Steps:
- Cut onions in large chunks and chop cilantro.
- put chicken in a very large pot. I cut the legs off of the thighs.
- Cover with water.
- Add bouillon cubes.
- Bring to a boil
- Add whole garlic cloves, onions, salt,and cilantro.
- Lower heat and simmer 1 hour and fifteen minutes.
- While chicken cooks peel and cut potatoes into large pieces.
- Cut zucchini and squash into 1.5 inch slices.
- Cut celery into 1 inch pieces.
- Quarter the cabbage.
- Cut corn into 3 inch pieces.
- Remove any fat at this point if you wish and you can take skins off chicken.
- Add potatoes and corn cook for 20 minutes.
- Add squash, zucchini,and celery cook 10 minutes.
- Add cabbage and cook for 15 more mins or until cabbage and squash are soft.

Steps:
- Rinse and dry chicken and place in stockpot. Add the corn on the cob nibblers with the chicken. Cover with water and season with salt.
- Add onion, bay leaves and garlic and let simmer for about 20 minutes (longer if using bigger pieces of chicken).
- Add the carrots, celery ribs, chayote, and potatoes and cook until vegetables are near tender.
- Add the cabbage, add more salt if needed and add pepper. Let simmer for about 5-10 minutes until cabbage is tender.
- Serve and garnish with cilantro, diced onion, and lime wedges. Adjust to taste with lime wedges.
MEXICAN CHICKEN SOUP (CALDO DE POLLO)
Sometimes I add a chopped tomato - nice easy soup with lots of flavour. Some people like to roast the whole cloves of garlic and then remove them when they remove the chillies. You can use dried chillies if you wish. Make it as hot or as mild as you want. Mexican does not have to burn your throat (although I love it that hot!)

- Place the carrots, stock, browned garlic, oregano, chilies, cumin and salt in a dutch oven (5-quart) and bring to a boil.
- Add the whole chicken breasts, cover and simmer until chicken is cooked, approx 15 minutes.
- Remove chicken to a plate to cool about 10 minutes.
- Remove the chillies from the soup and adjust the seasoning.
- Remove the skin and bones from the chicken and tear it into coarse shreds.
- Add zucchini and chicken to the pot simmer 5 minutes.
- Add cilantro and serve in about 2 minutes with wedges of lime on the side.

- Combine 6 cups chicken broth, water, chicken tenders, chicken bouillon cubes, olive oil, granulated garlic, cumin, salt, and pepper in a large pot; bring to a boil. Reduce heat, cover pot, and simmer until chicken is cooked through, about 25 minutes. Gently shred chicken using 2 forks. Add onion to broth and simmer for about 5 more minutes.
- Bring 2 cups chicken broth, rice, and chili powder to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and liquid has been absorbed, about 25 minutes.

- Place chicken, water, and salt into a large stock pot and at medium-high heat and bring to a boil. Once foam starts forming on the surface, skim and discard.
- After removing the foam, add the onion, garlic, and celery. Partially cover the pot. Turn heat down and gently simmer for about 30 minutes. Do not boil.
- Add the carrots, cilantro and if you are using other vegetables, add them 15 minutes later since carrots take longer to cook. Check the chicken for doneness and, once cooked, remove and set aside to cool.
- Keep simmering the broth for about 10 more minutes until carrots are completely cooked.
- When the chicken pieces have cooled, shred it or cut into small bite-sized pieces. Dice the carrots once they are cooked and set aside.
- Strain the broth using a large fine mesh strainer. Return the broth to the pot and let it settle for about 8-10 minutes, remove the fat that rises to the surfaces using a large spoon. If you are not using the broth right away you can skim off the fat after placing the broth for some time in the fridge.
- Turn the heat on to low to warm up and check if it needs more salt to your taste. When ready to serve, place some cooked rice (if using) in a medium-size bowl, a serving of shredded chicken, carrots, and stir in the warm broth. Let everyone garnish their own soup.

- Place chicken legs into a large stock pot and pour water over chicken; add garlic, salt, and garlic powder. Cover, bring to a boil, and reduce heat to low. Simmer until chicken meat falls off the bones, 1 to 2 hours. Stir in chicken bouillon cube and let dissolve.

