1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 to 1/2 teaspoon each white, black and cayenne pepper
4 to 6 drops hot pepper sauce
1 small head cabbage, chopped
1 cup shredded Colby cheese
Fresh basil, optional

Steps:

  • In a skillet, cook the beef, green pepper, onion and garlic over medium heat until meat is no longer pink; drain. Stir in tomatoes, tomato sauce, rice, seasonings and hot sauce. , Spread into an ungreased 13x9-in. baking dish. Top with the cabbage and cheese. Cover and bake at 350° for 65-75 minutes or until the rice is tender. If desired, garnish with basil.

1 pound ground beef
1 green bell pepper, chopped
1 onion, chopped
2 cloves garlic, minced
1 (10 ounce) can diced tomatoes with mild green chilies, undrained

½ cup long grain rice, uncooked
1 teaspoon salt
½ teaspoon dried basil
½ teaspoon dried oregano
¼ teaspoon ground cayenne pepper

1 small head cabbage, chopped
1 cup shredded Colby cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat the oil in a large skillet over medium heat. Brown together the beef, green pepper, onion, and garlic until the meat is no longer pink and the vegetables have softened, about 8 minutes. Drain liquid from pan.
  • Stir in tomatoes, tomato sauce, rice, salt, basil, oregano, and the cayenne, white, and black pepper (adding more pepper to taste, if desired). Spread mixture into an ungreased 9x12-inch baking pan. Top with cabbage and Colby cheese.

1 C onion (chopped)
1/2 C bell pepper (diced)
1/4 C celery (diced)
1 tsp garlic (minced)
1-1/2 C long grain rice
1/2 tsp Cajun or Creole seasoning
Pinch kosher salt
1/4 tsp freshly cracked black pepper
3 C chicken broth

Steps:

  • Place the butter and veggies in the rice cooker and press cook
  • After about 10 mins the butter will be melted and the onions will start to turn opaque.
  • add everything else, stir and restart the rice cooker, it will take a little longer than a normal batch
  • When the timer goes off stir the rice, close the lid and let it sit another 10 mins
  • Melt the butter over the stove and saute the vegetables.
  • Cook until the onions are opaque.
  • Add everything else, stir and bring to a boil
  • Reduce heat to a simmer, cover, and cook until rice is tender and has absorbed all the liquid, 16 to 18 minutes (check at 16 and see, it could take up to 20)

1 Tbsp unsalted butter
14 oz package Louisiana smoked sausage ( or Andouille sausage, sliced)
1/2 yellow onion (diced)
2 cloves garlic (minced)
1 1/2 cups bell pepper (diced (red, yellow or green))
2 celery stalks (sliced thinly)
2 tsp creole seasoning (containing salt)
1/4 cup all-purpose flour
14 1/2 oz can chicken broth
1 cup sharp cheddar cheese
3 cups white rice (cooked)
1/2 lb shrimp (raw, peeled and deveined)
1 tsp creole seasoning
2 Tbsp fresh parsley (chopped)
2 green onions (sliced)
lemon wedges

Steps:

  • Place a rack in the center of the oven then preheat to 350 degrees. Spray a 2 qt casserole dish with non-stick spray and set aside. Please note that this recipe requires 3 cups of cooked rice. If you do not have any left over rice in the refrigerator, now is the time to start cooking it-1 cup uncooked rice will yield approximately 3 cups cooked rice.
  • Melt butter in a large skillet set over medium heat. When the butter has melted, add the sliced sausage and cook for about 5 minutes until it has browned slightly.
  • Add the onion, garlic, bell pepper and celery to the skillet and cook for an additional 5 minutes, stirring occasionally.
  • Next, sprinkle the creole seasoning and flour over the sausage and vegetables then stir to combine. Once the flour has completely coated the mixture and no dry flour remains, pour in the chicken broth and stir until a smooth sauce forms. Bring the mixture to a boil, then immediately reduce the heat to low and simmer for 2 minutes.
  • Remove the skillet from the heat and add the cheddar cheese. Stir until the cheese is melted and completely incorporated in the sauce. Add the cooked white rice and stir to combine.
  • Transfer the mixture to the prepared 2 qt casserole dish, cover with aluminum foil then bake for 25-30 minutes. While the casserole bakes, season the shrimp with the additional 1 tsp of creole seasoning and set aside.
  • After the casserole has baked for 25-30 minutes, remove the foil and stir in the seasoned shrimp. Return the casserole to the oven for an additional 5−10 minutes, just until the shrimp is cooked through and casserole is hot in the center. Remove the casserole from the oven, sprinkle with chopped parsley and sliced green onion then serve it with lemon wedges for a little more zip! Enjoy!

