6 turkey wings
4 tablespoons Cajun seasoning
2 tablespoons salt
½ teaspoon onion powder
½ teaspoon paprika
¼ teaspoon white pepper
3 cups oil

Steps:

  • Add the turkey wings to a mixing bowl followed by the Cajun seasoning, salt, onion powder, paprika, and white pepper.
  • Mix together and marinate for 1 hour in the fridge.
  • After 1 hour, take out of the fridge and let it rest for 15 minutes on the countertop.
  • While the meat is resting on the countertop, add the oil to a pot and bring the heat up to medium-high heat.
  • Put the turkey wings into the oil and immediately turn the heat to low-medium. Cook on low-medium for 10 minutes, until brown.
  • Line a baking tray with a kitchen towel. Take the Cajun turkey wings out and place them onto the towel to let the oil drain.
  • Transfer to a serving plate and consume immediately.

3 tablespoons hot sauce
Peanut oil, for frying
3 cups all-purpose flour
4 teaspoons salt
Emeril's Kicked Up Horseradish Cole Slaw, recipe follows

Steps:

  • In a large bowl toss the wings with 5 tablespoons of the Essence. Place in a large plastic freezer bag.
  • Add the buttermilk and hot sauce and seal, forcing out as much air out as possible and turning to coat evenly. Refrigerate for at least 2 hours or overnight.
  • Fill a large pot halfway with peanut oil, and heat to 360 degrees F. In a clean large freezer bag, combine the flour, the remaining 3 tablespoons Essence, and salt. Remove the turkey wings from the buttermilk, and transfer 2 at a time to the bag with the seasoned flour. Shake to coat and remove, shaking to remove any excess flour.
  • Preheat the oven to 350 degrees F. Place coated wings on a large wire rack set over a sheet tray and let rest, un-refrigerated, for 20 minutes. Add to the hot oil and fry until golden brown, 5 to 6 minutes per side. Drain on paper towels and season with Essence. Place on a baking sheet and bake for 20 minutes, or until cooked through.
  • Serve hot or at room temperature with Emeril's Kicked Up Horseradish Coleslaw.

4-6 turkey wings
4-6 ounces Cajun Injector Creole Butter marinade
1-2 T hot sauce
2 1/2 T Cajun or Creole seasoning
1 T onion powder
1 T garlic powder
1 tsp black pepper
Vegetable or canola oil for frying

Steps:

  • Inject 1 ounce of marinade into the meat of each turkey wing Place wings into a freezer bag and refrigerate overnight or at least 4 hours. Mix all spices together Sprinkle and rub the spice blend evenly over the wings In a deep fryer or pan, heat enough oil to cover the wings to 350 F Deep fry the wings until brown and cooked through; about 14 mins Drain on paper towels Enjoy!
