6 lean pork chops
cajun seasoning
vegetable oil cooking spray
1 cup chopped onion
1 cup chopped green pepper
1 cup chopped celery
2 cloves garlic, mashed
1 package beef gravy, prepared per directions (or 1 - 1 1/2 cups home made or bottled brown gravy)
3 cups hot cooked rice

Steps:

  • Sprinkle chops liberally with Cajun seasoning.
  • Spray pan with vegetable oil, or use a small amount of oil.
  • Brown the chops on both sides.
  • Remove and set aside.
  • Add onion, pepper, celery and garlic to the pan and saute until tender.
  • Add the pork chops back to the pan with the vegetables, add the brown gravy.
  • Simmer for 45 minutes.
  • Serve over hot cooked rice.

2 butterfly boneless pork chops
1 1/2 tablespoons paprika
1 1/2 teaspoons sage
1 teaspoon salt
1 teaspoon pepper or 1 teaspoon cayenne pepper
1 teaspoon garlic powder
2 tablespoons oil

Steps:

  • Combine spices, mix well.
  • Rub mixture thoroughly onto both sides of each chop.
  • Pan fry in oil, cooking both sides, until done.

Pork is a Cajun staple, this recipe is quick and easy to make with ingredients found in most pantries.

1/3 cup onion, finely chopped
1/3 cup green pepper, finely chopped
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon ground red pepper
1 teaspoon ground black pepper
3 -4 lbs pork loin roast

Steps:

  • For stuffing, combine onion, green pepper, garlic, salt, red pepper and black pepper mix well.
  • Cut 12 - 14 deep slits, 1 " wide, randomly around the pork roast.
  • using your fingers, stuff the slits with some of the stuffing. Place roast, on a rack in a shallow roasting pan.
  • Rub the remaining stuffing mixture over the roast and roast the pork, uncovered in a 325 oven for 2 -1/2 - 3 hours, or until meat thermometer registers 170 degrees.
  • Let pork, stand 15 minutes before carving.
