These are high fiber, high protein, low in fat and absolutely delicious cookies that make a terrific snack. You won't believe how good they are! Any dried fruit or nuts are recommended as additions to this recipe.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease cookie sheets. Grind the oats in a blender until resembling coarse flour.
- In a medium bowl, mash beans to a smooth paste. Stir in the white sugar, brown sugar and vanilla until well blended. Combine the ground oats, baking powder, baking soda and cinnamon; blend into the bean mixture. Stir in the dates, coconut, raisins and walnuts. Drop dough by heaping spoonfuls onto the prepared cookie sheet.
- Bake for 10 to 15 minutes in the preheated oven, until golden. Cool on baking sheets for 5 minutes then remove to wire racks to cool completely.

- Preheat oven to 375 degrees.
- Toast seeds in preheated oven for about 5 minutes, until oils release.
- Mix wet ingredients together.
- Mix all dry ingredients together.Except chocolate chips.
- Mix wet and dry to form a batter.
- Scoop on sheet pan with parchment paper. 12/ sheet.
- Place 8-10 mini chocolate chips on each cookie.
- Bake 6 minutes, then roatate tray and bake for 3 more minutes.
- Pull from oven and cool.
- Wrap and serve as a nutritious snack.

Got it's name because the cookies are HUGE! Everyone who has tasted these, has asked for the recipe. Their size makes them special--who can go back to regular cookies and be satisfied? I got this recipe from Barby, my friend.

Steps:
- Preheat oven to 350°.
- In a large mixing bowl, cream together sugars, margarine, and Crisco; beat in eggs and vanilla.
- In another bowl, whisk together flour, salt, and baking soda.
- Beat dry mixture into wet ingredients.
- Fold in all other ingredients.
- Form golf ball size clumps into cookies about the size of a silver dollar, or use a heaped cookie scoop, then press the tops flat.
- They will be about 1/2-inch thick.
- Space in staggered rows with about two inches between cookies.
- Bake on parchment-lined cookie sheets for 8-16 minutes.

SEEDY POWER COOKIES
Steps:
- Preheat oven to 300°F and line a large baking tray with parchment paper.
- Add the dates and banana to a food processor and process until a puree. Scrape out into a large mixing bowl, making sure you scrape the food processor clean.
- Add all of the other ingredients and stir well to combine. If the mixture seems a little dry you can add a drop or two of water to help bring it together.
- Roll balls of mixture in your hands, place on the baking tray and push down with the palm of your hand or the bottom of a glass to flatten to ½ an inch thick. You can make them as big or small as you like but keep them about that thickness. At about 2 inches in diameter you should get about 12 cookies. As you shape them little bits of fruit and seeds will pop out here and there. Just push them back in with your fingers and smooth the edges of the cookies to tidy them up.
- Bake at 300°F (150°C) for around 25 minutes or until they feel dry and are just starting to turn golden around the edges.
- Remove from the oven and cool on a wire rack.

NO-BAKE POWER BITES
Delicious and filling snacks my friend Danielle told me about. I cannot get enough of these! Nothing processed and jam-packed with nutrition. I took these on a 5-hour flight and they kept me satisfied. Also my mom is on a no-processed-food cancer diet and these are a life-saver for the days she doesn't feel well enough to juice and cook!
