CHOCOLATE CAKE IN A MUG

Steps:
- Special equipment: a 12-ounce microwave-safe ceramic mug and a microwave oven
- Put the flour, sugar, cocoa powder, baking powder and salt if using in a 12-ounce microwave-safe ceramic mug. Blend thoroughly with a fork. Add the milk, vegetable oil and vanilla if using and blend until smooth. Stir in the chocolate chips.
- Microwave on high for 90 seconds. Do not overcook or the cake will be dry. Let cool for 2 to 3 minutes before eating.

Steps:
- Combine cake mix ingredients and blend well.
- Measure 1/2 cup of mix into a sandwich bag.
- Label this bag"Cake Mix.
- "Place the glaze mix ingredients into a sandwich bag.
- Label this bag"glaze mix" and attach it to the other bag with a twist tie.
- Place one bag cake mix and one bag glaze mix in each coffee cup and attach the baking instructions.
- Tip: Be sure to select a large mug that can hold 1 1/2 cups of water.
- The mug must be microwavable.
- Flavor Options: Lemon cake mix-lemon pudding, Yellow mix-chocolate pudding, Devils food mix-chocolate pudding, Pineapple mix-coconut pudding, Butterscotch mix-butterscotch pudding.
- Attach the following note to the gift:Mist inside of coffee mug with cooking spray.
- Empty cake mix into cup.
- Add 1 egg white, 1 tablespoon.
- oil and 1 tablespoon water.
- Mix well.
- Microwave on full power 2 minutes.
- Empty Glaze Mix into a small bowl and add 1 teaspoon water.
- Mix well.
- Pour glaze over baked cake.

- Stir 1 tablespoon softened butter and white sugar together in a coffee mug until fluffy; stir egg, sour cream, and vanilla extract into the butter mixture. Add 1/4 cup flour and baking powder into the mixture; stir until smooth.
- Mix 2 tablespoons flour, brown sugar, and cinnamon together in a bowl. Mash 1 tablespoon butter into the flour mixture with a fork or pastry cutter until mixture is crumbly; sprinkle over the cake batter in the mug.
- Cook in microwave oven on high for 1 minute. Continue cooking in 10-second intervals until a toothpick inserted into the middle comes out clean.

- Heat 1 tablespoon butter in a microwave-safe mug until softened, about 10 seconds. Stir white sugar into butter until dissolved. Mix 1/4 cup flour, applesauce, baking powder, vanilla extract, and salt into butter-sugar mixture until batter is smooth.
- Mix 2 teaspoons flour, 1 teaspoon butter, brown sugar, and cinnamon together in a bowl using your hands until the texture of lumpy sand is reached; sprinkle over batter.
- Cook in the microwave until coffeecake appears to be barely set, 50 to 80 seconds. Cool before eating.

CAKE IN COFFEE MUG GIFT

- 1. Place dry cake mix and dry pudding mix into a large bowl and blend well with a whisk. This will be about 4 to 4 1/2 cups dry mix and will make 8 or 9 coffee cup cake mixes. Place 1/2 cup dry mix into a sandwich bag. Place mix into a corner of the bag and tie it there with a twist tie. Continue making packets until all your dry mix is used. Suggested Flavor Combinations: Lemon cake mix - lemon pudding Yellow cake mix - chocolate pudding Devils food cake mix - chocolate pudding Pineapple cake mix - coconut pudding Butterscotch cake mix - butterscotch pudding Select a large coffee mug. Make sure that it contains no metallic paint as it will be used in the microwave. Check it to ensure that it holds 1 1/2 cups of water.
- 2. Decorating the cups: (optional) Paint on the cup if you like. DecoArt Ultra Gloss Acrylic Enamel is one brand of craft paint that can be made dishwasher safe by baking the painted cup in the oven (instructions are on the bottle of paint). Glaze Mix: 1/3 cup confectioners sugar 1 1/2 teaspoons dry flavoring* * powdered lemonade mix, powdered orange breakfast drink mix, cocoa powder, vanilla powder (sold by coffee flavorings) NOTES Select the flavoring appropriate to the cake you are making. For the pineapple coconut cake include flaked coconut in a separate bag with instructions to sprinkle it over the frosted cake. Place the glaze mix ingredients into a sandwich bag and tie into corner of bag. Label this bag Glaze Mix and attach it to the other bag with a twist tie. Place one baggie cake mix and one baggie glaze mix in each coffee cup. Now attach the following baking instructions to each coffee cup: Bake a cake in a coffee cup. Generously spray inside of coffee cup with cooking spray. Empty contents of large packet into cup. Add 1 egg white, 1 tablespoon vegetable oil and 1 tablespoon water to dry mix. Mix for 15 seconds, carefully mixing in all the dry mix. Microwave on HIGH for 2 minutes.( you may not get satisfactory results in a low wattage small microwave). While cake is cooking , place ingredients from Glaze Mix into a very small container and add 1 1/2 teaspoons water. Mix well. When cake is done, pour glaze over cake in cup. Enjoy while warm.