14 ounces fire roasted diced tomatoes ((1 can))
1 tablespoon Cajun seasoning
3 cups chicken broth
2 cups Borden® Sharp Cheddar Cheese Shreds
1/4 cup chopped scallions (for garnish)

Steps:

  • Preheat the oven to 375 degrees F. Place a skillet over medium heat. Add the butter, chopped onions, bell peppers, and garlic. Sauté for 2-3 minutes to soften.
  • Chop the chicken breast into 3/4-inch chunks and slice the andouille sausage into 1/2-inch rounds.
  • In a 3-quart baking dish, combine the rice, sauteed veggies, chicken, sausage, canned tomatoes, cajun seasoning, and 1 cup Borden® Sharp Cheddar Cheese Shreds. Stir and pour the broth over the top. Gently shake the pan to make sure all the rice is submerged in the broth. Then cover the pan tightly with foil and bake for 60+ minutes, until the rice is tender.

1 cup yellow onions, fine dice
1 jalapeno pepper, fine dice
2 celery ribs, diced
½ red bell pepper, diced
1 green bell pepper, diced
2 Tablespoons minced garlic
3 ½ to 4 cups shredded green cabbage *
1 cup low-sodium vegetable broth *
1 cup water (or broth)
1 Tablespoon reduced-sodium tamari *
1 - [ 14 oz. can ] petite diced tomatoes
1 teaspoon liquid smoke *
2 - [ 15 oz. cans ] kidney beans, drained and rinsed
1 teaspoon garlic powder
1 teaspoon onion powder
2 Tablespoons dried minced onions
1 teaspoon dried oregano
1 ½ teaspoons smoked paprika
½ teaspoon sweet paprika
1 teaspoon dried crushed thyme leaves
1/8 teaspoon dried dill weed
1 bay leaf
1 to 1 ¼ teaspoons sea salt (+/-) *
1/8 teaspoon black pepper (+/-)
1 Tablespoon apple cider vinegar

Steps:

  • Rinse the dry uncooked brown rice really well with hot tap water for several minutes, then place the rinsed rice in a bowl and cover with hot tap water and allow to soak until ready to use in Step 6.
  • Place all the Herb/Spice Ingredients into a small bowl, mix well. Set aside.
  • In a large ceramic/enamel lined skillet, Dutch oven, or non-stick skillet, add the diced onions, jalapeno pepper, red and green bell peppers and celery ribs, sauté over medium-high heat for 7 to 9 minutes to soften, then add the finely minced garlic and sauté over medium heat for one minute.
  • Next add the shredded cabbage and ¼ cup of water to the skillet, sauté over medium-high heat until the cabbage is wilted and most (if not all the water is gone).
  • Drain the rice, shake off any excess water, add the rice and the Herb/Spice Mix to the skillet, stir to coat the cabbage/rice mixture, sauté over medium heat for several minutes to allow the spices to become fragrant.
  • Next add all the remaining Base Ingredients, stir well, increase the heat to a boil, then immediately lower to a simmer. Then pressed down everything to create a flattened surface. Simmer (with a very low boil - see notes). Cover with a tight-fitting lid and cook for 20 minutes undisturbed.
  • After 20 minutes, stir in the apple cider vinegar, stir everything around once, then flatten down the ingredients again to create an even surface. Continue to cook uncovered for an additional 15 minutes or until the rice is tender. The cooking time is largely dependent on the rice selected. To check if the rice is tender, pull up a few rice kernels from the top and test for tenderness. Resist the temptation to stir the rice. If the rice is not tender and there is no liquid left, add a Tablespoon of water and check every 10 minutes or so, repeat the same process until the rice is tender. Brown rice takes longer than most other rice.
  • Remove from the stove, allow to set for 10 minutes to marry the flavors, remove and discard the bay leaf, then serve!

6-8 Tbsp butter cut into tablespoons
2 can(s) diced tomatoes (reduced sodium can be used)
1/2 c long grain rice
1 pkg smoked sausage (kielbasa)
1 large cabbage
1/4-1/2 tsp cajun seasoning
1 c chopped onions
1/2 c green bell pepper, chopped
1-2 tsp diced garlic

Steps:

  • 1. Important: For this recipe there is no need to cook the meat and do NOT add water. The rice will cook in the juices from the vegetables.
  • 2. Slice smoked sausage. Cut up cabbage into quarter to half inch strips or pieces. Layer all ingredients in a large rice cooker. While doing this separate the ground round into clumps and layer throughout. You may have to make two batches. Make sure each ingredient is in the rice cooker before cooking. Turn on the rice cooker. Cook until rice cooker stops cooking - when you hear the 'click.' Unplug rice cooker and stir the pot. For serving you can put the cabbage casserole in a casserole dish.

1 tsp celery salt ((celery seed will not work as a replacement))

  • Preheat oven to 375 degrees. In a hot skillet add oil. Then add green peppers, onions, and garlic. Sauté until softened. In a 9x13 or 3 quart casserole dish generously spray with cooking spray and then add cooked peppers, onions, and garlic, turkey sausage rounds, raw chicken breast, rice, cream of chicken soup, diced tomatoes, cajun seasoning, celery salt, and water. Mix together well. Cover casserole dish tightly with aluminum foil and place into preheated oven for one hour or until rice is cooked. Lightly fluff with a fork. Serve! Leftovers are just as good if not better!
