1 1/2 pounds 80% lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch rounds
1 medium green bell pepper, sliced into 1/4-inch rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • SET UP: Prepare a grill or grill pan and heat to medium-high heat.
  • FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
  • MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.

1 cup tartar sauce
1 teaspoon Cajun seasoning
1 tablespoon capers, chopped
1 teaspoon prepared horseradish
3 dashes hot sauce
1 1/2 pounds ground pork
1 tablespoon Cajun seasoning
2 scallions, green part only, thinly sliced
1 teaspoon hot sauce
1/2 teaspoon salt
1/2 teaspoon pepper
Hamburger buns
Lettuce, tomato, onions, for garnish

Steps:

  • For the Remoulade Sauce: Prepare sauce by combining all sauce ingredients in a small bowl. Refrigerate covered for 1 hour while flavors meld.
  • For the burgers: In a large mixing bowl, combine ground pork, Cajun seasoning, scallions, hot sauce, and salt and pepper, to taste. Wet your hands to prevent sticking and shape into 4 patties slightly larger than the size of the buns. Cover with plastic wrap and set aside in refrigerator if not cooking immediately.
  • Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Place burgers on hot oiled grill and cook 5 to 6 minutes per side or until desired doneness. Serve hot on toasted buns with lettuce, tomato, onions, and a dollop of the Remoulade Sauce.
  • INDOOR: Prepare burgers as directed. Heat 2 tablespoons of oil in a large skillet or frying pan over medium-high heat. When oil is hot add burgers and cook 6 to 8 minutes per side or until done.

1 1/2 teaspoons cayenne pepper
For the Sauce:
1/2 cup mayonnaise
1 green onion, finely chopped
1 teaspoon Dijon mustard

1 teaspoon dill relish
3/4 teaspoon Cajun seasoning, or to taste
For the Burgers:
1 1/2 pounds ground beef (80/20 or 85/15)

Steps:

  • Gather the ingredients.
  • In a small bowl, combine the paprika, garlic powder, oregano, onion powder, kosher salt, thyme, and the black and cayenne peppers. Stir to combine. Transfer the mixture to a jar with a lid.
  • In another small bowl, combine the mayonnaise with the finely chopped green onion, Dijon mustard, hot sauce, and dill relish. Add 3/4 teaspoon of the Cajun seasoning (or to taste). Cover and refrigerate the remoulade until serving time.
  • In a large bowl, combine the ground beef, minced onion, pressed garlic, and 1 1/2 teaspoons of the Cajun seasoning mixture. Mix to blend thoroughly.
  • With your hands of a burger press, shape the meat mixture into four burgers. Each burger will weigh approximately 6 ounces. With your thumb, make an indentation in the center of each burger. Refrigerate the burgers until it is time to cook. Store the remaining Cajun seasoning in a cool, dark place.
  • Heat the grill to medium-high heat. When the grill is hot, brush the grate with olive oil or canola oil. Place the burgers on the grill, indentation side up and grill for about 5 minutes. Carefully flip the burgers and continue grilling for about 4 to 5 minutes longer, or until the burgers register 160 F, the minimum safe temperature recommended by the USDA.
  • Transfer the burgers to a plate or rack and tent with foil. Let them rest for 5 minutes.
  • Assemble the burgers on buns with your choice of toppings, along with a generous amount of remoulade sauce.

4 skinless chicken breasts
2 tbsp olive oil
4 rashers smoked bacon
2 avocados
4 ciabatta rolls, split
4 thin slices of your favourite cheese
4 small handfuls baby spinach leaves
mayonnaise , to serve (optional)
1 tbsp ground cumin
1 tbsp ground coriander
1 tbsp paprika

Steps:

  • Mix the seasoning ingredients together with a good grinding of black pepper and a sprinkling of salt, then set aside in a large dish. Heat grill to high. On a board, flatten out the chicken slightly, then drizzle half the oil over and toss in the seasoning until completely coated. Heat the remaining oil in a large frying pan, sizzle the chicken for 5 mins on each side until firm, push to one side of the pan, then fry the bacon for a few mins until cooked.
  • While the chicken is cooking, halve, stone, peel and slice the avocados, and toast the cut sides of the buns. Cover the tops of the buns with cheese, then grill until melted.
  • To assemble the burgers, spread the buns with mayonnaise if you want, top with a handful of spinach, then a rasher of bacon. To keep the avocado in place, slice the chicken, then alternate between a slice of chicken and avocado. Top with the bun, press down lightly and serve.

