BROAD BEANS WITH DILL

Number Of Ingredients 11

2 pounds young fresh broad beans in their pods
1/4 pint (1/2 cup) olive oil
2 onions, chopped
2 cloves garlic, peeled and finely chopped
2 tablespoon lemon juice
Salt
2 teaspoons sugar
1/2 pint (1 cup) boiling water
2 tablespoons freshly chopped dill
1/2 pint (1 cup) Greek yogurt
Hot pita bread, to serve

Steps:

  • Wash the beans; top, tail and string them where necessary.
  • Heat the oil in a large, heavy, lidded pan. Saute the onions and garlic to soften. Reduce the heat, add the beans in their pods and the lemon juice and season with salt and sugar. Stir, and stew gently for 15 minutes stirring occasionally. Add water and half the dill, adjust to a gentle simmer and cook for 1 hour until the pods are very tender. Leave to cool. Pour the lot into a dish with rest of the dill. Serve with the yogurt and hot pita bread. This dish improves with keeping.

1 pound dried black beans
2 tablespoons ground cumin
2 tablespoons chili powder
2 tablespoons dried oregano
1 tablespoon dried basil
5 cloves garlic, chopped
2 bay leaves
1 medium yellow onion, chopped
Salt
1 1/2 pounds boneless pork butt
1 1/2 teaspoons ground chili powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons dried oregano
3/4 teaspoon salt
3/4 teaspoon pepper
5 guajillo chiles, stems removed, soaked in water and blended
3 cloves garlic, minced
1 bay leaf
1 medium yellow onion, chopped
2 pounds red potatoes, unpeeled
1/2 cup (1 stick) margarine or butter
2 tablespoons chopped fresh rosemary
2 tablespoons coarsely ground pepper
1 ripe avocado
1 1/2 cups chopped fresh cilantro
1 clove garlic
1 jalapeno, stem removed and halved
1/2 cup almond or soy milk
2 jalapenos, sliced
1 cup shredded jack cheese
1/2 cup diced tomatoes
1/2 cup diced green onions
1/4 cup chopped fresh cilantro
5 tablespoons sour cream

Steps:

  • For the black beans: Soak beans overnight.
  • Put the beans in a large stockpot and add 8 cups cold water. Bring to a boil, then add cumin, chili powder, oregano, basil, garlic, bay leaves, onion and salt. Cover and simmer until the beans are tender, about 1 1/2 hours.
  • For the carnitas: Preheat the oven to 350 degrees F.
  • Cut pork into 4 or 5 pieces. Rub chili powder, cumin, oregano, salt, pepper and chile sauce all over the pork and place in a baking pan. Add the garlic, bay leaf and onion. Add 1 cup of water to the pan and cover with foil. Bake until meat is tender and will shred with a fork, 1 1/2 hours.
  • For the rosemary potatoes: Put potatoes in a pot of water and bring to a boil. Cook until tender when pierced with a fork, about 30 minutes. Drain the water and set the potatoes aside to cool.
  • When the potatoes are cool enough to touch, smash them with your hands to flatten them into patties. Heat half the margarine on a flat-top grill or griddle until melted, then add the smashed potatoes. Put the remaining margarine or butter on top of the potatoes and sprinkle with rosemary and black pepper, then cook until golden brown, about 6 minutes. Flip the potatoes, then cook until golden brown, an additional 6 minutes. (Keep the flat-top hot.)
  • For the avocado sauce: Put avocado flesh, cilantro, garlic and jalapeno in a blender. Blend while slowly adding milk of choice.
  • For the dragon potatoes: Divide potatoes among 5 plates. Cover with black beans and top with carnitas. Grill the jalapenos on the flat-top for 1 minute and place on top of carnitas. Top dish with jack cheese, tomatoes, green onions, cilantro, sour cream and avocado sauce.

ROASTED SWEET POTATOES WITH CRISPY CHICKPEAS



Roasted Sweet Potatoes with Crispy Chickpeas image

I'm always trying to come up with different side dishes that are healthy, flavorful and not too heavy. The chickpeas really add texture and a pop of flavor.

