This main dish is a nice change of pace from traditional sweet-and-sour meatballs. It's much quicker to make, too. For variety, I like to substitute a different kind of sausage, like spicy Italian.-Nova MacIsaac, Souris, Prince Edward Island

- In a large skillet, cook sausage until a thermometer reads 160° drain. When cool enough to handle, cut into bite-size pieces; set aside. , Combine the sugar, cornstarch, water, vinegar and ketchup; add to skillet. Bring to a boil. Reduce heat; cook for 2 minutes or until thickened. Add pineapple and sausage; heat through. Serve with rice.

- Preheat oven to 350 degrees F & grease a 2-quart baking dish.
- In a large skillet, brown sausages in butter.

- In a small non-stick skillet cook and stir almonds for 1-2 minutes, or until golden. Stir in raisins and remove from heat. Let stand for 1 minute. Carefully stir in vinegar, sugar, salt and black pepper. Return to medium-low heat, cook and stir just until sugar is dissolved, 2 minutes. Set aside. In a large bowl combine red and green peppers and onion wedges. Drizzle with oil; toss gently to coat. Prepare grill to medium-high heat. Grill sausages and vegetables uncovered for 10-15 minutes until sausages are firm, no longer pink inside and juices run clear (180 degrees F),and vegetables are tender, turning at least once halfway through grilling. Return the grilled vegetables to the large bowl, add the almond mixture; toss gently to coat. Arrange the sausages on a large platter with the grilled polenta and the sweet and sour peppers.

- Preheat an outdoor grill for medium heat and lightly oil the grate.
- Combine sausage, bell peppers, onion, and jalapeno in a large bowl. Pour sweet and sour sauce on top and mix until vegetables are evenly coated.
- Layer 2 to 3 sheets of aluminum foil; transfer sausage and vegetables to the foil and wrap up tightly so that no liquid is able to leak out.

SWEET AND SOUR SMOKED SAUSAGE
I decided that I needed to share this recipe after two people came into our break room tonight to see what I was eating that smelled so good. The recipe is adopted from a woman I work with, she calls it "Party Kielbasa". I like using turkey smoked sausage, but it works well with either smoked sausage or kielbasa. I brown the sausage in a frying pan with the Liquid Smoke before I bake it, because I like it to be a little bit crunchy on the outside, but you can just throw it all together without browning it, it tastes good either way. I serve it over rice because it soaks up the juice nicely. It could probably be a crockpot recipe in the summer, but I like baking it in the winter.

- Mix the chili sauce, canned crushed pineapple with juice, and the brown sugar together in a large casserole dish (I use the stoneware from my crockpot).
- Add the bell pepper pieces and smoked sausage.
- Mix everything together.
- Bake uncovered at 350 for one hour, stirring occasionally.

Steps:
- 1. Place the sliced sausage in a large skillet over medium high heat. Saute for 5-10 minutes, turning often, until well browned. Drain excess fat. Set sausage aside.
- 2. In the same skillet, over medium heat, combine the green and red peppers, onion and butter. Saute for 10 minutes or until all vegetables are tender.
- 3. Add the sausage and stir together well. Add the sweet and sour sauce, cayenne pepper and hot pepper sauce. Reduce heat to low and simmer for 10 minutes, allowing all the flavors to blend.
