This is a West African inspired rendition of an okra and tomato stew, great on its own or served as a sauce over meat or fish. There are some unusual spices here, and I use palm oil. You can get red palm oil, which is not overly refined, in some supermarkets, or you can get sustainably produced oil online. Or just use vegetable oil.

1/4 cup red palm oil or vegetable oil
2 onions, (minced)
4 cloves garlic, (minced)
2 tablespoons grated fresh ginger
1 to 3 Scotch bonnet or habanero chiles, (minced)
Salt
2 tablespoons tomato paste
A 14.5 ounce can of fire-roasted, diced tomatoes
5 grains of selim pods ((optional))
1 quart chicken stock, (or other appropriate stock (see above))
1 1/2 pounds okra, (cut into discs)
1 tablespoon ground cubeb pepper, (or regular black pepper)

Steps:

  • Heat the palm oil in a soup pot over medium heat. It has a low smoke point, so when it smokes, add the onions and stir well. Cook them, stirring often, until soft. Add the garlic, ginger and minced chiles and cook another minute. Salt everything well.
  • Stir in the tomato paste and cook that for a minute or two, stirring often. Add the diced tomatoes, the grains of Selim, and the stock and stir well. Bring to a simmer and cook uncovered for 15 minutes.
  • Add the okra and cook another 15 minutes, or until the okra is tender. You want a fairly substantial stew, so only add additional water or stock if everything is getting sticky. Season with salt to taste and add the pepper in at the end. Serve over meat, fish or with rice.

6 -7 large fresh tomatoes
1 (15 ounce) can lima beans
1 (15 ounce) can black-eyed peas
1 cup chopped fresh okra
1 onion, chopped
2 -3 garlic cloves, chopped
1 tablespoon cajun seasoning
salt & pepper
1 -2 teaspoon olive oil

Steps:

  • Heat olive oil in a large stew pot.
  • Add chopped onions and garlic and saute for 2-3 minutes.
  • Add chopped tomatoes, lima beans, blackeye peas and cajun seasoning.
  • Bring to a boil, stir well.
  • Reduce heat and simmer on low 30 minutes, stirring occasionally.
  • If the stew gets too thick add water as needed.
  • Add chopped okra, stir well.
  • Simmer another 15 minutes.
  • Serve over rice.

2/3 cup canola oil
1 pound beef top sirloin, cut into 1-inch cubes
Kosher salt and freshly cracked black pepper
1 beef bouillon cube
1 large white onion, chopped
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
1 cup beef stock, plus more as needed
2 tablespoons tomato paste
1 1/2 tablespoons ground ginger
1 to 2 tablespoons sugar
One 10-ounce package frozen okra

Steps:

  • Heat the oil in a large pot over high heat. Sprinkle the beef with salt and pepper (about 1/2 teaspoon of each). Add the beef to the hot oil along with the beef bouillon, onion and garlic and cook until the beef is seared, about 5 minutes; reduce the heat to medium. Continue to cook, stirring, until the beef is browned, about 3 more minutes. Remove the beef to a plate and set aside.
  • Stir the tomato sauce, beef stock, tomato paste, ginger, sugar, 1 teaspoon freshly cracked pepper and 1 cup water into the pot. Bring to a boil; season with additional salt. Return the beef to the pot and add the okra. Reduce the heat to low and simmer until the okra is tender, 25 to 30 minutes. Add additional stock or water if the stew is too thick; the okra will thicken the stew as it cooks.

2 large onions, chopped
1 large green pepper, chopped

Steps:

  • In a Dutch oven, saute the first five ingredients in oil until the vegetables are tender. Add garlic; cook 1 minute longer. Add wine, stirring to loosen browned bits from pan., Stir in the tomatoes, okra, tomato sauce, soy sauce and hot sauce; bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until okra is tender. Serve with rice., Freeze option: Freeze cooled stew in freezer containers. To use, partially thaw in refrigerator overnight. Microwave, covered, on high in a microwave-safe dish until heated through, gently stirring and adding a little broth or water if necessary. Serve with rice.

1 can (28 ounces) diced tomatoes, undrained
1-1/2 cups chopped green peppers
1 large onion, chopped
3 garlic cloves, minced

1 teaspoon chili powder
1/2 to 1 teaspoon hot pepper sauce
3/4 teaspoon salt
1 bay leaf
4 cups cooked brown rice
2 cans (16 ounces each) kidney beans, rinsed and drained

2 tablespoons olive oil
½ large onion, chopped
2 cloves garlic, minced
½ green bell pepper, chopped
1 (16 ounce) can diced tomatoes in juice
⅜ teaspoon dried thyme
2 tablespoons chopped fresh parsley
¼ teaspoon cayenne pepper
salt and pepper to taste
1 (16 ounce) package frozen cut okra

Steps:

  • Heat the olive oil in a large skillet over medium heat. Saute the onion and garlic until limp. Add the green pepper; cook and stir until tender. Drain the tomatoes, reserving juice, and pour them into the skillet. Season with thyme, parsley, cayenne, salt, and pepper. Simmer for 5 minutes over medium heat.
  • Add the frozen okra, and pour in enough of the reserved juice from the tomatoes to cover the bottom of the pan. Cover, and cook for 15 minutes, or until okra is tender.

Steps:

  • In a 5-to-6-quart slow cooker, place sausage, onion, garlic, celery, and bell pepper. Sprinkle with flour and toss to coat. 3 1/2 cups low-salt chicken broth
3 1/2 cups water
1/2 lb large shrimp, shelled and halved lengthwise
3 large garlic cloves
4 medium onions, quartered
1 fresh poblano chile, seeded and cut into 1-inch pieces
2 tablespoons corn or other vegetable oil
1/2 teaspoon cayenne
1/2 teaspoon black pepper
3/4 lb andouille sausage,sliced 1/4 inch thick
1 lb okra, trimmed and sliced 1/2 inch thick
4 plum tomatoes, peeled and chopped
2 teaspoons kosher salt
4 scallions, thinly sliced
Accompaniment: white rice

Steps:

  • Simmer corn, broth, and water in a 4- to 6-quart heavy pot, uncovered, until corn is very tender, 8 to 10 minutes. Transfer with tongs to a plate and cool.
  • Cut off kernels and return cobs to liquid with shrimp shells. Simmer 5 minutes, then pour broth through a sieve into a large bowl, discarding cobs and shells.
  • Chop garlic in a food processor. Add onions and poblano and pulse until chopped.
  • Cook onion mixture in oil with cayenne and black pepper in cleaned pot over moderate heat, stirring occasionally, until onions are softened, about 8 minutes. Add sausage and cook, stirring, 2 minutes.
  • Add broth and bring to a simmer. Add okra, tomatoes, and salt, then simmer, partially covered, until okra is tender but not falling apart, about 30 minutes. Add corn and shrimp and cook, stirring, until shrimp are just cooked through, 2 to 3 minutes. Stir in scallions and season with salt and pepper.
