Fast and easy when you don't have enough time to prepare cookies from scratch. If you mix them by hand, they will be flatter and more like a cookie. If you use a mixer, they will be puffier and more like cake. The cake-like version is good with a simple confectioner sugar & milk (or juice if you used an orange or lemon cake mix) glaze.

1 (18 ounce) box cake mix, unprepared (any flavor)
1/2 cup vegetable oil
2 large eggs

Steps:

  • Mix all ingredients well to remove lumps.
  • Stir in raisins and/or nuts and/or chocolate chips if you so desire.
  • Drop by teaspoonfuls on an ungreased baking sheet about 2-inches apart.
  • Bake at 350°F for 8-10 minutes.

This recipe is very easy to put together and takes practically no time to make. Try other flavors of cake mixes if you like. When I make them, I use 2 cups (total) of peanut butter chips and chocolate chips mixed together. Very easy to whip up at halftime!

  • Drop by teaspoons on ungreased cookie sheet and bake at 350 degrees for 8-10 minutes.

I needed to make some Funfetti Cookies but all the recipes I could find started with a box cake mix, which I didn't have in the house. I used Recipe #394495 as my starting point and went from there. I thought others might appreciate knowing how to make them from scratch as well, so I decided to post a separate recipe.

2 1/2 cups flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup butter
1 cup sugar
1 teaspoon pure vanilla extract
1 egg
2 tablespoons milk
1/2 cup multi-colored candy sprinkles
extra sugar, for flattening cookies

Steps:

  • Preheat oven to 350°F.
  • Mix together with a whisk the flour, salt and baking soda.
  • Using an electric mixer, cream butter and sugar in a large bowl until light and fluffy. Beat in vanilla and egg.
  • Add flour mixture and beat until smooth. Blend in milk. Mix in sprinkles until evenly distributed.
  • Drop by teaspoon about 3 inches apart onto greased baking sheets. Flatten with bottom of glass that has been dipped in sugar.
  • Bake for about 8 minutes or until edges are lightly browned. Cool on rack.

2 ⅓ cups all-purpose flour
1 tablespoon baking powder
¾ teaspoon salt
1 ½ cups white sugar
½ cup shortening
2 eggs
1 cup milk
1 teaspoon vanilla extract

Steps:

  • For a Yellow Cake: Sift together flour, baking powder, salt, and sugar. Cut in shortening until fine crumbs are formed. Add eggs, milk, and vanilla. Beat at low speed for 1 minute, then high for 2 minutes, scraping the bowl frequently.
  • Pour batter into greased and floured 9x13 inch pan. Bake in preheated 350 degree F oven (175 degrees C) for 25 to 30 minutes.
  • Variation for a White Cake: Prepare as for the basic cake except use 3 egg whites for the 2 whole eggs. Whites may be beaten separately and added for a lighter cake.
  • Variation for a Chocolate Cake: Add 1/4 cup cocoa powder to the basic cake mix prior to adding the milk.
  • Variation for a Spice Cake: Add 1 teaspoon cinnamon, 1/4 teaspoon ground cloves, and 1/4 teaspoon ground allspice to the basic cake mix.
  • Variation for a Pineapple Upside Down Cake: Melt 1/2 cup butter in the bottom of a 9x13 pan. Add 2/3 cup brown sugar, stirring into the butter. Arrange pineapple slices in the pan. Top with the basic (yellow cake) mix recipe. Bake 30 to 35 minutes, cool 5 minutes, and invert to serve.

Once I tried these, I never bothered making 'traditional' sugar cookies again. A soft, flavorful cookie that is a MUST for me at Christmas. Note, the original recipe said they were cut-out cookies but I never was able to get them to work well that way. That is why I make the round ones as described.

1 (16 ounce) package betty crocker golden poundcake mix
1/3 cup butter, softened
1 teaspoon almond extract
1 egg

Steps:

  • Heat oven to 375°F Mix half of the cake mix (dry), the butter, almond extract and egg in large bowl until smooth.
  • Stir in remaining cake mix.
  • Divide dough into halves.
  • Roll each half 1/8 inch thick on lightly floured board. (I like using a half flour, half powdered sugar mix.).
  • Cut into desired shapes.
  • Or roll into 1-inch balls, place on ungreased cookie sheet and flatten with the bottom of a glass.
  • Bake until edges are light brown, 6 to 8 minutes.
  • Cool slightly before removing from cookie sheet.
  • Cool completely.
  • Ice with Buttercream Icing (I use Recipe #261024) and decorate, if desired, with sprinkles etc.
  • Yields: 3 to 4 dozen cookies.
  • TIP: Add sprinkles to the icing and mix well.
  • Then ice cookies as usual. They are now decorated without a lot of the mess!

⅓ cup vegetable oil
1 teaspoon vanilla
2 large eggs
1 cup M&M's candies ( (can also use chocolate chips))

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl, mix together dry cake mix (don't prepare it as called for on the back of the box), vegetable oil, vanilla, and eggs. The dough will be very thick.
  • Fold in the M and M candies.
  • Roll the dough into 1" balls and place on an ungreased cookie sheet.
  • Bake for 9-11 minutes and remove from oven. Let cookies cool for 2-3 minutes on the cookie sheet, then move them to a wire rack to finish cooling.

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Pour cake mix into a large bowl. Stir in eggs, oil, and lemon extract until well blended. Drop teaspoonfuls of dough into a bowl of confectioners' sugar. Roll them around until they're lightly covered. Once sugared, put them on an ungreased cookie sheet.
