CAJUN RICE SALAD WITH SHRIMP AND OKRA

Cajun Rice Salad with Shrimp and Okra image

In this salad, okra is cooked quickly to keep it from becoming mushy, yet long enough to release the natural thickeners that help form a salad dressing and keep the rice moist.

Provided by Serena Ball

Categories     main-dish

Time 30m

Yield 6 servings

Number Of Ingredients 12

1 1/2 teaspoons garlic powder
1 teaspoon dried oregano (crushed between fingers)
1 teaspoon hot paprika
1/8 teaspoon ground allspice, optional
Kosher salt and freshly ground black pepper
1 cup uncooked brown rice
1 pound raw peeled, tail-off shrimp (31 to 40 shrimp per pound), thawed if frozen
1/4 cup fresh lemon juice
1 tablespoon olive oil
2 cups (7 ounces) fresh or frozen okra, sliced 3/4-inch thick (if frozen, do not thaw)
1 large orange or yellow bell pepper, chopped
1/4 cup chopped fresh parsley

Steps:

  • For the Cajun seasoning: Combine the garlic powder, oregano, paprika, allspice, if using, 1 teaspoon salt and 1/2 teaspoon black pepper.
  • For the salad: Combine 1 teaspoon Cajun seasoning with the rice and cook according to the rice package directions. Set aside in a bowl.
  • Meanwhile, in a large microwave-safe bowl, combine the shrimp, lemon juice, oil and 2 teaspoons Cajun seasoning; cover the bowl with plastic wrap, leaving a 1-inch opening for a vent. Microwave at 80-percent power, stirring once per minute, until the shrimp are opaque, about 3 minutes. Add the shrimp and the cooking liquid to the rice. (Save the remainder of the Cajun seasoning for another use.)
  • In a small saucepan, bring the okra and 1/2 cup water to a boil; cook until crisp-tender, 3 minutes. Add to the shrimp and rice.
  • Stir the bell pepper and parsley into the rice salad and serve at room temperature.

BOULETTES - FRIED CRAWFISH BALLS - FRIED SHRIMP BALLS - FRIED CRAB BALLS

Boulettes - Fried Crawfish Balls - Fried Shrimp Balls - Fried Crab Balls image

As a young child growing up, I remember on Friday's during Lent, my Dad would trade some of his farm goods for fresh shrimp. Mom would make us shrimp stew with fried shrimp balls. As with almost any shrimp dish, crawfish can be used instead.

Provided by Merry Pierce-Lowrey

Categories     Appetizers

Yield 18

Number Of Ingredients 12

2 pounds shrimp or crawfish or crab
2 medium boiled white potatoes
1 small grated onion - 1/2 cup
1 tsp salt
1/2 tsp black pepper
1/4 tsp red pepper
1 egg slightly beaten
1/4 cup bell pepper chopped fine
1/4 cup celery chopped fine
1/4 tsp garlic powder optional
bread crumbs, flour or fish fry - corn flour
Oil for frying

Steps:

  • Peel, boil and mash the potatoes. Clean and finely chop the shrimp or grind shrimp in meat grinder or food processor. Combine with potatoes. Add the onion, bell pepper, celery and spices. Add egg and mix well; form into balls, golf ball size or larger.
  • As an option for a different flavor you could add bread crumbs or flour to the mixture. My Mom actually added 1/4 flour to the mixture and then rolled them in flour. You could also grate the potatoes and add them raw to the mixture.
  • Roll the balls in bread crumbs, flour, or fish fry. The balls can be cooked right away but will cook better if chilled for at least an hour. Heat oil to 360 or 375 degrees or until a speck of flour dropped in the oil dances on the surface. Deep fry until golden brown.
  • Serve alone or with your favorite dipping sauce goes really great with crab or shrimp stew.

BAKED SHRIMP BALLS

Baked Shrimp Balls image

I love shrimp balls, but not the deep fried ones. Steamed dumplings are great but often take more time than I want. These are easier than apple pie but taste terrific and are low fat. I often leave out the water chestnuts. Other additions are green onions or garlic to taste.

CAJUN SHRIMP BALLS

Cajun Shrimp Balls image

The Acadians of Louisiana, also known as Cajuns, are especially innovative cooks who learned to make good use of whatever was on hand. Crawfish balls are a favorite of Cajuns, but since these delicate little critters are not easy to come by in other parts of the country, shrimp is used in this recipe. Served hot, they're a fine first course or appetizer to enjoy with drinks. If you wish, serve with remoulade sauce. From an old newspaper clipping.

Using your hands, take handfuls of the paste and slap it against the bowl repeatedly until the texture becomes elastic and gluey. Add the pork fatback and water chestnuts.
  • Wet one hand with water, pick up a handful of shrimp, squeeze it through the opening between the thumb and forefinger to form a ping-pong-size ball. Using the other hand, dip a spoon in water and scoop the shrimp ball onto a plate. Repeat with the remaining shrimp mixture. Refrigerate the shrimp balls for at least 1 hour.
