It should not come as a surprise that the best Caesar salad is also the most traditional version. That means it's time to bring out the anchovies and eggs -- and don't skimp on quality Parmesan cheese. We've even included garlicky homemade croutons to balance the tangy dressing.

3 tablespoons extra-virgin olive oil
2 tablespoons unsalted butter
2 cloves garlic, crushed
Kosher salt
3 cups rustic bread (about 3 ounces), torn into bite-sized pieces
2 tablespoons freshly grated Parmesan
Freshly ground black pepper
2 anchovies packed in oil
1 clove garlic
1 egg yolk, at room temperature
1 teaspoon Dijon mustard
1 tablespoon freshly squeezed lemon juice, at room temperature
1/2 cup extra-virgin olive oil
5 tablespoons freshly grated Parmesan
Kosher salt and freshly ground black pepper
2 romaine hearts, chopped (see Cook's Note)

Steps:

  • Preheat the oven to 400 degrees F.
  • For the croutons: Put the olive oil and butter in a small saucepan over medium-low heat. When the butter is completely melted add the garlic and 1/4 teaspoon kosher salt. Carefully swirl the pan to combine. Set aside for 10 minutes to allow the garlic to infuse the oil mixture.
  • Put the bread pieces on a baking sheet. Evenly pour the garlic mixture over the bread and toss to coat. Spread the bread in a single layer and bake until golden brown, 8 to 10 minutes. Stir the bread halfway through cooking to ensure even browning. Remove from the oven and sprinkle with black pepper and Parmesan. Set aside to cool.
  • For the salad: Soak the anchovies in a small bowl of water for 5 minutes. Rinse with cold water, drain and pat dry. Finely chop the anchovies and garlic, then use the side of your knife to mash them to a paste.
  • Add the anchovy paste, egg yolk, Dijon mustard and lemon juice to a large bowl and whisk to combine. While whisking, slowly drizzle in the olive oil in a steady stream until emulsified. Stir in 3 tablespoons grated Parmesan. If needed, add water, 1 teaspoon at a time to thin the dressing. Season with salt and pepper to taste.
  • Add the lettuce and croutons to a large bowl and gently toss with the dressing until coated. Top with grated Parmesan and serve immediately.

Steps:

  • In a medium bowl, whisk together the egg yolk, lemon juice, garlic, Worcestershire, pepper flakes, mustard, and anchovies. Slowly whisk in the oils to emulsify. Season, to taste, with salt and pepper.
  • Place the lettuce in a large bowl. Sprinkle with Parmesan and black pepper. Drizzle with desired amount of dressing and toss well. Sprinkle top with croutons.

Steps:

  • For the Caesar salad dressing: Combine the garlic, mustard, vinegar and two pinches of salt in a blender and mix thoroughly. Add the mayonnaise and blend together to form a thick base. In a slow stream add the olive oil through the hole in lid. Scrape the dressing with spatula into a bowl and season to taste with salt, pepper and lemon juice. If desired, add some anchovy to the dressing to create a deeper, saltier taste.
  • For the Caesar salad croutons: Cut the baguette into cubes. Melt the butter in a skillet and add the garlic powder, paprika and pepper. Add the bread cubes and saute just until the bread cubes begin to brown. Set aside to cool.
  • Wash and dry the lettuce. In a large salad bowl, combine the lettuce, dressing and croutons. Top with freshly grated Parmesan. Toss gently to combine well;

4 whole anchovy fillets
2 tablespoons (and up to 3 tablespoons) Dijon mustard
1 tablespoon balsamic or red wine vinegar (balsamic makes it nice and rich)
1 teaspoon Worcestershire sauce
2 cloves fresh garlic, peeled
1/2 whole lemon, juiced
1/2 cup olive oil
1/4 cup freshly grated Parmesan
1 dash salt
Freshly ground black pepper
1/2 loaf crusty French bread
1/4 cup olive oil
2 cloves fresh garlic, peeled
Salt
Hearts of romaine lettuce
Fresh Parmesan wedge

Steps:

  • For the dressing: Place the anchovies into a blender or food processor. Throw in the Dijon mustard, vinegar, Worcestershire, garlic and lemon juice. Pulse the processor or blend on low speed for several seconds. Scrape down the sides.
  • With the food processor or blender on, drizzle the olive oil into the mixture in a small stream. Scrape down the sides. Add the Parmesan, salt and a generous grind of black pepper. Pulse the whole thing together and mix until thoroughly combined. Refrigerate the dressing for a few hours (it just gets better!) before using it on the salad.
  • For the croutons: Slice the bread into thick slices and cut them into 1-inch cubes. Throw them onto a baking sheet.
  • Heat the olive oil in a small saucepan or skillet over low heat.
  • Crush-but don't chop-the garlic and add them to the oil. Use a spoon to move the garlic around in the pan. After 3 to 5 minutes, turn off the heat and remove the garlic from the pan.
  • Slowly drizzle the olive oil over the bread cubes. Mix together with your hands, and then sprinkle lightly with salt. Toss and cook in the pan until golden brown and crisp. (Add a little butter for more flavor!)
  • For the salad: Wash and dry the hearts of romaine lettuce. Leave them whole. Use a vegetable peeler and shave off large, thin slices of Parmesan.
  • Drizzle about half of the dressing over the top of the hearts. Throw in a good handful of the Parmesan shavings. Give it a good initial toss, just so you can evaluate how much more dressing you need.
  • Add more dressing and Parmesan to taste. Add the cooled croutons. Toss gently.

1 large clove garlic
3 anchovies (I prefer white), plus more for serving
1/2 teaspoon kosher salt
2 large egg yolks
Juice of 2 lemons
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
1/2 cup olive oil
1/4 cup freshly grated Parmesan, plus shaved for serving
10 turns freshly cracked black pepper
3 romaine hearts, leaves separated

Steps:

  • Stick the garlic onto the tines of a fork. Rub the garlic all over the inside of the large bowl that you will use to make your dressing, thoroughly coating. Set aside the garlic clove for another use.
  • Add the anchovies and salt to the large bowl and mash them to a paste with the fork. Add in the egg yolks, lemon juice, mustard and Worcestershire and vigorously mix with the fork. Stream in the olive oil while whisking. Mix in the Parmesan and pepper.
  • Add the romaine leaves to the dressing and mix to coat the leaves. Divide the lettuce onto 4 plates, then garnish with shaved Parmesan and additional anchovies.

2 tablespoons fresh lemon juice (one small lemon)
1 teaspoon Worcestershire sauce
3 dashes hot sauce (like Tabasco)
1 1/2 tablespoons Dijon mustard
2 large egg yolks
1/3-1/2 cup extra virgin olive oil or 1/3-1/2 cup canola oil
2 heads romaine lettuce, outer leaves discarded, inner leaves washed and dried (ten-ounce heads)
1 cup freshly grated parmesan cheese or 1 cup romano cheese
crouton (to garnish)

Steps:

  • In a large wooden bowl, using a wooden spoon, mash chopped garlic cloves to a fine paste with salt.
  • Stir in egg yolks and Dijon mustard.
  • Add anchovies, and grind to a paste.
  • Add lemon juice, Worcestershire, hot sauce and season with pepper.
  • Slowly whisk in olive/canola oil until dressing is creamy.
  • Add lettuce to bowl, and toss to coat leaves thoroughly with dressing and grated Parmesan.
  • Sprinkle croutons over salad.

CREAMY CAESAR SALAD

I adapted this from a recipe I found online. My family loves zippy, garlicky Caesar dressing and this fits the bill. I use fresh raw egg and have never had a problem. It's best to make the dressing ahead of time and let it meld if you have the time. Excellent with grilled chicken pieces added too. Enjoy!

1 cup mayonnaise
1 egg
1/2 cup grated parmesan cheese
2 tablespoons water
2 tablespoons olive oil
1 1/2-2 tablespoons fresh lemon juice
1/2-1 tablespoon anchovy paste or 1 teaspoon Worcestershire sauce
2 -4 garlic cloves (see note)
1/2 teaspoon ground pepper
1 head romaine lettuce, washed, dryed and torn into 1-inch, pieces
1 cup crouton
1/2 cup grated parmesan cheese
lemon slice

Steps:

  • Place the first 9 ingredients in a blender, blend on high for 1 minute, taste and adjust as needed.
  • Put the lettuce in a large bowl with the croutons and parmesan cheese.
  • Pour most of the dressing over the salad and gently toss, add extra dressing if needed.
  • Serve with lemon slices on the side.
  • If making a smaller salad extra dressing will last for more than a week in the frig.
  • Note.
  • Since posting this several people have said it needed more garlic - garlic can vary in intensity - so start with 2 cloves, blend, then taste to see if it needs more. I've love strong garlic and this recipe usually has a bit of a bit.