- In a large pot, place the water, chicken, salt, and garlic. Bring the ingredients to a boil, then reduce to medium heat and let simmer for 15 minutes. While the broth is simmering, skim the foam that forms on top of the water.
- In a separate pan, heat up the oil on medium heat, add rice and cook, stirring occasionally, until browned, about 2-3 minutes. Be careful not to burn it.
- Add chopped onion and continue cooking until onion is translucent, for about 2 minutes.
- Add chopped tomato and cook for another 3 minutes.
- Add this mixture to the chicken pot.
- Stir in the carrots, celery, and potatoes to the soup and let come to a boil. Reduce heat. Allow it to simmer until vegetables cook through, about 20-30 minutes.
- Add tomato sauce, cilantro during the last 5 minutes of cooking. Check again for salt.
- Ladle soup into bowls including a piece of chicken for each serving, and serve with lime wedges and warm corn tortillas.
- Optional: Add slices of avocado to your soup.

- In a large stock pot, add 8 cups of water, chicken, 2 celery sticks, ½ onion, 2 garlic cloves, salt, pepper.
- Cover and bring to a boil.
- Reduce heat and let simmer for 1 hour.
- Skim the fat off the top of the liquid.
- Reserve the liquid.
- Discard the other ingredients from the pot except for the chicken.
- Set the chicken aside and let it cool.
- Once the chicken is cool enough to handle, remove meat from the bones.
- In the same pot, add the remaining celery, onion, garlic, carrots, squash, jalapeño, corn, reserved liquid from the cooked chicken, salt and pepper, bay leaves, lime juice, and chicken.
- Make sure the liquid is 2 inches above everything in the pot.
- If not, add water and more salt.
- Cover and cook for 45 minutes on low heat.
- Serve and top with cilantro.

CALDO DE POLLO--MEXICAN CHICKEN STEW/SOUP
This soup is a recipe of my friend's father who passed away a few years ago. It is soooo delicious I was shocked when I found out how easy it is to make!! the El Pato sauce called for in this recipe is easily found in the Mexican isle of your grociery store (unless you live in Queensland, Australia... can't find it here!! I have to have my sister send it to me from the U.S. just so I can make this soup!!) or at a Mexican market. Make sure to get the yellow can labelled "hot tomato sauce" or "salsa de chile fresco" It is really cheap... the grociery store in Colorado (where I used to live) sold it for 69 cents. It is the key to the soup. You can easliy change the meat to beef and use beef broth instead of water... or some nice white fish or shrimp..but if using seafood the seafood should be added in the last 5 minutes of cooking time. Also, you can play with the veggies too!! I do need to warn you that it is a little bit too spicy for most children.

- remove and transfer to a plate/bowl (you will add it back).
- sautee onions with the rest of the olive oil in that same pot till translucent.

- taste and add more salt and then pepper as needed.
- then throw in the cilantro, give it a good stir, then cover again and let it simmer for about 2 minutes.
- ladle in a bowl just like that or over Mexican rice and garnish with lemon or lime wedges so your guests can squeeze it inches.

- Add all of the broth ingredients to a large stockpot, countertop roaster oven, or slow-cooker. Cover by 1-inch of water. Cook over a low heat for 8 hours, or until the chicken is so tender it falls apart easily. Use a slotted spoon and tongs to fish out all of the solids and put them in a bowl. Strain the broth through a fine mesh sieve or a cheesecloth lined colander. Let the broth rest in a pitcher or bowl in an ice bath long enough for the fat to separate. At that point, you can skim off the fat and proceed to making the soup, or cover the broth and refrigerate overnight, making the fat solidify for easier removal. Discard the vegetables that simmered in the stock and reserve the chicken.
- Add the broth, diced potatoes and carrots, and salt to a large stockpot or soup pan. Bring to a boil, lower the heat, and simmer until the potatoes and carrots are tender, about 20 minutes. While the vegetables simmer, pull the broth chicken from the bones, discarding the skin and bones. Shred or chop the chicken into bite sized pieces and add it to the broth to heat through. Taste the mixture all together and add more salt to taste. I often add another 2 teaspoons.
- Toss the juice of two limes and the teaspoon of kosher salt with the chopped onion. Let it sit at room temperature for 10 minutes, then toss in the chopped cilantro leaves.
