Steps:
- Steam the cauliflower for 5 minutes, reserve 1/2 cup of the water.
- Put the oil in a saucepan and add onion& garlic, saute until soft.
- Stir in the curry, ginger and salt (if using).
- Add tomatoes, bring to a simmer.
- Add cauliflower and 1/2 cup of cauliflower water.
- Cover and simmer for 3 minutes (longer if you want your veggies well done).
- Remove cover to allow some of the liquid to evaporate.
- Serve.

Steps:
- Heat the oil in a Dutch oven over medium high heat.
- Add onion and ginger, cover and cook 3 minutes, stirring frequently.
- Reduce heat to medium.
- Add curry powder and garlic, cook 30 seconds, stiring constantly.
- Add cauliflower and next 4 ingredients (cauliflower through salt), stirring well to combine.
- Bring to a boil, yogurt will curdle, cover reduce heat and simmer 20 minutes or until cauliflower is tender.
- Serve with lemon wedges if desired.
CURRIED CAULIFLOWER AND CHICKPEAS
This recipe was originally shown on a Food 911 episode on Food Network. I have modified the recipe to use easy-to-find ingredients. This is even better the next day.

Steps:
- Heat the olive oil in a large skillet or pot over medium heat.
- Add the onion and curry powder, cook and stir for a few minutes to soften the onion.
- Add the tomatoes and cook until the tomatoes break down and soften, about 5 minutes.
- Stir in the cauliflower, chickpeas,and 3/4 cup of water.
- Reduce the heat to medium-low, cover, and simmer until the cauliflower is tender, about 15 to 20 minutes.
- Uncover, and continue cooking until the excess moisture has evaporated and the cauliflower and chickpeas are coated with a thick sauce.
- Season with salt, to taste, and garnish with cilantro before serving.
- Serve over a bed of rice.

CURRIED CAULIFLOWER OR "GOBI GOBI"
this is kind of a reinterpretation of the classic aloo gobi, only not by the braise process. because the cauliflower emits so much water, it doesn't need to be braised but somewhat steamed for a lighter crisper texture.

Steps:
- heat up enough vegetable oil to cover the bottom of the pan and heat until very hot.
- saute mushrooms and garlic with some cumin.
- add the cauliflower, tomatoes, salt, and curry powder. mix well and cover.
- check and stir every now and then.
- taste and adjust seasonings if necessary. turn off heat when the cauliflower softens and tomatoes have reduced to sauce.
- add garam masala, black pepper and cilantro. mix well and cover until serving, at least 5 minutes.

- Heat oil in a large shallow saucepan over medium heat. Add onions; saute until golden and softened, 8-10 minutes.
- Stir in curry powder, turmeric, cardamom, cloves and cayenne; cook 1 minute. Add coconut milk, cauliflower and salt. Cook, uncovered, stirring occasionally, until cauliflower is very tender, about 30 minutes. Stir in cilantro. Add additional salt, if needed.