I was hosting a baby shower one day, and one of the guests offered to bring a caesar salad. She forgot to bring the salad dressing! I didn't have any of the bottled stuff so I threw this together. I don't put any egg in the sauce itself, but I serve the salad with bacon bits and hard boiled, chopped up eggs on top. I also HATE anchovies. So you won't find any in here. If you like them, you will have to figure out on your own how much paste to use!

1/2 cup light mayonnaise (miracle whip is tangier than regular mayo)
1/4 cup milk (skim, 2%, doesn't matter)
1/4 cup parmesan cheese (I just use the stuff from the shaker)
2 tablespoons lemon juice

1 -2 garlic clove, minced
1/2 teaspoon fresh ground black pepper

  • Mix all ingredients together.
  • I usually mix it in a jar and shake it until everything is blended. If you can let the dressing sit for at least 30 minutes, the flavours will blend much better.

10 leaves romaine lettuce, washed and refrigerate to crisp
6 slices French bread, 1/2 inch thick
1/4 cup virgin olive oil
3 cloves garlic, crushed
6 anchovy fillets
1 egg
1 tablespoon fresh lime juice
1 teaspoon Worcestershire sauce
1/4 cup fresh grated parmesan cheese
salt & pepper

Steps:

  • Heat oven to 400 degrees F.
  • Put bread on an ungreased baking sheet, bake until crisp, 30 minutes.
  • Baste bread with 1 1/2 tbsp of olive oil.
  • return to oven to brown 15 minutes.
  • Crush together the garlic and anchovy filets,gradually add 1 tbsp of oil.
  • Spread this mixture on the toasted bread& cut into cubes, set aside.
  • Cover the egg in boiling water and cook for 1 minute only.
  • Tear the lettuces leaves into a salad bowl,worcestershire sauce and any remaining oil In the last minute toss in the bread crumbs and the parmesan cheese.
  • Toss and serve- do not let the croutons get soggy.

1 cup croutons garlic-seasoned
1/2 cup Parmesan cheese grated
Caesar's Dressing:
1/3 cup olive oil
1/3 cup vegetable oil
lemon Juice of 1 large
1 ounce anchovy fillets, minced (8 anchovies)
1 teaspoon Worcestershire sauce (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper freshly ground
1/4 teaspoon dry mustard
1 garlic large, minced

Steps:

  • * Two or more hours before serving, blend together all ingredients in a jar with a lid. Let stand at room temperature. Refrigerate lettuce, covered, until serving time. 1. I developed this dressing years ago, and I can honestly say that you won't be able to keep your spoon out of the fridge for a taste, it is *that* good! --- although I do think the dressing is better with the anchovy it can certainly be made without them. In a pinch I have even substituted buttermilk for the half and half cream, just use about the same amount --- this dressing gets stronger with refrigeration time so a small amount of fresh garlic goes a long way! ---- usually one recipe without doubling is perfect for one large romaine lettuce, if you are serving a large crowd of people you might want to double -- salad dressing will not work for this use *only* mayonnaise, I find Hellman's brand mayonnaise works the best and for the perfect companion to this salad see my recipe#125034-------------LOWER-FAT OPTION use reduced fat mayonnaise and fat-free half and half or low-fat milk --- also see my recipe#66596

Steps:

  • In a small 2-cup mini food processor, process/mince the anchovy fillets and garlic together until finely minced (do this together and firstly, otherwise it will not get minced properly with the other ingredients).
  • Add in the remaining ingredients, and process for 30 seconds, or more until well mixed.
  • Adjust seasonings to taste.
  • Thin with buttermilk (or milk) for a thinner consistency if desired.
  • Store in fridge, covered in a glass container for 3 or more hours before using (the flavors become stronger when left in the fridge for a longer time).
  • Toss desired amount of dressing with Romaine lettuce and croutons.
  • Sprinkle with more grated Parmesan cheese if desired.
