GINGER BEER(CAMEROON)



Ginger Beer(Cameroon) image

Called Bière de Gingembre, this is a traditional Cameroonian recipe for a classic drink of pounded ginger and pineapple thats soaked in water and which is sweetened with treacle (molasses) lightly fermented over night and bottled. You can quarter the recipe, using 1/4 pound ginger, 1/2 pineapple, 1 quart water, and about 3/4 cup plus 1/8 cup molasses. This would make about a quart.

1 lb fresh ginger, pounded in a mortar
2 ripe pineapple (unpeeled)
1 gallon boiling water
3 1/2 cups molasses (black treacle)

Steps:

  • Slice the pineapple (do not peel) and pound in a large mortar with the ginger(I use the food processor). Place in a large pot then pour over the boiling water. Set the mixture aside to cool.
  • Once the mixture has cooled to lukewarm, cover with a clean cloth and set aside to activate over night. The following day, strain the mixture, stir in the molasses until dissolved then turn into a pitcher or a bottle, chill in the refrigerator and serve.
  • You can sweeten further with sugar, if desired and add more ginger, to taste. If the ginger beer is too strong then it can be diluted with either plain or sparkling water before serving.

I found this in an issue of Clean Eating and have only slightly adapted it to my liking. I am not a fan of couscous, so I used Jasmine Rice instead. This recipe is so easy, light, quick and most importantly, delicious!

1 cup jasmine rice
1 teaspoon extra-virgin olive oil
2 teaspoons low sodium soy sauce
1/2 teaspoon ground ginger
3 garlic cloves
1/2 lb pork tenderloin, sliced into 1/2-inch to 2-inch strips
1 lime, juice of
1/4 cup minced cilantro
1 lb hawaiian papaya, peeled, seeded and cut into 1/2-inch cubes (I think you can easily use pineapple, mango, or papaya and have a hit!)

Steps:

  • Prepare rice.
  • In a large nonstick skillet, heat oil on medium for 1 minutes.
  • Add soy sauce, ginger, garlic and pork and cook for 3-4 minutes, occasionally flipping pork strips with a spatula until meat is cooked through.
  • Remove skillet from heat and stir in lime juice and cilantro.

1 cup sugar
1 tablespoon lemon juice (2 to 3 limes)
4 cups water

Steps:

  • Peel the papaya. Remove seeds and dice. Puree in a food processor or blender.
  • Blend together 3 C mashed pawpaw, water, lemon juice, and sugar. Mix well, and chill. Store in the fridge.

1 lb firm ripe fresh papaya, peeled,seeded and cut into 1/2-inch cubes (about 3 cups)
1 1/2 lbs firm ripe fresh mangoes, peeled,cut away from stone and cut into 1/2" cubes
3 cups sugar
3 tablespoons fresh lime juice

Steps:

  • Combine all ingredients in saucepan.
  • Bring to boil over moderate heat, stirring frequently.
  • Reduce heat.
  • Simmer uncovered for 30 or 40 minutes until most of the liquid has cooked away and mixture is thick, stirring often.
  • Spoon jam into hot sterilized canning jars.
  • Fill jar to within 0.125 in from top.
  • Seal quickly and tightly.

FRESH PAPAYA AND COCONUT JAM

1 (2 ounce) box dry fruit pectin
1/4 cup lemon juice

  • Cook slowly the papaya puree, grated fresh coconut, sugar and box of Sure Jell dry pectin for 15 minutes.
  • Add the lemon juice and the grated fresh ginger and cook for another 5 minutes until it is thickened.
  • Place in four sterilized pint size bottles.

1 large ripe papaya
1 lemon, juice of
900 g sugar

Steps:

  • Peel the papaya, de-seed and slice thinly. Add to a medium bowl and toss with the lemon juice and sugar to combine. Cover with plastic wrap and leave to sit over night in refrigerator.
  • The following day, add the mixture to a mortar and pound to a paste or purée in a food processor. Transfer to a medium saucepan, bring to a boil then reduce to a simmer. Continue cooking until all the moisture has evaporated, then spoon into hot, sterilized canning jars and seal with lids and rings.
  • Allow to cool to room temperature, and refrigerate any jars that do not seal. Store in a cool, dark cupboard.

  • Prepare the jam jars by washing and sterilizing both the jars and lids. Sterilizing can be done by submerging the jars and lids in a gentle boiling water bath for 5 minutes. (Don't have the water boiling vigorously because it could cause you jars to bang against each other and chip).
  • To prepare the papaya, cut in half and scrape out and discard the seeds with a spoon. Remove the pulp from the skin with a spoon and discard the skins. Weigh the fruit and put it in a large deep cooking pot.
  • Add the sugar to the pot. Wash the 3 limes well, cut in half, and hand juice the limes directly into the pot. Add squeezed limes (rinds) to the pot.