1/2 lb pork sausage (homemade)
1 teaspoon Worcestershire sauce
1 tablespoon steak sauce (optional)
2 tablespoons catsup (or BBQ sauce)
3 -4 dashes louisiana hot sauce
3 -4 drops liquid crab boil concentrate
1 teaspoon garlic powder
2 teaspoons creole seasoning
1 medium onion (minced)
1/2 medium bell pepper (minced)
1/4 cup water
2 large eggs

Steps:

  • Remove sausage from the casing & combine both meats in a bowl. Add the remaining ingredients & mix well. Let the mixture rest in the refrigerator for at least 1 hr for seasonings to "work".
  • Form hamburger patties as usual & make them about 3/4" larger than the bun. The burgers will shrink, so doing this will give you a "bun-fitting" hamburger patty.
  • Cook hamburgers on high heat on ea side for about 1 minute. Then finish them on a med low heat till done (An internal temp of 160F is recommended by the USDA).
  • When done, spray them on both sides w/a water mist & sprinkle a little salt on them. Serve immediately.
  • If not serving immediately, put the patties in a pan w/only enough water to cover the bottom. Keep them covered so they don't dry out. Doing all of this will give you a slightly moister hamburger patty.

4 pineapple rings, from a can
50g cheddar , grated
2 tbsp soured cream
4 burger buns , split and toasted

  • Heat the grill to medium-high and line a baking tray with foil. Place the chicken between 2 sheets of cling film and bash to an even thickness using a rolling pin. Rub the Cajun spice mix, the oil and some seasoning all over the chicken, then put them on the baking tray. Grill for 10 mins, turning halfway through. Top each chicken breast with a pineapple ring and some grated cheese, then return to the grill and cook for a further 2-3 mins until the cheese is golden and bubbling, and the chicken is cooked through.
  • Spread a little soured cream over the base of each bun, then add lettuce, a chicken breast, sliced red onion, and pop the top on.

This is the best homemade burger I have ever eaten. We are not fans of garlic but we love Worcestershire sauce and we prefer flavor over health consciousness. By following this recipe you will get just a hint of garlic, mild spice, and a lot of Worcestershire flavor. If you like to really taste your garlic then you will need to add more. If you like spicy leave more seeds or increase the number of peppers and last but not least, if you are not a fan of Worcestershire sauce then cut back to 1 tbsp. If you want to be health conscious then use a lower fat meat but really watch your cooking time or it will be dry and lose a lot of flavor. In fact, if you go with sirloin or round I would suggest adding two pieces of white bread (crust removed) soaked in milk to your mix to retain moisture. My kids are VERY picky eaters and they love these burgers. (Take that McDonalds!)

1 teaspoon cajun seasoning (Luzianne Cajun Seasoning)

  • Cajun Mayo:.
  • Prepare the Cajun mayo by combining the mayo, Cajun seasoning, and BBQ sauce and stir. Taste and adjust (like your grandma always told you), then set aside.
  • Pre-Heat Grill on High.
  • Burgers:.
  • Heat a small pan over medium high heat.
  • Add the pat of butter to the pan and melt.
  • Add the onions and sauté 2-3 minutes stir often.
  • Add the peppers and continue to sauté 1-2 minutes.
  • Add the garlic and sauté until fragrant.
  • Remove the onion, pepper, garlic mixture from heat allow to cool (Stick it in the freezer if your stomach is growling!).
  • Put the onion mixture into a large non-reactive bowl.
  • Tear the hamburger into small pieces and place in the same bowl.
  • Add the Worcestershire sauce.
  • Sprinkle 1/2 of the tbsp of Cajun seasoning over the meat and mix gently but thoroughly with your hands. (No pockets of seasoning please!).
  • Sprinkle the remaining Cajun seasoning and remix careful to not over work the meat.
  • Form into patties slightly larger than your buns.
  • Grilling:.
  • Place the burgers on the grill and listen to it sear the meat.
  • Reduce the heat to medium / medium high and continue cooking with the lid closed until the burgers are done to your liking flipping once.
  • Add the cheese shortly after the flip to get a really good melt (Important for thick slices of cheese).
  • Remember meat tastes better if not over cooked and the temperature will rise another 3-5 degrees after pulling the burgers from the grill. Cooking by temperature is the only way to get consistent results. I like to pull my burgers at 145-150 degrees.
