2 cups cauliflower florets
2 teaspoons lite olive oil
1/2 cup onion, chopped
2 cloves garlic, chopped
1/2 teaspoon fresh ginger, grated
1/2 teaspoon curry powder
1/2 fresh tomato, peeled & chopped
salt (optional)

Steps:

  • Steam the cauliflower for 5 minutes, reserve 1/2 cup of the water.
  • Put the oil in a saucepan and add onion& garlic, saute until soft.
  • Stir in the curry, ginger and salt (if using).
  • Add tomatoes, bring to a simmer.
  • Add cauliflower and 1/2 cup of cauliflower water.
  • Cover and simmer for 3 minutes (longer if you want your veggies well done).
  • Remove cover to allow some of the liquid to evaporate.
  • Serve.

2 teaspoons olive oil
2 cups thinly sliced onions
2 tablespoons finely chopped peeled fresh ginger
2 tablespoons mild curry powder (stronger if you wish)
1 -2 clove garlic, smashed
10 cups cauliflower florets (about 2 medium heads)
1 cup chopped peeled seeded tomatoes
1 cup plain yogurt
1/2 cup finely chopped cilantro
1 teaspoon salt
8 lemon wedges (optional)
fresh cilantro stem (to garnish)

Steps:

  • Heat the oil in a Dutch oven over medium high heat.
  • Add onion and ginger, cover and cook 3 minutes, stirring frequently.
  • Reduce heat to medium.
  • Add curry powder and garlic, cook 30 seconds, stiring constantly.
  • Add cauliflower and next 4 ingredients (cauliflower through salt), stirring well to combine.
  • Bring to a boil, yogurt will curdle, cover reduce heat and simmer 20 minutes or until cauliflower is tender.
  • Serve with lemon wedges if desired.

This recipe was originally shown on a Food 911 episode on Food Network. I have modified the recipe to use easy-to-find ingredients. This is even better the next day.

2 tablespoons olive oil
1/2 yellow onion, finely chopped
1 tablespoon indian curry powder
1 tomatoes, chopped
1/2 head cauliflower, cut into florets (about 1/2 pound)
1 (15 ounce) can chickpeas, drained and rinsed
salt
cilantro leaf, for garnish

Steps:

  • Heat the olive oil in a large skillet or pot over medium heat.
  • Add the onion and curry powder, cook and stir for a few minutes to soften the onion.
  • Add the tomatoes and cook until the tomatoes break down and soften, about 5 minutes.
  • Stir in the cauliflower, chickpeas,and 3/4 cup of water.
  • Reduce the heat to medium-low, cover, and simmer until the cauliflower is tender, about 15 to 20 minutes.
  • Uncover, and continue cooking until the excess moisture has evaporated and the cauliflower and chickpeas are coated with a thick sauce.
  • Season with salt, to taste, and garnish with cilantro before serving.
  • Serve over a bed of rice.

this is kind of a reinterpretation of the classic aloo gobi, only not by the braise process. because the cauliflower emits so much water, it doesn't need to be braised but somewhat steamed for a lighter crisper texture.

1 head cauliflower, cut into small florets
3 large mushrooms, in 1/8 inch slices
6 -8 grape tomatoes
2 garlic cloves, crushed and finely chopped
salt
cumin
madras curry
garam masala
black pepper
cilantro
vegetable oil

Steps:

  • heat up enough vegetable oil to cover the bottom of the pan and heat until very hot.
  • saute mushrooms and garlic with some cumin.
  • add the cauliflower, tomatoes, salt, and curry powder. mix well and cover.
  • check and stir every now and then.
  • taste and adjust seasonings if necessary. turn off heat when the cauliflower softens and tomatoes have reduced to sauce.
  • add garam masala, black pepper and cilantro. mix well and cover until serving, at least 5 minutes.

2 tablespoons vegetable oil
2 medium onions, finely chopped
1 teaspoon curry powder
1/2 teaspoon ground turmeric
1/2 teaspoon ground cardamom
1 pinch ground cloves
1 pinch cayenne pepper
1 (15 ounce) can unsweetened coconut milk
1 large head cauliflower, cut into florets
1 teaspoon salt (to taste)
2 tablespoons fresh cilantro, chopped

Steps:

  • Heat oil in a large shallow saucepan over medium heat. Add onions; saute until golden and softened, 8-10 minutes.
  • Stir in curry powder, turmeric, cardamom, cloves and cayenne; cook 1 minute. Add coconut milk, cauliflower and salt. Cook, uncovered, stirring occasionally, until cauliflower is very tender, about 30 minutes. Stir in cilantro. Add additional salt, if needed.
