CAJUN CRABMEAT AU GRATIN
Growing up in Louisiana, we were raised on Seafood. This Authentic Southern Crab dish is a favorite in my family.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x9 inch baking dish. In a bowl, whip together the egg yolks and heavy cream.
- Melt the butter in a large saucepan over medium heat. Saute the onion and celery about 5 minutes. Season with salt, cayenne pepper, garlic powder, and Creole seasoning. Reduce heat to low, cover, and simmer 20 minutes, stirring occasionally, until very tender.
- Mix the flour into the saucepan, and cook and stir continuously for 5 minutes. Mix in the egg yolk mixture. Stir in the 1/2 cup Cheddar cheese and American cheese until melted. Remove from heat and fold in the crabmeat. Transfer the mixture to the prepared baking dish.
- Bake 20 minutes in the preheated oven, until bubbly and lightly browned. Remove from heat and top with the sharp Cheddar cheese and green onions. Allow the cheese to melt before serving.

Steps:
- In a large sauce pan, melt butter over medium heat.
- Stir in onion and garlic and saute until onion is translucent.
- Stir in flour and cook for 2 minutes.
- Stir in clam juice and chicken broth.
- Bring to a boil.
- Add corn, salt, peppers, and thyme, mix well.
- Reduce heat and simmer 15 minutes.
- Stir in cream and crab meat.
- Heat through.
- Add green onions, mix well and serve.

CAJUN CRAB CROQUETTES WITH ZESTY REMOULADE SAUCE
Crab cakes get a Louisiana spin with Cajun spice and corn. Although any type of crab works here, we prefer the texture of lump crabmeat. Serve with Zesty Remoulade Sauce, a lighter, easy version of the classic mayonnaise-based sauce that's commonly served with seafood. Make it a meal: Serve on arugula salad. Steps:
- Preheat oven to 425°F Coat a baking sheet with cooking spray.
- Heat 1 teaspoon oil in a large nonstick skillet over medium heat. Add onion, bell pepper, corn and 1 teaspoon Cajun seasoning and cook, stirring, until the vegetables are softened, about 4 minutes. Transfer to a large bowl. Let cool for 5 minutes. Add crab, egg white, 1/2 cup breadcrumbs, mayonnaise and lemon zest. Mix well.
- Divide the mixture into 8 equal portions (about 1/2 cup each). Form each portion into an oblong patty that's about 4 inches by 2 inches. Place on the prepared baking sheet. Combine the remaining 1/4 cup breadcrumbs, 1/2 teaspoon Cajun seasoning and 2 teaspoons oil in a small bowl. Sprinkle 1 heaping teaspoon of the breadcrumb mixture over the top of each croquette, then gently press it on.
- Bake the croquettes until heated through and golden brown on top, about 20 minutes.
- TO MAKE ZESTY REMOULADE SAUCE:.
- Combine mayonnaise, sour cream, scallions, capers, mustard, relish and pepper in a small bowl.
- Serve at room temperature or slightly chilled with croquettes.

CAJUN CRAWFISH/CRAB CAKES WITH SPICY RED PEPPER SAUCE
This is an adaption of a South Beach recipe. The features that make it a healthier and lower carb recipe are still in place, but I've added a Cajun twist to it. The result is a delicious crawfish patty with a tasty, spicy red pepper sauce. The original recipe calls for crab and it is just as tasty.

Steps:
- Red Pepper Sauce: Puree roasted red peppers in a blender, then add mayonnaise and spices.
- Set aside and refrigerate.
- Crawfish Cakes: Heat 1 teaspoons olive oil in sauté pan, sauté onion and celery until soft.
- Place in a large mixing bowl.
- Mix remaining ingredients except bread crumbs.
- Place half of seafood mixture in a blender or processor and puree and return to mixing bowl and stir together.
- Place bread crumbs evenly on a cookie sheet.
- Form about 8 patties and coat them with bread crumbs.
- Heat remaining 2 teaspoons of olive oil in a pan and cook patties in batches.
- Cook for about 2-3 minutes each side until brown and crisp on outside.
- Serve with red pepper sauce.
