MADE-OVER BLACKENED CAJUN SKILLET FRIES

3 medium russet potatoes
1 tablespoon olive oil
1 teaspoon Cajun seasoning
3 tablespoons nonfat Greek yogurt
1 tablespoon Creole mustard
Kosher salt

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes into long wedges about 1-inch thick. Toss the potatoes with the olive oil and Cajun seasoning. Heat an ovenproof large nonstick skillet over medium-high heat and add the potatoes in a single layer. Cook, turning, until browned on all sides, about 15 minutes. Slowly add 1/4 cup water to the skillet and transfer the entire skillet to the oven.
  • Continue to cook the potatoes, turning once, until the potatoes are tender and the outsides are crisped, about 20 more minutes. Meanwhile, mix the yogurt with the mustard and a pinch salt. Serve the potatoes warm with the mustard dipping sauce.

1 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 Tbsp. Cajun seasoning, divided
1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1/4 cup plus 2 Tbsp. milk, divided
1/2 lb. smoked sausage
2 tsp. oil
1 cup each halved green and red pepper strips
1 onion, slivered
3 cups hot cooked penne pasta

Steps:

  • Toss chicken with 1 tsp. Cajun seasoning. Mix cream cheese spread and 2 Tbsp. milk until blended.
  • Cut sausage lengthwise in half, then crosswise into thin slices. Heat oil in large skillet on medium heat. Add chicken and vegetables; cook 6 to 7 min. or until chicken is done and vegetables are crisp-tender, stirring frequently. Add sausage; cook 3 min., stirring frequently.
  • Add cream cheese mixture, remaining milk and seasoning; cook and stir 2 to 3 min. or until heated through.
  • Stir in pasta.

This easy skillet dinner comes together quickly, making it a perfect option for a weeknight. We used spicy andouille sausages to give the dish a little kick, but any type of sausage would work. Cooking at medium-high heat allows the sausage and vegetables to get nice and caramelized in a short amount of time, but if they ever start to overcook, stir in a splash of cold water to cool the pan down.

2 tablespoons canola oil
8 ounces chicken andouille sausages, sliced diagonally 1/4-inch thick (about 1 heaping cup)
1 small yellow onion, thinly sliced (about 2 scant cups)
Kosher salt
1/2 small head green cabbage, cored, halved crosswise and sliced 1/4-inch thick (about 6 cups)
1/4 teaspoon crushed red pepper
2 cloves garlic, minced
3 tablespoons apple cider vinegar
1 tablespoon unsalted butter
1/2 small sweet-tart apple such as Gala or McIntosh, cored and sliced 1/8-inch thick (about 3/4 cup)
1 large scallion, thinly sliced (about 1/4 cup)
Hot sauce, for serving

Steps:

  • Heat a large cast-iron skillet or high-sided saute pan over medium-high heat. Add the oil and swirl the pan to coat evenly. Add the sausage slices in a single layer and cook until browned on the first side, about 2 minutes. Flip and cook until browned on the second side, about 2 minutes. Use a slotted spoon to remove the sausage slices to a bowl and set aside.
  • Add the onion, a splash of water and large pinch salt to the pan and cook over medium-high heat, using a wooden spoon or heatproof rubber spatula to scrape up any browned bits from the bottom of the pan. Cook, stirring occasionally, until the onion is lightly browned in spots and starting to get tender, 5 to 7 minutes. Add the cabbage, crushed red pepper and another pinch salt and cook until cabbage is crisp-tender, 6 to 8 minutes, stirring occasionally. If the pan seems dry at any point, stir in another splash of water.
  • Add the garlic and cider vinegar and cook until the vinegar is mostly evaporated, about 1 minute, stirring constantly. Stir in the butter until melted, then return the sausage to the pan along with the apple and cook until the apple slices are just tender, 3 to 4 minutes, stirring occasionally.
  • Sprinkle with the scallion and serve immediately with hot sauce alongside.

1 jalapeño, diced
1/4 red bell pepper, diced
1 cup fresh corn kernels
Kosher salt and freshly ground black pepper
1 1/4 cups stone-ground cornmeal
1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 3/4 cups buttermilk
2 large eggs
3 tablespoons unsalted butter, melted
1/4 cup sliced green onions
Pan-Roasted Tomato Butter, recipe follows
1 Roma tomato, cut in half
1 stick (8 tablespoons) unsalted butter
Pinch kosher salt

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the bacon to a 10-inch cast-iron skillet over medium heat and let the fat render out, stirring occasionally, until the edges begin to brown. Toss in the jalapeño, red bell pepper and corn and saute until tender, about 5 minutes. Season to taste with salt and pepper.
  • Meanwhile, whisk the cornmeal, flour, baking powder, baking soda and 1 1/2 teaspoons salt together in a large bowl. Stir in the buttermilk, eggs and melted butter, then the green onions, until combined.
  • Pour the batter into the hot skillet and bake until golden brown, about 25 minutes. Slice into wedges and serve with tomato butter.
  • Heat a 10-inch cast-iron skillet over medium-high heat.
  • Set the tomato in the hot pan cut-side down. Cook until the tomato softens and is caramelized, 6 to 8 minutes.
  • Let the tomato cool slightly, then add to a food processor along with the butter and salt. Pulse until combined. Remove the butter with a rubber spatula to a small bowl.

1 (1 ounce) envelope dry onion soup mix
2 ½ cups water
cayenne pepper to taste
crushed red pepper flakes to taste
2 boneless skinless chicken breasts, cut into bite-size pieces
½ pound kielbasa sausage, sliced
½ pound shrimp

Steps:

  • Heat oil in a large heavy skillet over medium heat. Saute onion, celery, red bell pepper, green bell pepper, zucchini, and green chiles until the onion is tender. Remove vegetables from skillet, and set aside.
  • Melt the butter in the same skillet on medium heat, being careful not to burn. Stir in flour until combined, then stir in salt and pepper. Cook flour mixture until brown, 3 to 5 minutes; stir continuously. DO NOT ALLOW THIS MIXTURE TO BURN.
  • Stir in onion soup mix and water. Increase heat to medium high. Season with red cayenne pepper and crushed red pepper flakes. Stir in vegetables. If gravy is too thick, stir in warm water. Reduce heat to low.
  • Heat a separate large heavy skillet over medium high heat. Saute chicken, sausage and shrimp until chicken is no longer pink, and juices run clear. Stir into vegetable mixture. Simmer for 35 minutes.