4 medium sweet potatoes, peeled and medium diced
4 medium shallots, peeled and cut in half lengthwise
1/4 cup olive oil
Kosher salt and freshly ground black pepper
Two 15.5-ounce cans chickpeas, drained and rinsed
1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon ground cinnamon
1/2 tablespoon cayenne pepper
Kosher salt and freshly ground black pepper
6 tablespoons canola oil
1/4 cup fresh mint, roughly chopped

Steps:

  • Preheat the oven to 400 degrees F.
  • Divide the potatoes and shallots between two 10-inch cast-iron skillets. Evenly drizzle with the olive oil and sprinkle with salt and pepper. Roast until the potatoes are cooked through, about 25 minutes.
  • For the chickpeas: Lay the chickpeas out on a flat surface and dry them as much as you can using paper towels. In a small bowl, stir together the coriander, cumin, turmeric, cinnamon, cayenne and salt and pepper to taste. Set aside.
  • In a 10-inch cast-iron skillet, heat the oil over medium heat until shimmering. Line a large plate with paper towels. Working in two batches, add the chickpeas to the skillet so they are in a single layer and cook, stirring frequently, until golden and crispy, 15 to 20 minutes.
  • Use a slotted spoon to transfer the chickpeas to the prepared plate and add the spice mixture. Toss everything together until combined; this helps to bloom the spices while the chickpeas are still warm.
  • Garnish the potatoes in the skillets with the chickpeas and finish with the mint.

PESTO CRUSHED POTATOES



Pesto Crushed Potatoes image

Chef Note: You can use store-bought pesto here. You will want about 1/2 cup.

1 cup lightly packed fresh parsley leaves
3 cups lightly packed fresh basil leaves
1 cup pure olive oil
3 tablespoons toasted pine nuts
2 teaspoons minced garlic, divided (about 2 cloves)
1/2 teaspoon fine salt
1/4 teaspoon coarsely ground black pepper
1/2 cup grated Parmesan
1 pound small Yukon gold potatoes

Steps:

  • Prepare a bowl of ice water. Bring a large pot of water to a boil. Put the parsley and basil in a fine mesh strainer and plunge into the boiling water, pushing the leaves down into the water and stirring so they cook evenly for about 15 seconds. Remove and plunge directly into ice water. Drain immediately, squeeze dry and roughly chop.
  • In a blender, puree the herbs with the oil, 1 tablespoon pine nuts, garlic, salt and pepper. When well blended add the cheese and pulse briefly just to mix. Transfer to a bowl and adjust seasoning.
  • In a large pot filled halfway with cold salted water add the potatoes. Bring potatoes to a boil and simmer until a small knife can pierce through the center without resistance. Drain potatoes through a colander.
  • In a large non-reactive mixing bowl add potatoes and crush gently with a fork, add in the pesto and remaining pine nuts and mix to coat the crushed potatoes evenly. Check for seasoning, serve and enjoy.

OLIVE OIL BRAISED POTATOES

2 medium Idaho potatoes, washed, skin on, cut into 1/2-inch slices
Gray salt and freshly ground black pepper
1 cup extra-virgin olive oil
6 sprigs fresh thyme
4 garlic cloves

Steps:

  • Preheat the grill. Preheat the oven to 325 degrees F.
  • Put the potato slices on the hot grill and cook for about 2 minutes on each side to mark them. Remove from the grill and place them in a single layer in a baking pan. Season both sides with salt and pepper. Add enough olive oil to reach 1/3 up the sides of the potatoes. Turn the potatoes over to coat with the oil. Scatter the thyme and garlic cloves over the potatoes, sprinkle with a little more salt, if desired, and place in the oven.
  • After about 15 to 20 minutes, the potatoes will be tender. Remove from the oven and let them cool in the oil. Serve at room temperature.
  • Chef's notes: Using a high quality olive oil will impart its flavor to the potato.
