Categories     Side Dish     Sauces and Condiments Recipes     Canning and Preserving Recipes     Jams and Jellies Recipes

Time 5h5m

Yield 64

Number Of Ingredients 4

5 cups mashed ripe papaya
¼ cup orange juice
1 ⅓ (1.75 ounce) packages dry pectin
5 cups white sugar

Steps:

  • Stir together papaya, orange juice, and pectin in a very large pot over medium-high heat until it begins to boil. Stir constantly as the mixture heats. Once boiling, stir in the sugar, and return to a boil, stirring constantly. Once the jam has returned to a boil, start a timer, and boil for exactly 1 minute.
  • Ladle the hot jam into the hot, sterilized canning jars and seal with lids and rings. Allow to cool to room temperature, and refrigerate any jars that do not seal.

FRESH CORN MUFFINS (CAMEROON)

Fresh Corn Muffins (Cameroon) image

This recipe was featured on week 46 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and Cameroon is my 46th stop. Unless otherwise noted, my Travel by Stove recipes are taken from authentic or traditional sources, and this recipe has been posted without any alternations or additions to the ingredients. This interesting take on corn muffins doesn't use flour - just baking soda and salt. The result is a very flavorful muffin that is great as a side dish.

Provided by GiddyUpGo

Categories     Corn

Time 35m

Yield 4-6 muffins

Number Of Ingredients 3

4 ears fresh corn
2 1/2 teaspoons baking powder
1/2 teaspoon salt

Steps:

  • Grate the corn off the cobs. (The original recipe said you could use frozen corn, but I don't think the results would be as good).
  • Add the baking powder and salt.
  • Preheat your oven to 425 degrees. Grease muffin cups (I used butter) and fill up about halfway with the corn mixture.
  • Bake for 25 minutes or until a toothpick comes out clean.

SWEET CANDIED PAPAYA(CAPE VERDE)

Sweet Candied Papaya(Cape Verde) image

Also called Dulce de Papaya, this is a traditional Cape Verdean recipe for a classic dessert of papaya candied in spiced syrup. The Cape Verde islands consist of two small (volcanic in origin) archipelagos, about 400 miles off the western coast of Africa. These once uninhabited islands were first discovered by the ancient Phoenicians, then later colonized by the Portuguese.

Categories     Candy

Time 30m

Yield 1 batch

Number Of Ingredients 6

2 lbs almost ripe papayas
1 lb sugar
4 cloves
1 cinnamon stick
4 cups water
1 lemon, grated zest

Steps:

  • Peel the papaya, remove the seeds and cut the flesh either into strips or into 1" cubes.
  • Combine the water and sugar in a large pot. Heat until the sugar has dissolved then add the papaya pieces along with the cinnamon stick, cloves and lemon zest. Bring to a boil and cook over medium heat without stirring until the sugar becomes a thick syrup (about 20 minutes boiling).
  • At this point take the pan off the heat and set aside until cooled to room temperature.
  • Turn the papaya and syrup mixture into a jar and store in the refrigerator. It is typically served as a dessert with cottage (farmer's) cheese or yoghurt.

  • Prepare the jam jars by washing and sterilizing both the jars and lids. Sterilizing can be done by submerging the jars and lids in a gentle boiling water bath for 5 minutes. (Don't have the water boiling vigorously because it could cause you jars to bang against each other and chip).
  • To prepare the papaya, cut in half and scrape out and discard the seeds with a spoon. Remove the pulp from the skin with a spoon and discard the skins. Weigh the fruit and put it in a large deep cooking pot.
  • Add the sugar to the pot. Wash the 3 limes well, cut in half, and hand juice the limes directly into the pot. Add squeezed limes (rinds) to the pot.
